2 eggs, beaten
1 ball fresh mozzarella cheese, thinly sliced
1 jar marinara sauce, heated
whole wheat pasta
fresh basil, for garnish
½ cup panko bread crumbs
½ cup parmesan cheese
1 tablespoon fresh basil
½ teaspoon garlic powder
2 teaspoons dried oregano
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Preheat oven to 425°F (215°C).
  • In a medium bowl, combine the panko, parmesan cheese, basil, garlic powder, oregano, salt, and pepper.
  • Beat the 2 eggs in a shallow dish. Dredge the chicken in the egg wash, then coat with the bread crumb mixture.
  • Transfer the breaded chicken breasts to a greased roasting pan. Top the chicken with 2 small slices of mozzarella.
  • Bake for 20-25 min, until the cheese and bread crumbs have turned golden brown and the chicken is cooked through, or until it has reached an internal temperature of 165°F (73°C).
  • Serve with whole wheat spaghetti, marinara sauce, and a sprinkle of fresh basil.

In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. 2 tablespoons olive oil, plus 1 tablespoon for the baking dish
1-ounce chopped pancetta
1 medium yellow onion, chopped
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 cup red wine
1 (28-ounce) can diced tomatoes
Pinch dried basil
4 boneless skinless chicken breast halves
1 teaspoon salt
5 cups dried Italian bread crumbs
1 tablespoon dried oregano
1 tablespoon dried thyme
Freshly ground black pepper
All-purpose flour, for dredging
6 large eggs, beaten
2 tablespoons whole milk
Vegetable oil, for frying
1 pound fresh mozzarella, thinly sliced
1/2 cup grated Parmesan

Steps:

  • Tomato Sauce: In a large skillet heat the olive oil, add the pancetta and render the fat. Stir in onion, garlic and dried oregano and saute until the onions are wilted. Add the wine and cook until reduced. Add the tomatoes, basil; partially cover pan and cook over medium heat until the sauce gets thick.
  • Chicken: Pound the chicken breasts, between 2 pieces of plastic wrap, to about 1/3-inch thick.
  • Mix the salt, bread crumbs, oregano, thyme, and season with pepper in a flat dish.
  • Put the flour in a large plate or bowl. In another bowl, whisk the eggs and milk together. Dredge a chicken breast in the flour (patting off excess flour). Dip it into the egg mixture, and dredge in the bread crumbs. Shake off any excess breading. Repeat with the remaining chicken.
  • Preheat the oven to 400 degrees F.
  • In a large skillet, add 1/2-inch vegetable oil. Heat the oil to 400 degrees F on a deep-frying thermometer.
  • Fry 1 breast at a time until golden brown on each side, about 6 minutes total. Transfer to a paper towel-lined baking sheet and season with salt, to taste.
  • Grease a 2 quart baking dish and ladle in 1/2 of the tomato sauce. Spread it out to cover the bottom of the dish. Arrange the fried breasts over the sauce in 1 layer, top with the remaining sauce, the mozzarella, and finally the Parmesan.
  • Bake until the sauce and cheese are bubbling.

I used bone-in, skin-on thighs, but you could really use whatever pieces you have on hand, or that your family prefers. If using boneless pieces, you will need to cook for less time.

4 skinless, boneless chicken breast halves
salt and freshly ground black pepper to taste
2 eggs
1 cup panko bread crumbs, or more as needed
½ cup grated Parmesan cheese
2 tablespoons all-purpose flour, or more if needed
1 cup olive oil for frying
½ cup prepared tomato sauce
¼ cup fresh mozzarella, cut into small cubes
¼ cup chopped fresh basil
½ cup grated provolone cheese
¼ cup grated Parmesan cheese
1 tablespoon olive oil

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).
  • Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/2-inch. Season chicken thoroughly with salt and pepper.
  • Beat eggs in a shallow bowl and set aside.
  • Mix bread crumbs and 1/2 cup Parmesan cheese in a separate bowl, set aside.
  • Place flour in a sifter or strainer; sprinkle over chicken breasts, evenly coating both sides.

  • Place chicken in a baking dish and top each breast with about 1/3 cup of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese, fresh basil, and provolone cheese. Sprinkle 1 to 2 tablespoons of Parmesan cheese on top and drizzle with 1 tablespoon olive oil.
  • Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

  • Mix all dry ingredients in medium-sized bowl.
