Steps:
- In a 2-1/2-qt. casserole, combine fruit and raisins. Melt butter in a small saucepan; stir in brown sugar and curry powder. Cook and stir over low heat until sugar is dissolved. Pour over fruit mixture; mix gently. Cover and bake at 400° for 30 minutes or until heated through.

CURRIED FRUIT AND NUT SALAD
This salad always gets finished at Potlucks. I generally like it with more grapes, mandarin slices and curry powder but adjust to your own taste.

Steps:
- Tear lettuce and spinach into bite size pieces.
- Cut grapes in half.
- Drain orange segments.
- Mince garlic.
- Peel, seed and slice avocado.
- In salad bowl combine lettuce, spinach, orange segments and grapes.
- In screw top jar combine salad oil,vinegar,garlic, brown sugar, chives, curry powder and soysauce.
- Shake dressing until combined.
- Just before serving toss some of the dressing with the salad.
- Garnish with avocado and almonds.
- Pass around the remaining dressing.

HAM SLICE WITH CURRIED FRUIT
Use Toupie Style ham for best results, it is cut about 1/4 inch thick. Personally I rinse the ham under cold water to begin with to remove the excess salt and any preservatives.

Steps:
- Preheat oven to 350°F.
- Drain all fruit; RESERVE all liquid.
- Cut each ham slice in half and layer in baking pan.
- Pour 1/2 of reserved fruit liquid over ham.
- Bake in 350°F oven for 20 minutes, basting occasionally.
- Meanwhile melt margarine in saucepan; stir in brown sugar, the remaining reserved fruit liquid and the curry powder.
- Add fruit to mixture, cover and cook over very low heat for 15 minutes or until ham is ready, stirring occasionally.
- Transfer ham to serving platter; spoon fruit mixture over ham.

Fabulous way to serve fruit that tastes almost like dessert. It is wonderful served with ham or pork - or even over vanilla ice cream! You can substitute other fruit to your taste but the cherries and bananas should always be used.

- Drain all fruits and placed them in a 2 qt.
- buttered baking dish.
- Combine cornstarch, curry powder, cinnamon, and sugar in small bowl.
- Sprinkle the sugar mixture over fruit.
- Combine melted butter and brandy and pour over fruit.
- Gently toss to coat all the fruit.
- Bake at 350 degrees for 30 minutes.

HAM AND FRUIT SALAD
So refreshing and loaded with fresh fruit flavors. Ready in minutes. A quick and healthy lunch or great addition to your brunch table. Has a very colorful presentation. The recipe is also very interchangeable. You can exchange ham (I use black forest ham) for chicken or turkey and use a mixture of berries like raspberries blue berries and strawberries. If you prefer a different type of cheese use it.
