- Preheat oven to 325°. In a microwave, melt chocolate chips and butter; stir until smooth. Cool slightly. In a small bowl, beat egg and sugar. Stir in vanilla and chocolate mixture. Gradually add flour; fold in pecans., Fill paper-lined muffin cups two-thirds full. Bake until tops begin to crack, 20-25 minutes. Cool for 10 minutes before removing from pan to a wire rack.

- Preheat oven to 325 degrees F (165 degrees C). Line 18 cupcake cups with paper liners.
- Melt butter and chocolate chips together in a saucepan over low heat, stirring until smooth; let cool.
- Beat eggs and sugar together in a mixing bowl until thoroughly combined. Mix flour and vanilla extract into egg mixture. Fold in chocolate mixture until batter is smooth. Pour batter into prepared cupcake cups, filling them about 1/2 full.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean or with moist crumbs, about 30 minutes.

MINT CHOCOLATE CUPCAKES
My boyfriend's favorite treat that I make. Deliciously moist cake with a light and fluffy mint buttercream topping. After covering cupcakes with buttercream, decorating with sprinkles or chocolate pieces is recommended.

- Preheat oven to 350 degrees F (175 degrees C). Line a muffin tin with greased liners.
- Combine boiling water and cocoa powder in a small bowl; whisk until smooth. Allow to cool, about 10 minutes.
- Sift flour, baking soda, baking powder, and salt together in a bowl.
- Combine 1/2 cup butter and 1 cup plus 2 tablespoons white sugar in a large bowl; beat together with an electric mixer on medium speed until creamy. Beat in eggs one at a time until smooth. Mix in vanilla extract. Mix in the flour mixture in 3 additions, alternating with the cocoa mixture. Fold peppermint candies into the batter.
- Scoop batter into the muffin tin.
- Bake in the preheated oven until cupcakes are firm to the touch or a toothpick inserted into the center of a cupcake comes out clean, 15 to 18 minutes. Remove cupcakes from the pan and set on a rack to cool, about 30 minutes.
- Combine shortening and 1/2 cup butter in a large bowl. Beat with an electric mixer on medium speed until smooth. Add peppermint extract. Add confectioners' sugar, 1/2 cup at a time, beating thoroughly after each addition. Beat in milk, a tablespoon at a time, until buttercream is desired consistency. Fold in food coloring a little at a time to reach desired shade of green.
- Transfer buttercream to a piping bag fitted with a round or star tip. Frost each cupcake with buttercream.

- Heat oven to 350°F. Line 8-inch square pan with nonstick foil, leaving enough hanging over sides of pan for easy removal. Make brownie batter as directed on box, reserving mint chips packet for later; spread in pan. Bake 35 to 38 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
- Remove brownies from pan by foil; cut 1/8-inch off around edges of brownie. Cut brownie into 6 rows by 4 rows, making 24 brownie pieces. Line cookie sheet or tray with sides with cooking parchment paper. Roll brownie pieces into balls, and place on cookie sheet; refrigerate 15 minutes.
- In small microwavable bowl, microwave almond bark uncovered on High 1 to 2 minutes, stirring every 15 seconds, until smooth. In another small microwavable bowl, microwave chocolate chips and shortening uncovered on High 60 to 90 seconds, stirring every 30 seconds, until smooth.
- Using 2 forks, dip and roll 12 balls, one at a time, in almond bark. Shake off excess almond bark, and place on lined cookie sheet. Dip remaining 12 balls in chocolate; shake off excess chocolate, and place on lined cookie sheet. Refrigerate brownie truffles about 20 minutes or until coating is set.
- In small microwavable bowl, place reserved mint chips and 1/2 teaspoon oil, as called for on brownie box. Microwave uncovered on High 25 to 30 seconds; stir until chips are melted. Drizzle over chilled brownie truffles. Refrigerate until drizzle is set, about 10 minutes.
