SPINACH FRITTATA
Steps:
- Preheat the oven to broil.
- In a medium bowl, whisk together the eggs, milk, salt and pepper until smooth. Fold in the cheese and tomatoes and set aside.
- In a 9-inch, oven-safe nonstick frying pan over medium heat, melt the butter. Add the onion and saute until softened, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Pour the egg mixture over the spinach, and cook until almost set, 2 to 4 minutes.
- Transfer the pan to the oven and broil until golden brown on top, 5 to 7 minutes. Remove from the oven and turn out onto a serving plate.
SUZANNE'S SPINACH QUICHE
This is a great vegetarian recipe that can be served for any meal. It's one of my dad's favorites!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Prick the pie crust all over with fork and bake for 5 minutes.
- Place the frozen spinach in microwave safe bowl and cook until thawed. Drain as much of the liquid as you can and then use paper towels to get the spinach as dry as possible.
- Beat together the eggs, yogurt or sour cream, flour, and pepper until well mixed. Stir in the spinach. Layer the sliced mushrooms, cheese, and chopped scallions in that order on the bottom of the pie crust. Top with the spinach mixture.
- Bake in preheated oven for 15 minutes and then decrease temperature to 350 degrees F (175 degrees C) and bake for 30 additional minutes. Let cool before serving.

This frittata came to be simply out of the need to use up some fridge and pantry items. The end result was quite tasty! Feel free to swap out any ingredients you may or may not have on hand.

- Preheat the oven to 350 degrees F (175 degrees C).
- Whisk eggs, milk, Italian seasoning, salt, and pepper together in a large bowl.
- Heat olive oil in a 12-inch oven-safe skillet over medium heat. Add fennel and onion and cook until softened, about 5 minutes. Add zucchini and garlic; cook, stirring often, until zucchini softens, 5 to 7 minutes. Add 1/2 of the spinach and cook until wilted, about 2 minutes. Mix in remaining spinach, red peppers, and sun-dried tomatoes; cook for 2 to 3 more minutes.
- Spread veggies into an even layer in the skillet. Pour egg mixture over top, then gently shake the pan a few times to help eggs settle to the bottom. Remove from the heat and sprinkle goat cheese over top.
- Place skillet in the preheated oven and bake until eggs are set, about 25 minutes. Cool for 5 to 10 minutes before slicing and serving.

This is a very tasty quiche that I put together for a tea-time spread. We had samosas, Indian sweets, and this- it was a huge hit- and very simple. A great last minute addition to any menu.

- Preheat oven to 350.
- Beat eggs and milk thoroughly in a bowl.
- Stir in onions, tomato, chillies.
- Stir in curry powder and black pepper.
- Add salt according to your tastes.
- Pour mixture into pie crust.
- Bake 50 minutes at 350.
- *Note: About 40 mins into cooking when the quiche has set, arrange tomatoes on top as garnish. Complete cooking time.

Steps:
- In a large bowl, combine the eggs, egg substitute, ricotta cheese, Parmesan cheese, spinach, salt and pepper. Stir in mushrooms and onions. , Transfer to a 9-in. pie plate coated with cooking spray. Bake at 350° for 30-35 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

A delicious dish best eaten cold, and can be made with or without a crust. Baked in the oven, it comes out nice and solid. It keeps very well in the fridge but does not freeze well.

- Whisk the eggs together, then add the spices and whisk very well.
- Add the remaining ingredients and pour into the crust (in a greased pie mold). You can keep some of the grated cheese aside to garnish the top of the quiche.
- Bake at 350F for 30-35 minutes. Let it rest a while before cutting. If you aren`t using a pie crust, bake for about 25 minutes.
- ******Caramelized onions are amazing and sweet. You can make them by thinly-slicing yellow onions, then cooking them at medium-low heat on the stove top in some oil and/or margarine. The longer and lower heat the better, but you can bring up the heat to make them quicker. It can take 15-45 minutes. Don`t stir them too often, you want them to brown underneath. Once they`re getting nice and brown, add some brown sugar, stir, and then add a bit of water. This will get all that delicious sticky flavor from the pan into your onions. If you don`t want to go through the trouble, you can just add thinly-sliced yellow onion and brown sugar to your mixture instead.

- Heat the oil in a 10-inch ovenproof nonstick skillet over medium heat. Add the shallots and cook, stirring frequently, until softened, 3 to 4 minutes. Do not brown. Add half of the spinach and cook until wilted down, about 1 minute. Add the remaining spinach and 1/4 teaspoon of the salt and continue cooking until all of the spinach is wilted, 1 to 2 minutes more.
- In a large bowl, whisk together the eggs, heavy cream, pepper, and the remaining 1/4 teaspoon of salt.
- Add the cooked spinach mixture, Cheddar, Parmigiano Reggiano, and basil to the egg mixture and stir to combine. Pour the mixture back into the pan (no need to wash it), then place it in the oven and bake until set, 20 to 23 minutes. Immediately place an oven mitt over the pan handle to remind yourself that it is hot (it's easy to forget and burn your hand, and the handle stays hot for a long time). Serve the frittata directly from the pan, or use a rubber spatula to loosen the edges and slide the frittata onto a serving platter.
