Alabama has some tasty fresh blackberries. Decades ago, my mama was heading out to pick blackberries to make a cobbler, but she ended up going to the hospital to have me instead. 1/2 cup plus 2 tablespoons melted butter, divided
1 cup self-rising flour
1-1/2 cups sugar, divided
1 cup 2% milk
1/2 teaspoon vanilla extract
3 cups fresh blackberries or frozen unsweetened blackberries

Steps:

  • Preheat oven to 350°. Pour 1/2 cup melted butter into an 8-in. square baking dish. In a small bowl, combine flour, 1 cup sugar, milk and vanilla until blended; pour into prepared dish. In another bowl, combine blackberries, remaining 1/2 cup sugar and remaining 2 tablespoons melted butter; toss until combined. Spoon over batter., Bake until topping is golden brown and fruit is tender, 45-50 minutes. Serve warm.

This recipe works great with other cobbler fruit and is an excellent light dessert that isn't too sweet! Serve with whipped cream or vanilla ice cream.

3 cups fresh blueberries
3 tablespoons white sugar
⅓ cup orange juice
⅔ cup all-purpose flour
¼ teaspoon baking powder
1 pinch salt
½ cup butter, softened
½ cup white sugar
1 egg
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In an 8 inch square baking dish, mix blueberries, 3 tablespoons sugar, and orange juice. Set aside. In a small bowl, thoroughly mix flour, baking powder, and salt. Set aside.
  • In a medium bowl, cream butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla extract. Gradually add flour mixture, stirring just until ingredients are combined. Drop batter by rounded tablespoons over blueberry mixture. Try to cover as much of filling as possible.
  • Bake in preheated oven for 35 to 40 minutes, until topping is golden brown and filling is bubbling.

Old-Fashioned Blackberry Cobbler image

Old-fashioned blackberry cobbler with layers of flaky pastry and juicy tart blackberries.

1 double pie crust recipe
1 cup granulated sugar
1 to 2 tablespoons cornstarch ((see notes))
⅛ teaspoon ground cinnamon
1 cup boiling water
4 cups blackberries
juice of ½ lemon ((if needed to add tartness))
1 tablespoon cold unsalted butter (cut into small cubes)
1 large egg (lightly beaten)
coarse sugar for topping

Steps:

  • Prepare a double crust pie pastry and refrigerate until needed.
  • Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper, set aside. Lightly grease an 8 or 9-inch casserole dish or oven-proof skillet with vegetable cooking spray. Set aside.
  • In a medium saucepan mix together 1 cup of sugar, cornstarch, cinnamon and boiling water. Bring the sugar mixture to a boil over medium heat. Boil 5 minutes stirring occasionally until thickened. Remove from the heat and add the blackberries and any accumulated juice. Stir gently until the blackberries release some juice. Set aside.
  • Cut one of the pastry disks in half and roll out on a lightly floured surface to about 1/8th inch thick. Cut the pastry into a square roughly the same size as the prepared pan. Reserve any pastry scraps. Place the pastry square on the parchment lined baking sheet and bake until firm, lightly browned with bubbles starting to form on the crust, about 10 minutes. This will be used for the middle layer of the cobbler. Set aside.
  • While the pastry square is baking, roll out the remaining whole disk of dough to at least a 12x12-inch square, about ⅛ inch thick. Gently ease the dough into the prepared dish pressing gently into the corners without stretching. Trim the edges of the dough leaving a ½-inch overhang all the way around. This overhang will be folded up and over the lattice top. Collect any scraps of dough and put them together with the remaining ½ disc of pastry.
  • Spoon half the blackberry mixture into the prepared pan. Top with the pre-baked pastry square, then add all the remaining blackberry mixture. Dot the blackberries with butter.
  • Roll out the remaining dough to a 10-inch square (for 9-inch pan). Cut the dough into 8 or 10 strips and weave a lattice crust on top. Trim the excess dough to the same size as the overhang. Lightly dampen the top and bottom edges of the dough strips with a wet finger. Fold the excess overhang up and over the edges of the strips to seal. Crimp or seal the edges with a fork.
  • Brush the pastry with the beaten egg and sprinkle with coarse sugar.
  • Place the baking pan on the parchment lined baking sheet to catch any juice that may bubble over. Bake at 400°F for 10 minutes then reduce the heat to 350°F and continue baking for about 45 to 55 minutes or until the crust is golden brown and the juices are bubbling. If the crust is browning too quickly, tent the cobbler with foil as needed.
  • Cool to room temperature or serve warm topped with ice cream or lightly sweeten cream if desired.

The first time I made this for my Dad he actually had tears in his eyes he enjoyed it so much! I'm not completely sure where I found this... but this is what our family refers to this recipe by....

1 1/4 cups sugar
2 tablespoons cornstarch
2 tablespoons quick-cooking tapioca
6 cups blackberries, fresh, rinsed and drained (I've never used frozen)
1 teaspoon grated lemon peel
1 tablespoon lemon juice
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup cold butter, cut in chunks
1 cup whipping cream

Steps:

  • In a large bowl, combine 1 cup sugar, cornstarch, tapioca, blackberries, lemon peel, and lemon juice. Mix gently to coat. Pour into a shallow 3- to 4-quart baking dish.
  • In another bowl, mix flour, baking powder, salt, and remaining 1/4 cup sugar. With your fingers or a pastry blender, rub or cut butter into flour mixture until coarse crumbs form. Add cream and stir just until mixture forms a soft, crumbly dough.
  • Pat 1/4-cup portions of dough into flat disks 1/2 inch thick and arrange evenly over fruit.
  • Bake in a 350º oven until topping is golden brown and fruit is bubbling, 45 to 55 minutes. Serve warm or at room temperature.

2 cups fresh blackberries, or more to taste
2 cups white sugar, divided
½ cup butter
¾ cup milk
¾ cup all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix blackberries and 1 cup sugar together in a bowl; let stand until mixture becomes juicy, 5 to 10 minutes.
  • Place butter in a 9x13-inch baking dish and put dish in the preheating oven until butter is melted, 2 to 5 minutes. Remove dish from oven.
  • Combine remaining 1 cup sugar, milk, flour, baking powder, and salt in a large bowl until batter is smooth; pour over melted butter. Do not stir. Spoon blackberry mixture over batter.
  • Bake in the preheated oven until bubbling and cooked through, about 1 hour.

A combination of the best cobbler recipes I have made. This adaptation is the simplest and tastiest yet.

5 cups fresh clean blackberries
2 tablespoons triple sec (orange liqueur) or 2 tablespoons Grand Marnier
2 cups sugar
4 teaspoons cornstarch
2 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 cups milk
1/2 teaspoon vanilla
1 cup butter, softened or melted

Steps:

  • Preheat oven to 375.
  • In a large bowl stir together; berries, liqueur, sugar and corn starch.
  • Let sit while you make the batter.
  • In an ungreased 11x15" pan stir together well; flour, baking powder, salt, milk, vanilla, melted butter.
  • Spread to cover bottom of pan evenly.
  • Carefully spoon berry mixture over the batter to cover all.
  • Bake for 45 minutes to one hour depending on glass or metal pan.
  • I prefer glass as you can see the color of the batter as it cooks.
  • Berries should be bubbling and bottom should look golden brown when done.
  • Closer to 45-50 minutes for glass, 50-60 for metal.
  • Place on a cooling rack for one hour.
  • Serve warm with ice cream or cold with whipped cream.
  • Is still very good the next day.
