Progresso's recipe for pan fried crunchy tilapia (came from the back of a Panko bread crumbs box). You could use any mild flavor white fish for this recipe.

2 tablespoons flour
1 teaspoon lemon-pepper seasoning
1 cup panko breadcrumbs (Progresso bread crumbs)
1 egg
24 ounces tilapia fillets (4 fillets, 6 oz each)
4 tablespoons vegetable oil (I used EVOO)

Steps:

  • On plate, mix flour and seasoning.
  • On second plate, place bread crumbs.
  • In bowl, beat egg with fork.
  • Coat fish with flour, dip into egg and coat well with bread crumbs.
  • In 10-inch nonstick skillet, heat 2 Tbsp of the oil over medium-high heat. Add 2 fish fillets and cook 3 minutes.
  • Carefully turn fish over. Reduce heat to medium and cook about 3 minutes longer or until fish flakes easily with fork.
  • Repeat for remaining 2 fillets.

1/4 cup all-purpose flour
2 teaspoons seafood seasoning
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 1/2 pounds fresh tilapia fillets
2 tablespoons canola oil
2 tablespoons butter
1 teaspoon chopped garlic
2 tablespoons lemon juice
2 tablespoons freshly chopped parsley leaves

Steps:

  • Heat oven to 300 degrees F.
  • In a shallow baking dish combine flour, seafood seasoning, salt and pepper. Add the tilapia and lightly coat each side.
  • Heat oil in a large skillet over medium-high heat. Shake off any excess seasoned flour and place in the skillet. Brown on both sides, about 2 to 3 minutes per side. Place tilapia on a baking sheet that is lined with a paper grocery bag or paper towels and keep warm in the oven while you prepare the sauce.
  • Turn down the heat to the pan the tilapia was cooked to low and add the butter. Once the butter is melted, add the garlic, lemon juice and parsley and saute for 2 minutes. Place the fillets on serving plates or a platter, top with the sauce and serve.

This simple recipe for curried fish with bananas is quick to prepare and has the perfect blend of fragrant, sweet and buttery flavors.

4 mild white fish fillets (about 1-1/4 lbs)
2 slightly underripe bananas (peeled and halved lengthwise)
1/3 cup flour
1-1/2 teaspoons curry powder (divided)
Salt and freshly ground black pepper
5 tablespoons butter (divided)
1/3 cup grapefruit juice (freshly squeezed if possible)
2 tablespoons chopped fresh cilantro (or chives)

Steps:

  • Cut the fish fillets in half crosswise and slice the bananas into pieces that closely match size of the fish (see photo).
  • Thoroughly combine the flour, 1 teaspoon of the curry powder, 1 teaspoon of salt and a few grinds of black pepper and spread the mixture on a plate or sheet of wax paper.
  • Lightly press the fish fillets into the flour mixture, shake off the excess and set aside in a single layer.
  • Heat 2 tablespoons of the butter in a large frying pan over medium heat.
  • Once the butter melts, add the remaining 1/2 teaspoon of curry powder, swirl the pan to coat and add the bananas, cut side down.
  • Sauté the bananas until lightly caramelized, 1 to 1-1/2 minutes per side (don't overcook). Season with a pinch of salt and transfer to a serving platter.
  • Return the pan to the stove, increase the heat slightly and add 2 more tablespoons of butter. Once the butter has melted, swirl the pan to coat.
  • As soon as the butter starts to sizzle, add the fish fillets and cook for 1-1/2 to 2 minutes on the first side.
  • Carefully turn the fillets over and continue cooking until the fish flakes easily, 1 to 1-1/2 minutes longer. Arrange the fish fillets on top of the plated bananas.
  • Working quickly, add the remaining tablespoon of butter to the pan. Once the butter melts, add the grapefruit juice and heat until bubbly, about 1 minute.
  • Spoon the pan sauce over the fish, garnish with chopped cilantro and serve immediately.

1 mango - peeled and diced
¼ cup chopped red onion
1 serrano chile, minced
½ cup cilantro leaves, chopped
2 tablespoons lime juice
½ teaspoon salt
2 tablespoons olive oil, divided
1 tablespoon curry powder
1 tablespoon garlic pepper seasoning
4 fresh tilapia fillets

Steps:

  • For the mango salsa, combine the mango, red onion, serrano chile, cilantro, lime juice and salt in a glass bowl. Set aside.
  • For the tilapia rub, mix together 1 tablespoon of olive oil, curry powder and garlic pepper in a small bowl. Rub this mixture onto both sides of the fish fillets.
  • Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the fish for about 3 minutes on each side or until it flakes easily with a fork.

x tilapia fillets
1 tbsp tandoori paste
1kg sweet potatoes , cut into small chunks
4 carrots , chopped
2 garlic cloves , sliced
1 red chilli , deseeded and chopped
8 tomatoes , chopped
small red onion , thinly sliced
small bunch coriander , roughly chopped

Steps:

  • Coat the tilapia fillets with the tandoori paste and set aside. Put the sweet potatoes, carrots and garlic in a large pan of salted water. Bring to the boil and cook for 10 mins or until tender. Drain well, then allow to steam-dry for a few mins. Add the chilli to the pan and mash everything together with some seasoning. Cover and keep warm.
  • Heat the grill to high. Grill the tilapia for 8-10 mins or until cooked through. Meanwhile, mix the salad ingredients together and serve alongside the tilapia and mash.

  • Pat each of the fish fillets dry with a paper towel, then cut into quarters. Stir together the flour and pepper in a pie plate or shallow dish. Place the fish pieces into the pie plate a few at a time and coat them with the flour mixture. Shake off any excess flour and set aside.
