2 teaspoons salt
3/4 teaspoon pepper
1 tablespoon butter

Steps:

  • Rinse spinach well in cold water; dry well.
  • In a large pot, heat the olive oil and saute the garlic over medium heat for 1 minute.
  • Add all the spinach, salt, and pepper to the pot; toss with the garlic and oil.
  • Cover the pot and cook for 2 minutes.
  • Uncover, turn heat on high, and cook for another minute, stirring until all the spinach is wilted.
  • Using a slotted spoon, lift the spinach to a serving bowl and top with butter.

2 pounds fresh spinach, washed and leaves damp
Olive-oil cooking spray
Salt and freshly ground pepper, to taste

Steps:

  • In a large saute pan, heat the olive oil over medium heat. Add the garlic, and cook until golden brown, 2 to 3 minutes. Using a slotted spoon, transfer garlic to paper towels; reserve. Discard oil.
  • Spray pan with cooking spray, and heat over medium heat. Coarsely chop the spinach and stalks. Working in batches, add the damp spinach to the pan. Cover, and cook until spinach just begins to wilt, 4 to 5 minutes. Transfer the cooked spinach to a metal bowl, and cook the remaining spinach. Season with salt and pepper. Sprinkle the reserved garlic over spinach, and serve warm with a wedge of fresh lemon.

1kg fresh spinach , or 500g frozen leaf spinach
3 tbsp olive oil
3 tbsp pine nut
2 garlic cloves , finely chopped or crushed

Steps:

  • Wash the spinach thoroughly and cram into a large pan. Pour over a little boiling water, cover tightly and cook for 2-3 mins, until the leaves have wilted.
  • Tip into a colander and drain well. Use the side of a small plate to press the spinach down to extract the last of the water. If using frozen, defrost in the microwave and drain.
  • Meanwhile heat the oil, add the pine nuts and fry until golden. Add the garlic and fry briefly, then stir in the spinach and stir until heated through. Season and serve in a warm side dish.

1 loaf French or Italian bread (about 1 pound)
1 medium onion, chopped
2 garlic cloves, minced
3 tablespoons olive oil
1 package (10 ounces) frozen chopped spinach, thawed and well drained
1 tablespoon grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon fennel seed, crushed
1 large tomato, seeded and chopped
1-1/2 cups shredded mozzarella cheese
1 tablespoon dried basil
Chopped fresh parsley, optional

Steps:

  • Cut bread in half lengthwise. Place with cut side up on a baking sheet; set aside. In a skillet, saute onion and garlic in oil until tender. Add spinach and stir until heated through, about 1 minute. Remove from the heat. Stir in Parmesan cheese, Italian seasoning and fennel seed; mix well. Spread evenly over bread halves. I love sauteed spinach with garlic, and one day I got creative and threw in some shredded cheddar cheese (Tilamook is the best). Yum! Yum! What a delightful treat my surprise turned out to be! :-) This may even appeal to non-spinach lovers because of the wonderful cheesy taste it brings. Please note that, when you first start to saute the spinach leaves, it will appear to be too much spinach, but once it begins to wilt, it becomes a much smaller quanity. Best of all, this dish literally takes about 5 minutes to throw together!
