Steps:
- Cut the shrimp, scallops, and monkfish into bite-sized pieces and place them in a bowl with the crabmeat.
- In a heavy-bottomed pot, melt the butter; add the carrots, onions, celery, potatoes, and corn and saute over medium-low heat for 15 minutes, or until the potatoes are barely cooked, stirring occasionally. Add the flour; reduce the heat to low and cook, stirring often, for 3 minutes. Add the Seafood Stock and bring to a boil. Add the seafood; reduce the heat and simmer, uncovered, for 7 to 10 minutes, until the fish is just cooked. Add the heavy cream, if desired, and the parsley. Add salt and pepper to taste, and serve.
- Warm the oil in a stockpot over medium heat. Add the shrimp shells, onions, carrots, and celery and saute for 15 minutes, or until lightly browned. Add the garlic and cook 2 more minutes. Add 1 1/2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour. Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. You can make up the difference with water or wine if you need to.

- In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings., In the drippings, saute the celery, orange pepper and onion until crisp-tender. Add garlic; cook 1 minute longer. Stir in flour until blended; gradually add broth and milk. Bring to a boil; cook and stir for 1 minute or until thickened., Add the potatoes, seafood seasoning and salt; return to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender. , Add shrimp and scallops; cook and stir for 3-4 minutes or until shrimp turn pink and scallops are opaque. Stir in cheese until melted. Garnish each serving with bacon.

- In a large soup kettle or Dutch oven, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; reserve drippings. Saute onions in drippings until tender. Add potatoes and water; bring to a boil. Cook for 10 minutes., Add the scallops, lobster, shrimp, cod and haddock. Cook for 10 minutes or until scallops are opaque, shrimp turn pink and fish flakes easily with a fork. Add the butter, salt, parsley and curry powder. Stir in milk and evaporated milk; heat through. Garnish with bacon, additional parsley, and oyster crackers, if desired.

- Place 1/2 cup milk, cream cheese, and garlic in a large pot over low heat. Cook and stir until blended. Mix in soup, green onions, carrots, corn with liquid, potatoes, parsley, and remaining milk. Season with black pepper and cayenne pepper. Simmer 25 minutes. Do not boil.
- Mix the shrimp, scallops, crabmeat, calamari, and clams, and continue cooking 10 minutes, or until seafood is opaque.

For a low-salt, low-fat diet, coat pan with nonstick spray rather than using butter and use low-sodium bouillon powder, skim evaporated milk and skim milk. Please don't substitute canned for frozen peas; they taste awful in this. Cooking time also includes final 10 minutes off flame.

Steps:
- Melt butter in a dutch oven or large pot.
- Over medium-high heat, sauté mushrooms and onion until tender, about 5 minute.
- Stir in curry powder and flour, then stir in next 8 ingredients (evaporated milk through sugar) plus 1 1/2 cups water. Bring to a boil.
- Add shrimp and scallops, return to boiling and then immediately reduce heat to a simmer.
- Let simmer, stirring often (including scraping bottom of pan), until shrimp begin to curl and scallops turn opaque, about 15 minutes.
- Remove from heat and immediately stir in the remaining ingredients.
- Let stand 10 minutes, then serve.

- To render fat, cook chopped bacon in heavy large saucepan over medium-high heat 5 minutes. Add chopped onions and sauté until onions are translucent, about 8 minutes. Add curry powder and stir 30 seconds. Mix in bottled clam juice, diced potatoes, diced butternut squash and bay leaves. Simmer 5 minutes. Add chopped kale leaves and simmer until vegetables are almost tender, about 10 minutes. Add 5 cups milk, 1 cup half and half and minced thyme. (Chowder can be prepared 1 day ahead. Cover tightly and refrigerate.)
- Bring chowder to simmer. Add fish and simmer until cooked through, about 3 minutes. Season to taste with salt and pepper. Discard bay leaves. Ladle chowder into bowls and serve.

Steps:
- On medium-high heat, cook bacon in a large saucepan for 5 minutes.
- Add onions and cook until onions are translucent.
- Add curry powder, continuing to cook and stir for about 30 seconds.
- Add in clam juice, potatoes, butternut squash, and bay leaves.
- Cook and simmer for 5 minutes.
- Add chopped kale and simmer until vegetables are almost tender.
- Pour in milk, half and half and add thyme.
- Continue to cook until simmering.
- Ad fish and continue cooking until fish are cooked through.
- Add salt and pepper to taste.
- Throw out bay leaves.
- Ladle into soup bowls and serve hot.

- In a large Dutch oven or soup pot, heat the oil on medium heat. Add the onions with a pinch of salt and cook, stirring, for 5 minutes. Then add the garlic with some more salt (to taste) and cook another 5 minutes, stirring often. Add the celery and carrots and sauté for about 4 more minutes. Add the curry powder, turmeric, and black pepper and cook for 1 to 2 minutes, stirring constantly. Add the potatoes, stock, and sherry or wine.
- Cover and bring to a boil; then reduce the heat and simmer until the vegetables are very tender, about 15 minutes. Rinse the fish fillets and cut them into bite-sized pieces. Add them to the pot, cover, and cook for 5 to 7 minutes, until the fish is no longer translucent. Remove from the heat.
- In the meantime, use a blender to puree the cream cheese and milk or half-and-half. Add some of the soup and puree. Stir the puree back into the soup. Taste for salt and pepper--or lemon juice. Add the peas and heat through gently before serving.

- Add sweet potatoes. Add enough of the chicken broth to cover the vegetables, and bring to a boil. Cook until the sweet potatoes are just barely soft, about 10 minutes.
- Add your curry powder and seafood. Add just enough chicken broth to cover everything again, and give ‘er a quick stir. Cook until the fish starts to flake, about 10 minutes.
- Add the cream and milk, give a stir and bring to simmer. Cook until the sweet potatoes are completely soft, about another 10 minutes.
