This is a really good and easy to make curry paste. No time used, no effort, and very tasty. As noted: Suze prefers less heat, Bold likes a lot. Go ahead and use as much, or little, cayenne as you like! The decision to use water or oil will depend on what type of recipe you will be using this in. An oil-based marinade, for instance would call for oil, likewise, water-based preparation.... do what works for you.

1 inch fresh ginger, peeled and chopped
1/4 cup garlic, minced
1/2 small onion, chopped
1/4 cup curry powder
1/4 cup cayenne

Steps:

  • Put it all in one of those little mini-processors and zoom it a couple of times.
  • Add a little bit of water, or oil, to make a paste and zoom it until it all comes together.

I was given this recipe from a mum at school who is Indian. She hates making curry paste all the time so she came up with this - this paste is enough for 4 meals! Freeze in bags and thaw in the fridge overnight to use OR keep in the fridge for upto 3 days. This is suitable for lamb, chicken, fish or prawns. Use 1 pound (just under 1/2 kilo) of your chosen meat per meal.

1 kg onion
4 cm by 1cm piece fresh ginger (roughly the size of a finger)
6 large garlic cloves
3 -4 green chilies
6 small tomatoes
1/2 cup oil
4 teaspoons cilantro, powder (corinader)
1/2 teaspoon cumin powder
1/2 teaspoon turmeric powder
1/2 teaspoon garam masala
1/2 cup coriander leaves (cilantro)
2 cups water
1 teaspoon salt

Steps:

  • Chop the onions as fine as you can. Chop the ginger, garlic and chillies. Puree the tomatoes (keep skin on).
  • Heat the oil in a pan and fry the onions until caramalised (20-25 minutes) over a medium heat.
  • Add the ginger, garlic and chillies, fry for another 3 minutes.
  • Add the coriander powder and saute for another 4 minutes and stir constantly, add 2 TB of water if it gets too thick and starts to stick.
  • Add the remaining spices and after 30 seconds add the tomato and coriander.
  • Stir in 2 cups of water and salt.
  • Simmer over a low heat for 15 minutes and stir every so often.
  • Cool completely, store in the fridge (in a glass jar) or seal in 4 seperate bags and freeze for upto 2 months.
  • TO USE THIS PASTE:.
  • Choose your meat and seal chunks (if using prawns, remove all shells EXEPT the tails) in a hot pan. Add the paste, stir and fry until fragrant. Reduce heat (I like to add 1 can of coconut milk) and cook until the meat is cooked.

3 tbsp cumin seeds
3 tbsp coriander seeds
1 star anise
1⁄2 tsp chilli powder
4 tbsp garam masala
4 black peppercorns
1 tbsp ground turmeric
1 tsp tamarind paste
1 tbsp malt vinegar
1⁄2 cinnamon stick , broken in half
1 green chilli , sliced
1 bunch coriander , chopped
200g roasted peppers , from a jar

Steps:

  • Toast all the spices in a frying pan, then leave to cool. Tip into a spice grinder and blend to a fine powder, then add the tamarind paste, vinegar, cinnamon stick, chilli, coriander and roasted peppers. Blend to a coarse paste, then transfer to a container. Can be made a day ahead. Now try using this spice paste to make our venison madras.

1 (16 ounce) can chickpeas, drained and rinsed
1 large sweet potato, cut into 1-inch cubes
1 medium red bell pepper, cut into 1-inch pieces
1 small onion, cut into 1/2-inch pieces
1 (15 ounce) can unsweetened coconut milk
3 tablespoons creamy peanut butter
3 tablespoons lime juice
2 tablespoons brown sugar
1 ½ tablespoons red curry paste
½ teaspoon garlic powder
½ teaspoon ground ginger
1 ¼ teaspoons kosher salt
2 cups hot cooked rice

Steps:

  • Combine chicken, chickpeas, bell pepper, sweet potato and onion in a 1-gallon, resealable freezer bag.
  • Whisk coconut milk, peanut butter, lime juice, brown sugar, curry paste, garlic powder, ginger, and salt together in a medium bowl until well combined. Pour mixture into the bag. Tightly seal and mix the contents until well combined. Freeze for up to one month.
  • The day before cooking, remove bag from the freezer and allow contents to thaw in the refrigerator for 24 hours.
  • Empty bag into a slow cooker. Cook on High for 4 hours until chicken is no longer pink in the center and the juices run clear.
  • Serve curry over hot rice.
