Been making this for years. It's from the Eagle Brand Sweetened milk company. You can use any kind of chocolate or candy pieces you like. I toast the coconut and sometimes add cranberries or raisins, marshmallows. I have even made this using all the opened bags of morsels that we all have hanging around and it turned out...

Number Of Ingredients 6

1/2 c butter melted
11/2 c graham cracker crumbs
1 c chopped nuts (pecans or walnuts)
1 c semi sweet chocolate morsels 6 oz
11/3 c flakes coconut 31/2 oz can toasted
1 can(s) eagle brand sweetened condensed milk

Steps:

  • 1. Spray pan with non stick spray. Pour melted butter into the bottom of a 13 x9x2 inch pan
  • 2. Sprinkle graham cracker crumbs evenly over butter and press down lightly. Sprinkle nuts evenly, scatter chocolate morsels over nuts then sprinkle the coconut evenly over the choc0late
  • 3. Pour the condensed milk evenly over coconut, Bake 350 for about 25 minutes. Until lightly browned. Cool in pan at lest 15 minutes and cut into squares. Can make about 2 dozen

This bar cookie is an old fashioned favorite. Chocolate chips, nuts and coconut are set in a caramelized layer on top of a graham cracker crust.

½ cup butter or margarine, melted
1 ½ cups graham cracker crumbs
1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
2 cups semisweet chocolate morsels
1 ⅓ cups flaked coconut
1 cup chopped nuts

Steps:

  • Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray.
  • Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.
  • Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.

I have tried numerous recipes for cutout cookies over the years-this one is foolproof. My daughter and my granddaughter love making these for holidays and social events. Most of all, we enjoy decorating them. You can try almond flavoring or another flavoring of choice. This recipe is easily doubled. -Irene Palm, Mansfield, Ohio

2 cups butter, softened
1 package (8 ounces) cream cheese, softened
2 cups sugar
2 large egg yolks, room temperature
2 teaspoons vanilla extract
5 cups all-purpose flour
FROSTING:
3-1/2 cups confectioners' sugar
3 tablespoons butter, softened
1 tablespoon shortening
1 teaspoon vanilla extract
4 to 5 tablespoons 2% milk
Food coloring of choice, optional
Assorted sprinkles or candies, optional

Steps:

  • Beat butter, cream cheese and sugar until light and fluffy. Beat in egg yolks and vanilla. Gradually beat in flour. Divide dough into 4 portions; shape each into a disk. Cover; refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with floured 3-in. holiday cookie cutters. Place 1 in. apart on ungreased baking sheets., Bake until edges are light golden, 12-14 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely., For frosting, beat confectioners' sugar, butter, shortening, vanilla and enough milk to reach desired consistency. If desired, tint with food coloring. Spread or pipe over cookies. Decorate as desired.
