OLIVE & CHEDDAR CANAPES
A very good "do ahead" recipe, quick, easy and tasty. You can make the olive spread the day before or do it all at once. These freeze well. Just thaw before broiling. I flatten the bead slices with a rolling pin before toasting one side.

Steps:
- Mix olives, cheese, mayo, onion powder & curry.
- Arrange bread on an ungreased cookie sheet and toast one side under the broiler. Turn over and spread with the olive mixture (you can now freeze the slices and broil when thawed) and broil for 2 to 3 minutes until bubbly.
- Cut each slice intp 4 triangles.

- In a food processor chop the olives, add the goat cheese, the garlic paste, the scallion, and the Tabasco, and blend the mixture until the olives are chopped fine. Spread the mixture evenly on the toasts, arrange the toasts on a baking sheet, and broil them under a preheated broiler about 2 inches from the heat for 1 minute, or until the cheese is just melted and glistening.

Steps:
- In a saucepan, over low-medium heat, melt/combine unsalted butter and olive oil; then whisk in whole wheat pastry flour.
- Slowly add nonfat milk, whisking constantly to avoid lumps--and continue to cook and whisk until sauce is smooth and thickened.
- Stir in chopped hard-boiled eggs, curry powder, salt, and freshly ground black pepper, and cook until thoroughly warmed; then remove from heat and cover.
- Toast whole wheat bread, top with curried egg mixture, and serve.
