1/2 cup frozen green peas, thawed
2 cans (5 oz each) tuna, drained
1 cup mayonnaise or salad dressing
1 cup shredded Cheddar cheese (4 oz), if desired
1/4 cup sweet pickle relish, if desired
2 teaspoons lemon juice
3/4 teaspoon salt
1/4 teaspoon pepper
1 medium stalk celery, chopped (1/2 cup)
1 small onion, chopped (1/4 cup)

Steps:

  • Cook macaroni as directed on package, adding peas for last 4 to 6 minutes of cooking; rinse with cold water and drain.
  • In large bowl, mix macaroni, peas and remaining ingredients. Cover and refrigerate at least 1 hour to blend flavors.

Grandma Grace's Macaroni Salad With Tuna image

I don't know where my mother learned to make this macaroni salad, but it is a multi generation family favorite. And it is so simple! The only family get togethers where we don't make this are Thanksgiving and Christmas. I think my father would dis-own my sister and me if one of us didn't make it for Easter! It always disappears when taken to pot-lucks and picnics. There is no mustard in it, and it is the only macaroni salad my dad will eat. My mom used to use regular tuna packed in oil, but I now use solid white albacore packed in water, whole wheat pasta and canola oil mayo in an effort to "lighten it up". Prep time includes 2 hours cool time.

12 ounces elbow macaroni, cooked al-dente, and completely cooled
2 (6 ounce) cans tuna
1 -1 1/2 cup mayonnaise, do not use salad dressing
2 large kosher dill pickles, coarsely chopped
2 celery ribs, thinly sliced
1 teaspoon dried dill
salt and black pepper
fresh dill sprig (optional)
hard-boiled egg (optional)

Steps:

  • Cook the macaroni according to package directions for al dente doneness.
  • Drain and immediately plunge into very cold water to stop any further cooking.
  • Drain the tuna, and coarsely crumble into the drained and cooled macaroni.
  • Gently stir in about 1/2 cup of the mayonnaise.
  • Add the pickles, celery and dried dill.
  • Stir again gently adding more mayonnaise until desired coverage is achieved. (I don't like it dry, but it shouldn't be "soupy").
  • Add salt and pepper to taste, again gently stirring inches.
  • Refrigerate for at least 2 hours before serving.
  • If the salad looks a bit dry, you can add a bit more mayonnaise right before serving.
  • Garnish with fresh dill and sliced eggs if using.

Creamy from eggs and mayonnaise, tangy and acidic from mustard, pickles and chow chow, with a nice crunch from celery and onion. The Cajun spice just rounds it out with a blend of spices, the pimentos add a pop of color and sweetness, and tuna complements and ties all the flavors together in this Southern macaroni salad. Could top with some parsley for added color! Put this in a tortilla or melt some cheese on toast and make an open-faced sandwich!

½ cup diced red onion
1 (16 ounce) package elbow macaroni
1 cup mayonnaise
½ cup chopped pimento peppers
5 tablespoons dill pickle relish
2 tablespoons chow-chow (optional)
1 tablespoon Dijon mustard
1 teaspoon Cajun seasoning
1 teaspoon kosher salt
3 ribs celery, diced
2 large hard-boiled eggs, chopped
2 (6.5 ounce) jars tuna packed in oil

Steps:

  • Place diced onion in a large bowl and cover with cold water. Let sit for 5 minutes. Drain into a colander.
  • While onion soaks, bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain into the same colander as red onion and run under cold water to stop cooking and cool to room temperature.
  • Place mayonnaise, pimentos, relish, chow-chow, mustard, Cajun seasoning, and salt in a large bowl and stir to combine. Add pasta, red onion, and celery and stir to combine. Gently fold in tuna and eggs to combine.

A great summertime side dish...my mom and I were reflecting on where in the world this recipe came from---my dad made it for me as a child, and it's so perfect, I never could face to mess with changing it! I've seen some close variations, but this is my all-time favorite!! Even my hubby who hates olives loves this!!

1 (6 ounce) can albacore tuna in water
1/2-3/4 cup Miracle Whip (mayo not recommended)
2 celery ribs, finely diced
1/3 cup green olives, sliced (with pimentos)
1 lb elbow macaroni (cooked slightly al dente, then chilled rinsed to cool)
onion powder, to taste
celery salt, to taste
garlic salt, to taste
black pepper, to taste (I like Mortons Nature Seasoning)

Steps:

  • Boil pasta until slightly undercooked (should still have a slight bite to it!) Be sure to completely chill elbows before adding to mixture.
  • Drain and flake tuna in bowl, add celery and sliced olives.
  • Add Miracle Whip and season with Nature's Seasoning to desired taste----season carefully as olives add quite a bit of saltiness!
  • Cover and chill for 45 minutes to meld flavors!
  • Great with burgers, brats, any summertime favorite or with a simple friut salad as a main dish!
