- In a large bowl, beat the first five ingredients until well blended. Stir in the chicken, onion and celery. , Shape into 1-in. balls; roll in almonds. Cover and chill until firm (can refrigerate up to 2 days).

CURRY CHICKEN MEATBALLS
My favorite Indian takeout dish is chicken curry, so I was inspired to take some of its flavors and mix them into another of my go-to dishes, meatballs. I use ground chicken, cilantro, cumin and curry powder, plus a touch of lime zest and some jalapeno for heat. The recipe makes plenty of meatballs, so if you're lucky you'll have some leftover for a lunch the next day.

- Preheat the oven to 400 degrees F. Toss the onion and enough olive oil to coat together on a small sheet pan and roast in the oven until browned and soft, 10 to 15 minutes. Set aside. Reduce the oven temperature to 375 degrees F.
- Meanwhile, in a large bowl, combine the panko, cilantro, egg, garlic, jalapeno, lime zest, cumin, curry powder, salt and pepper. Mix well. Add the chicken and combine all the ingredients until everything is well mixed.
- Form the meatballs with a #50 (.68-ounce) ice-cream scoop or by heaping tablespoons and place on a sheet pan. Round the meatballs gently by hand.
- Heat the 2 teaspoons oil in a large ovenproof nonstick skillet over medium-high heat. Add the meatballs and reduce the heat to medium. Cook until just browned, 2 to 3 minutes per side. Transfer the skillet to the oven and bake until the meatballs are cooked through, 6 to 8 minutes.
- Serve the meatballs over rice with the roasted onion and more cilantro leaves.

- Add the first 5 ingredients to a mixing bowl; use an electric mixer and beat on medium speed until smooth.
- Add in chicken, green onions, and celery; stir to combine.

- Chill until ready to serve.
- May chill up to 2 days; freeze up to 1 month.
CURRIED CHICKEN SALAD SANDWICH WITH ALMONDS AND RAISINS

- Preheat the oven to 400 degrees F.
- Heat the oil in a large ovenproof skillet over medium-high heat until smoking. Sprinkle the chicken breasts on both sides with salt and pepper. Put them in the pan in a single layer, and brown them 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. Remove from the oven and cool.
- Chop the cooled chicken and put it into a large bowl. Add the rest of the ingredients and toss. Season with salt and pepper.
- Spread 4 bread slices with mayonnaise, if you like, and spread with the curried chicken. Top with another slice of bread and serve.

- Separate crescent dough into triangles. Cut each piece into four triangles. Place on greased baking sheets. In a large bowl, combine the water chestnuts, cheese, onions, mayonnaise, lemon juice, curry powder and garlic salt. CURRIED CHICKEN ALMOND RICE SALAD
This is a lot of colorful salad, which makes it perfect for a buffet. It can easily be halved and is even more flavorful the next day. Make sure to use the appropriate rice for salads so that the grains don't absorb the dressing and you end up with cold risotto (which I've done :D) Prep time doesn't include cooking the chicken. If you're using chicken breasts, instead of poaching, which can dry them out, just dust them with flour and cook them in a little olive oil over medium-high heat for 4 minutes per side; let cool and cube for the salad. That only adds about 10 minutes to the prep.

- Bring broth, curry, ginger, and turmeric to a boil.
- Add rice, cover, reduce heat, and simmer until rice is tender and all the liquid is absorbed (20-25 minutes.).
- Transfer rice to a large serving bowl.
- Add olive oil and lemon juice and toss to mix.
- Cover and refrigerate until cool.
- Add all the remaining ingredients EXCEPT the almonds and mix well. Adjust the salt and pepper to taste.
