1 teaspoon cornstarch
1/4 cup chicken broth
1 tablespoon soy sauce
1/4 teaspoon curry powder
12 ounces boneless lamb, cut into 1/8-inch strips
1 small onion, chopped
2 garlic cloves, minced
2 tablespoons vegetable oil, divided
1 small apple, chopped
1/2 cup chopped green pepper
1/2 cup sliced celery
1 can (8 ounces) sliced water chestnuts, drained
6 ounces fresh or frozen snow peas
1/4 teaspoon ground ginger
Hot cooked rice

Steps:

  • In a bowl, combine cornstarch, broth, soy sauce and curry powder; stir until smooth. set aside. In a large skillet or wok, saute lamb, onion and garlic in 1 tablespoon oil until meat is browned. Remove and keep warm. In the same skillet, stir-fry apple, green pepper, celery, water chestnuts, peas and ginger in remaining oil until crisp-tender. Add lamb mixture. Stir broth mixture and add to skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.

2 - 3 tablespoons rapeseed oil
1 onion - finely chopped
2 - 3 green chillies - cut into thin rings
1 tablespoon garlic and ginger paste
10 curry leaves
500g (1lb) cooked lamb leg or shoulder - cut into small pieces
1 tablespoon curry powder, garam masala or mixed powder
1/2 teaspoon chilli powder
1 tablespoon ground black pepper
1 tablespoon dark soy sauce
Salt to taste
2 tablespoons chopped coriander
Juice of one lemon

Steps:

  • Heat the oil in a frying pan over medium high heat. When visibly hot, add the onion and fry for about five minutes until lightly browned.
  • Add the green chillies, garlic and ginger paste and curry leaves (optional) and fry for a further 30 seconds before adding the cooked lamb.
  • Stir this well and ad the dry spices. Fry until the meat is crispy on the outside and then add the soy sauce and salt to taste. Remember, the soy sauce is already quite salty so taste before adding more salt.
  • Squeeze the lemon juice over the top and garnish with fresh coriander to serve.

8 ounces dried chow mein udon noodles (Asian-style spaghetti)*
3 tablespoons vegetable oil, divided
2 tablespoons dry Sherry
1 teaspoon cornstarch
2 tablespoons soy sauce
1 tablespoon mild-flavored (light) molasses
2 tablespoons canned unsweetened coconut milk*
2 teaspoons curry powder
1 teaspoon chili-garlic sauce*
3 tablespoons finely chopped peeled fresh ginger
2 large garlic cloves, minced
2 green onions, cut into 1-inch pieces
2 jalapeño chiles, seeded, chopped
8 ounces leg of lamb meat, cut into 1x1/2x1/4-inch strips
2 cups thinly sliced Napa cabbage
3/4 cup matchstick-size strips red bell pepper
3/4 cup matchstick-size strips green bell pepper
4 tablespoons finely chopped fresh cilantro, divided

Steps:

  • Cook noodles in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Return to pot and mix in 1 tablespoon oil. Stir Sherry and cornstarch in small bowl to blend. Mix in next 5 ingredients.
  • Heat 2 tablespoons oil in large nonstick skillet over high heat. Add ginger, garlic, green onions, and chiles. Sauté until fragrant, about 1 minute. Add lamb, cabbage, and all bell peppers. Stir-fry until lamb is just cooked through, about 2 minutes. Stir Sherry seasoning mixture and add; simmer until sauce thickens, stirring often, about 2 minutes. Add lamb sauce to noodles in pot. Toss over medium-high heat until noodles are heated and coated with sauce, about 2 minutes. Mix in 2 tablespoons cilantro. Transfer to bowl. Sprinkle with 2 tablespoons cilantro.

CUMIN LAMB STIR-FRY

Fragrant, intense and full of fiery chile, this lamb stir-fry isn't for the timid eater. For the most authentic flavor, it's worth your while to seek out Sichuan peppercorns, which have a woodsy, tongue-numbing, camphor quality. (They are available at specialty spice markets, in Chinatown, or online.) You can substitute regular black peppercorns, but you won't get the same punch. If you're not a lamb-lover, you can also try this with lean beef. Serve this over white or brown rice to cut the heat, with a side of sliced cucumbers dressed with sesame oil and salt for freshness.

1 pound boneless lamb

Steps:

  • In a dry skillet over medium heat, toast cumin seeds and peppercorns until fragrant, 1 to 2 minutes. Transfer to a mortar and pestle and crush lightly.
  • Slice meat across the grain into 1/2-inch-thick strips. Toss meat with crushed spices, ground cumin, salt and dried chiles.
  • Peel onion and halve it through the root end. Trim the ends and cut each half lengthwise into 1/2-inch-thick slices. Cut white and light green parts of scallions into 2-inch lengths. Thinly slice scallion greens; keep separate.
  • Heat a very large skillet or wok over high heat until screaming hot, about 5 minutes. Add oil. Toss in onion and the scallion bottoms. Cook, tossing occasionally, until vegetables are lightly charred but still crisp, about 2 minutes. Transfer to a bowl.

KERALA LAMB CURRY

This one is for lovers of curry, more specifically, those who crave south Indian cuisine. I ate this recently in India and thought I was in heaven. Don't be put off by the long list of ingredients. It is really very easy. However, please do not make substitutions if at all possible, as the taste just won't be the same. It is important to use fresh curry leaves, as in the dried form they are quite tasteless (I buy them fresh, then store them in the freezer). The coconut is optional, but I cannot imagine this dish without it, and unfortunately, dried coconut just won't do. Sometimes I buy frozen freshly grated coconut and store it in the freezer, otherwise you can buy a fresh coconut. You will notice ingredients for 'tempering'. Tempering is the final seasoning of your masterpiece. It involves heating a little oil to which a selection of small amounts of mustard seeds, cumin seeds, black gram dhal, curry leaves, asafetida or other spices, are added. The result is an undeniably Indian flavor and aroma. I like to use coconut oil when cooking south Indian cuisine, but any vegetable oil will suffice. 3 tablespoons coriander seeds
4 -6 dried hot red chili peppers, to taste
1 tablespoon black peppercorns
1/2 teaspoon cumin seed
1 1/2 teaspoons fennel seeds
6 green cardamom pods
3 -4 tablespoons vegetable oil
5 ounces fresh coconut, cut into thin slices, or grated
1/4 teaspoon ground turmeric
1 teaspoon salt, to taste
1 teaspoon brown mustard seeds
20 fresh curry leaves
3 ounces shallots or 3 ounces white onions
1 inch fresh ginger, peeled and finely sliced
3 cloves garlic, peeled and finely chopped
2 1/4 lbs boneless lamb shoulder, cut into ½ inch dice
2 tablespoons white wine vinegar
1 teaspoon brown mustard seeds
1 teaspoon split Urad Dal, with or without skin (optional)
2 ounces shallots or 2 ounces white onions
20 fresh curry leaves

Steps:

  • To make the spice powder, dry roast the spices in a medium-sized skillet, over medium heat, and stir and toss them around for 1-2 minutes, or until they begin to look toasted and release their aromas.
  • Immediately remove from heat and place the spices in a clean coffee grinder, and when cooled slightly, grind to a fine powder, then set aside.
  • If you choose not to grate the coconut, cut the thinly sliced coconut flesh into ¼-½ inch dice.
  • Next, wipe out the skillet with a paper towel, return to medium heat, and add 1 tablespoon of vegetable oil.
  • When hot, add the diced coconut, the turmeric and ½ teaspoon of salt, stir-fry for 3-4 minutes, or until the coconut is toasted, then set aside.
  • Heat 2-3 tablespoons vegetable oil in a large pan, preferably non-stick, over medium to high heat.
  • Add 1 teaspoon mustard seeds, and stir a few seconds until they pop.
  • Add 20 fresh curry leaves, 3 oz shallots, and all the ginger and garlic, and saute, stirring, for 3-4 minutes until the shallots are lightly browned.
  • Now add the meat and the roasted ground spice mixture, and stir well to coat the meat with the spices.
  • Toss in the toasted coconut dice and ½ teaspoon of salt, and then add the vinegar and 2½-3 cups water.
  • Bring to the boil, cover, and simmer over low heat for 50 minutes to an hour until the meat is almost tender.
  • Remove the lid and, increasing the heat if necessary, continue to cook for a further 10-15 minutes or until the sauce is thick and clings to the meat.
  • Finally, heat the remaining tablespoon oil in a small skillet over medium heat, and when hot, add the urad dhal (optional) and the mustard seeds.
  • Stir until the mustard seeds pop, and then add 2 oz shallots and 20 curry leaves, and stir-fry until the shallots are golden brown.
  • Add this shallot mixture to the meat, stir well, remove from heat and serve with rice.

3 tablespoons meat curry powder, mixed with 5 tablespoon of water to form a paste
1 1/2 teaspoons salt
1 teaspoon light soya sauce

3 limes, juiced
2 tablespoons tomato puree
4 tablespoons water (room temp)
3 green chilies, slit into two length wise,but kept whole with seeds intact
3 red chilies, slit into two length wise,but kept whole with seeds intact
3 tomatoes, cut into wedges
5 potatoes, cut into wedges
1/4 cup yoghurt or 1/4 cup coconut milk
5 tablespoons canola oil
2 large onions, peeled
1 carrot, cut into 3 cm thickness
2 slices ginger (1 cm thickness each)
4 cloves garlic

Steps:

  • Add ginger, onions and garlic into food processor and grind till really fine.
  • Heat oil in a wok and stir fry the ingredients till fragrant.
  • Add curry paste and stir fry for 4-5 minutes over MEDIUM heat till oil exudes and mixture is fragrant.
  • Add the lamb chops and stir fry well.
  • Add potato wedges after stir frying the chops for 5 minutes.
  • Add lime juice, tomato puree, water, salt, sugar and soya sauce and cook for 15 minutes.
  • Add carrots in and allow all this to cook covered for 10 minutes, stirring occasionally.
  • Add chillies and yoghurt/coconut milk (to thicken gravy), simmer gently for 5-10 minutes before serving.
  • NOTE: Potatoes and carrots need to be cooked in the curry for 40 minutes for it to be nice and soft.

1 cup plain yogurt, or more to taste
2 teaspoons curry powder, divided
2 teaspoons ground cumin, divided
2 teaspoons garlic powder, divided
¼ teaspoon garam masala, divided
¼ teaspoon cayenne pepper, divided
¼ teaspoon ground turmeric, divided
¼ teaspoon ground ginger, divided
¼ teaspoon ground coriander, divided
¼ teaspoon ground cardamom, divided
1 tablespoon olive oil
2 medium onions, sliced
1 (16 ounce) can diced tomatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
½ cup red wine
1 large bay leaf

Steps:

  • Cut lamb into chunks and place in a large zip-top bag or glass or ceramic bowl. Marinate lamb chunks in yogurt, 1 teaspoon curry, 1 teaspoon cumin, 1 teaspoon garlic powder, and half of garam masala, cayenne, turmeric, ginger, coriander, and cardamom for 4 to 8 hours.
  • Heat olive oil in a big pan over medium-high heat. Saute onions in the hot oil, about 5 minutes. Add the marinated lamb and any marinade. Add diced tomatoes. Reduce heat to medium-low; cook and stir until lamb browned on all sides, 10 to 15 minutes.
  • Transfer mixture to a slow cooker and cook on High for 2 hours. Stir in bell peppers, cover, and continue to cook until lamb is cooked through and stew has reduced, about 2 hours more.
  • Reduce heat to Low. Add wine, remaining curry powder, cumin, garlic powder, garam masala, cayenne, turmeric, ginger, coriander, cardamom, and more salt and pepper to taste. Add bay leaf. Let simmer for 1 hour. Remove bay leaf and serve.

1 tablespoon coriander seeds
1 tablespoon cumin seeds
10 peppercorns
2 tablespoons peanut or olive oil
1 large Spanish onion, chopped
4 cloves garlic, chopped
1 1/2 tablespoons minced ginger
1 1/2 pounds lamb (from the leg or shoulder), cut into 1/2-inch cubes
3/4 teaspoon turmeric
1 1-inch piece cinnamon stick
1 1/2 teaspoons sea salt
1 cup plain whole milk yogurt
1/2 cup milk
1/2 cup coconut milk
1/4 cup sliced scallions
1/2 cup chopped cilantro
1 lemon, juiced

Steps:

  • Lightly toast coriander in a small pan, shaking over medium heat about 2 minutes. Repeat with cumin, cooking about 1 minute. Pour coriander, cumin and peppercorns into a sturdy bag and crush with a rolling pin, or use a mortar and pestle.
  • Place oil in a large pan over medium high heat. Add onion and sauté until soft on edges, about 5 minutes, stirring often. Add garlic and ginger, and cook another minute or two. Stir in meat and cook, turning, for 8 to 10 minutes. Sprinkle with coriander, cumin, peppercorns, turmeric, cinnamon stick and 1 teaspoon salt. Stir. Add yogurt, milk and coconut milk, and gently bring just to a boil; cover and simmer gently until lamb is cooked through, 20 minutes. Fold in scallions, cilantro and a little lemon juice. MOROCCAN CHARD & LAMB PAN-FRY

1 olive oil
600g diced shoulder of lamb
1 onion , sliced

handful toasted pine nuts

Steps:

  • Strip the chard leaves from the stalk. Cut the stalk into batons and roughly shred the leaves. Set aside separately.
  • Heat the oil in a sauté pan and fry the lamb for 5-6 mins over a high heat until browned. Add the onion, garlic, chard stalks and spices and continue to cook for 3-4 mins until softened. Pour over the stock and scatter in the raisins, then simmer for 4-5 mins to make a sauce. Wilt chard leaves through the stock, season and serve scattered with pine nuts.
