1 1/2 lbs. salmon
1 tablespoon brown sugar
1 teaspoon curry powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt (more for a larger filet)
1-2 teaspoons olive oil
1 tablespoon olive oil
2 cloves garlic (minced)
1 small knob of ginger (minced)
1 tablespoon of lemongrass paste
1 tablespoon brown sugar
1 tablespoon red curry paste
1 can coconut milk
2 tablespoons fish sauce or soy sauce
lots of lime juice and zest
3 cups fresh spinach, chopped
cilantro, basil, mint, or other fresh herbs

Steps:

  • Preheat the oven to 475 degrees. Line a baking sheet with foil. Place one of the oven racks close-ish to the top, about 6 inches or so.
  • Mix the spices and the olive oil to make a paste. Place the salmon skin side down on the baking sheet. Rub the paste liberally over the top part of the salmon. Bake for 6-12 minutes (depends on salmon thickness and desired doneness - I usually opt for 8-10 minutes). See notes and FAQs for potential broiling issues and alternative methods.
  • Heat the olive oil over medium heat. Add garlic, ginger, and lemongrass; sauté for 5 minutes. Add brown sugar and curry paste; sauté for 3 minutes. Add coconut milk. Season with fish sauce and lime juice to taste. Add spinach; stir into the sauce until wilted.
  • Place salmon over rice. Cover with sauce, lime juice, and fresh herbs.

1/3 cup soy sauce
1/3 cup canola oil
1 teaspoon garlic powder
1 teaspoon curry powder
1 teaspoon lemon-pepper seasoning
1 teaspoon Worcestershire sauce
1/4 teaspoon Liquid Smoke, optional
6 salmon fillets (8 ounces each)

Steps:

  • In a large resealable plastic bag, combine the soy sauce, oil, garlic powder, curry powder, lemon-pepper, Worcestershire sauce and Liquid Smoke if desired; add the salmon. Seal bag and turn to coat. Refrigerate for 1 hour. , Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on rack. Grill, covered, over medium heat or broil 4 in. from the heat until fish flakes easily with a fork, 10-12 minutes.

1 tablespoon flour
1/2 teaspoon salt
1 teaspoon curry powder

3 small new potatoes, unpared, cut into 1/4-inch slices
2 tablespoons butter, melted
1 tablespoon lemon juice
2 teaspoons mustard seeds, coarsely crushed
thinly sliced green onion

Steps:

  • Soak top and bottom of 3 1/4 quart clay cooker in water about 15 minutes; drain. Line bottom with parchment paper.
  • Wipe salmon steaks with damp toweling. Coat with mixture of flour, salt, curry and paprika. Place in cooker. Arrange the potatoes, standing on edge around the salmon. Mix butter, lemon juice and mustard seeds and drizzle over salmon and potatoes.
  • Place covered cooker in cold oven. Set temperature to 450°F Bake until salmon is firm and potatoes are tender, about 35 minutes. Remove cover and bake until salmon is brown, about 10 minutes.
  • Drizzle salmon and potatoes with cooking liquid; sprinkle with green onions.
  • Serve with chutney if you would like.

2 lbs navy beans (white, dry)
1/2 cup ketchup
1/4 cup mustard
2 tablespoons brown sugar
1 teaspoon salt
1 teaspoon pepper
2 medium onions, coarsely chopped
2 cups water
1/2 lb bacon, sliced

Steps:

  • Soak beans in cold water overnight. Drain. Cover with fresh cold water. Heat to boiling point then simmer 30 minutes. Drain reserving 1½ Cups cooking water.
  • In medium bowl mix ketchup, mustard, brown sugar, salt, pepper and cooking water and add another 1/2 cup water.
  • In a clay pot,cast iron or crockery pot, layer 1/3 bacon slices,onions, beans and ketchup mixture.
  • Repeat ending with beans. Cover with remaining bacon slices. Put lid on pot and bake in a 250* oven for about 8 hours.
  • With clay cooker you put the pot in a cold oven; heat to 400*. After 30 minutes reduce heat to 300*.Cook for 3 hours; reduce heat to 250* for another 1/2 hour.
  • Serve with a boiled potatoes, ham, fresh bread and ketchup,.

Steps:

  • Place sugar in a heavy-bottomed saucepan over medium heat. Allow to remain over heat until fully melted, and approximately the color of a US copper penny.
  • Carefully add broth. It will steam and bubble wildly, and the caramel WILL seize. This is expected, and as you continue to apply heat, the caramel will dissolve back into a nice syrup.
  • Add fish sauce, shallot, garlic, and white parts of scallions. Bring to a simmer until vegetables soften.
  • Sprinkle pork with ground black pepper. Toss to coat, and add to pot. Simmer very low for 75-90 minutes. Serve with rice and top with scallion greens.

225 g boneless pork loin, thinly sliced
1 egg, hard boiled and halved (optional)
3 tablespoons muscovado sugar or 3 tablespoons soft brown sugar
4 tablespoons fish sauce

Steps:

  • Make the caramel by heating the sugar in a small, heavy-based pan over a low heat.
  • Stir constantly until it is moist and thick.
  • Take off the heat and add the fish sauce.
  • Return to a low heat and stir until the sugar dissolves.
  • Add the shallots and pepper to the caramel and leave to cool.
  • Pour the sauce into a claypot or flameproof casserole.
  • Add the pork to the sauce.
  • Cover and simmer for about 30 minutes over a low heat, stirring occasionally.
  • At the end of cooking, the pork should be in a little rich gravy.
  • Serve with the egg if using, spooning the gravy over them.

1 tsp fennel seeds
1 tsp coriander seeds
1 tsp yellow mustard seeds
6 salmon fillets , skin on (about 140-175g/5-6oz each)
3-4 tbsp vegetable oil
3 shallots , finely chopped
100ml white wine vinegar
150ml fish stock
1 pinch saffron (no more than 4-5 strands per person)
100g plus 1 tbsp salted butter , cut into 2.5cm cubes and chilled until needed
750g potatoes (we like Maris Piper), cut into 2cm cubes
2-3 tbsp vegetable oil
1 tsp turmeric
¼ tsp chilli powder (optional)
400g spinach leaves
1 tbsp butter

Steps:

  • Start by toasting the fennel, coriander and mustard seeds in a dry frying pan on a low heat, about 8-10 mins. Once you start to smell the rich aromas of the spices, you know they have cooked through. If they start to smoke, the spices will taste bitter and it would be better to start again. Once toasted, roughly crush using a pestle and mortar, or wrap the spices in a tea towel and crush with the base of a small saucepan. Stir in a pinch of black pepper.
  • Scrape the skin sides of the salmon with a knife to get rid of any remaining scales, and scrape off as much of the film of moisture you sometimes get (this helps to get the skin crisp). Slash the skin 3 times, about 3cm in length, to stop it shrinking during cooking.
  • Tip the spice mix onto a plate, lay the fish on it, skin-side up, so that the spices cover the underside of the fish. You can do this a few hrs ahead to help infuse the fish with the spices. You can also start the sauce ahead - put the finely chopped shallots in a pan with the vinegar, fish stock and saffron. Bring to the boil, then reduce by two-thirds. Set aside.
  • Put the potatoes in a pan and cover with salted water. Bring to the boil and boil for 1-2 mins only, then drain. Heat the oil in a large frying pan, then add the turmeric and chilli powder, if using. Toss the potatoes in the spiced oil, then cook for 5 mins without stirring. Shake the pan and cook for 5-10 mins more, or until the potatoes are cooked through. Season and keep warm.
  • When ready to cook the salmon, rub the skin sides with some oil, then fry in a pan (skin-sides down) on a medium heat with a little bit more oil, pressing down lightly on the fish for a few secs when it first goes in the pan. Don't touch the fish or move the pan for about 5-6 mins - this ensures you get beautiful crisp skin. When the edges start to look golden, turn the fish over and cook for 1 more min.
  • While the fish is cooking, cook the spinach in a large pan of boiling water for 2 mins. Drain, then squeeze out the excess water. Return to the pan and stir in the butter. This will form a simple emulsion, which will prevent water running out over the plate. Season.
  • To finish the sauce, warm the pan of reduced mixture until hot. Take off the heat, then whisk in all the butter, reserving 2-3 cubes. Once the butter is amalgamated, stir in remaining cubes. Season with pepper and use immediately.
  • Place a spoonful of spinach in the middle of each plate, then lay the salmon on top. Scatter some potatoes and pour some sauce around the fish. Sprinkle a few sea salt flakes over the fish and serve.

500g baby potatoes , halved if large
1 tbsp olive oil
2 tbsp butter
500g piece skinless salmon fillet
2 lemons , halved
250g frozen peas
2 tbsp crème fraîche , plus extra to serve (optional)
1 tbsp chopped dill or mint (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Boil the potatoes for 10 mins until just tender, drain and steam-dry for a few mins. Toss the potatoes in the oil and butter, then tip onto a baking tray. Roast for 20 mins. Push the potatoes to one side and put the salmon on the other side, and add the lemon halves. Season. Return the tray to the oven for 15-20 mins until everything is cooked through - check the centre of the salmon with the tip of a knife.
  • Cook the peas in simmering water for 2 mins, drain and tip into a bowl. Add the crème fraîche and herbs, if using. Break the salmon into chunks to serve and squeeze over the lemon. Serve the salmon with the potatoes and peas, and some extra crème fraîche on the side, if you like.

7 ounces bok choy, root part trimmed
1 large leek, trimmed
1 daikon radish, thickly peeled
1/2 Chinese cabbage, hakusai
1 piece dashi konbu, see note (4 X 1 1/2 X 4 inches)
12 ounces chicken, boned
12 shiitake mushrooms, stalks removed
10 1/4 ounces tofu, block drained cubed
12 ounces sardines, cleaned filleted
1 inch gingerroot, chopped
1 extra large egg
1 1/2 tablespoons miso
20 chives, rough chopped
2 tablespoons all-purpose flour
2 1/2 cups sake
2 1/2 cups water
4 tablespoons shoyu
1 lime, rind of, grated
10 -12 white peppercorns

Steps:

  • Notes: The Chinese cabbage used is called hakusai. The deep fried tofu used is called abura-age. It is thin sliced deep fried tofu. Also the zaar computer won't let me add Chrysanthemum leaves called shungiku which is a garnish. The Dashi-Konbu should be 4 X 1 1/2 X 4 inches.
  • Fish Balls: Put all ingredients in food processor and pulse to rough texture not fine. put in container and cover with plastic wrap and set aside.
  • Blanch the abura-age in rapidly boiling water for 30 seconds. Drain under cold running water and squeeze water out by hand. Cut in half lenghtways, then quarter crossways to make 8 rectangles. Cut each in half diagonally to make two rectangles. You should end up with 32.
  • Cut the bok choy into 2 1/2 inch lengths. Cut leeks diagonally in 1 inch thick oval shapes. Cut Daikon in 1/4 inch rounds. Cut hakusai in strips crosswise. Keep the stocks and leaves separate.
  • Grind citrus pepper. set aside.
  • Lay dashi-konbu on bottom of pan. Pour in soup stock ingredients to fill half of pan. bring to boil on high heat.
  • Cook fish balls: reduce heat to medium. Using a spoon scoop up the balls and shape into a ball using a metal spatula or a palette knife. Drop into boiling stock. Repeat until you finish fish paste. Skim surface frequently. Cook for 3 minutes.
  • Carefully add chicken pieces which have been cut into large bite size pieces, the stalks of the hakusai, shiitake, leek then tofu and abura-age. Simmer about 12 minutes or until chicken is done. Add soft parts of hakusai and the shungiku [Chrysanthemum leaves] and wait for 3 minutes. Remove from heat.
  • Put pan on portable cooker on table and set at lowest heat [use a crock pot] Serve small amounts of ingredients in individual bowls.
  • Sprinkle with citrus pepper.

The chicken cooks up moist and tender. This recipe is cooked in a clay pot that must be soaked in cold water for 15 minutes and is placed in a cold oven to start.
