DADDY'S SAVORY TOMATO BISCUITS
My father was a man that could take an unstocked kitchen and make a gourmet meal. I watched him make these biscuits when we were out of milk. Just amazing!

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Stir the flour, baking soda, salt, and sugar together in a bowl, and cut in the shortening with a pastry cutter until the mixture looks like crumbs. Mix in the vegetable juice cocktail just until moist, and turn out onto a well-floured work surface. Gently knead several times just until dough holds together, roll out to 1/2-inch thick, and cut into rounds with a biscuit cutter. Place the biscuits onto the prepared baking sheet.
- Bake in the preheated oven until risen and lightly browned, 8 to 10 minutes.

BIG DADDY BISCUITS
This recipe is from the All Recipe site by John Pickett with lots of great reviews. These biscuits are exactly what I was looking for. I modified the recipe just a bit due to suggestions by some of his reviewers and it worked great for me also. Thanks to him I can now bake biscuits I like! I'm going to make some ahead for the freezer since we liked this recipe so well.

- Preheat oven to 425 degrees.
- In large bowl, whisk together flour, baking powder, salt and sugar. Cut in the 1/3 Cup of butter (I cut the butter into very small cubes and then used a pastry blender) until the mixture resembles coarse meal. Gradually stir in the milk until dough pulls away from the side of the bowl.
- Turn out onto a floured surface, and knead 15 to 20 times (I didn't actually do this, I just patted it into a nice smooth mound and then flattened with my hands to the thickness I wanted - about 3/4 inch thick). Cut into biscuits (I used about a 2 inch size). Brush off excess flour and place biscuits onto a lightly sprayed baking pan (I use lightly sprayed foil for easy cleanup). Brush tops of biscuits with melted butter.
- Bake for 10-15 minutes (depending on your oven - I baked mine for about 10 minutes). I actually lift a biscuit off the pan and see if the bottoms are a nice light golden brown and then I remove from oven. I had about 9-10 biscuits from this mix.

- Preheat oven to 450°F. Lightly grease a baking sheet with nonstick cooking spray. Using a pastry blender or two table knives, cut the shortening into the flour until it resembles coarse meal. Use a fork to stir in the buttermilk to make a soft dough, or until the dough comes together and leaves the sides of the bowl. Continue stirring with the fork until all the flour is worked into the dough. Turn the dough out onto a lightly floured board. Knead 3 or 4 times until smooth and manageable.
- With your hands or a floured rolling pin, flatten the dough to a thickness of 1/2 inch. Cut with a 2 to 2 1/2-inch floured biscuit cutter. Reroll the dough for more biscuits if necessary. Place the rounds on the baking sheet 1 inch apart for crisp biscuits or almost touching for softer biscuits. Bake for 8 to 10 minutes, or until lightly browned.

J.P.'S BIG DADDY BISCUITS
This recipe will produce the biggest biscuits in the history of the world! Serve these gems with butter, preserves, honey, gravy or they can also be used as dinner rolls...you get the picture. The dough can also be prepared several hours, and up to a day ahead of time. If so, turn dough out onto aluminum foil that has been either floured, lightly buttered or lightly sprayed with cooking spray. Roll up foil until it is sealed, and refrigerate. Don't be surprised if your biscuits rise even higher because the baking powder has had more time to act in the dough. You may have to make a few batches before you get desired results: desired results equals huge mongo biscuits.
