Dairy-Free Chile con Queso image

Dairy-Free Chile con Queso is thick, creamy, and delicious. This quick and easy dip comes together with a few common ingredients, perfect for a party!

Number Of Ingredients 10

2 large potatoes (peeled and roughly chopped)
2 large carrots (peeled and roughly chopped)
1/2 cup water
1/3 cup olive oil
1 lemon (juiced)
1/2 cup nutritional yeast flakes
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper (to taste)
2 cans 10 oz. RO*TEL® Original Diced Tomatoes and Green Chilies (drained)

Steps:

  • In a large pot of water, bring potatoes and carrots to a boil. Once fork-tender, drain water from pot, and transfer vegetables to a food processor.
  • Add water, olive oil, lemon juice, nutritional yeast flakes, garlic powder, onion powder, salt, and pepper to food processor and blend until smooth. Taste and adjust seasoning, if needed.
  • Transfer sauce to cast iron skillet and stir in RO*TEL® Original Diced Tomatoes and Green Chilies. If the mixture is too thick, add additional water one tablespoon at a time.
  • Warm on stovetop then serve, garnished with jalapeño, fresh cilantro, and lime juice.

2 cups raw cashews
1 cup water or unsweetened almond milk
1/3 cup nutritional yeast
1/4 cup chopped fresh cilantro
1 tablespoon lime juice
1 teaspoon salt
1/2 teaspoon chili powder
1 can (10 ounces) diced tomatoes and green chiles, drained
Tortilla chips and assorted vegetables

Steps:

  • Rinse cashews in cold water. Place in a large bowl; add water to cover by 3 in. Cover and let stand overnight., Drain and rinse cashews, discarding liquid. Transfer to a food processor. Add 1 cup water, nutritional yeast, cilantro, lime juice, salt and chili powder; cover and process until pureed, 3-4 minutes, scraping down sides as needed., Transfer to a small saucepan. Stir in tomatoes; heat through. Serve with tortilla chips and vegetables.

1 pound ground beef
1 pound bulk pork sausage
1 small onion, chopped
2 jalapeno peppers, seeded and finely chopped
1 garlic clove, minced
1 can (15 ounces) chili con carne (without beans)
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1 can (10 ounces) diced tomatoes and green chiles, drained
1 jar (4 ounces) diced pimientos, drained
1 package (2 pounds) Velveeta, cubed
Prepared taquitos, tortilla chips or corn chips

Steps:

  • In a large skillet, cook beef and sausage with onion, jalapenos and garlic over medium-high heat until meat is no longer pink, 5-7 minutes, crumbling meat. Using a slotted spoon, transfer to a 5-qt. slow cooker. Stir in chili, soup, tomatoes, pimientos and cheese. , Cook, covered, on low until heated through, 2-3 hours, stirring halfway through cooking. Serve warm with taquitos or chips.

Steps:

  • In a large saucepan, heat the minced onion, taco seasoning, black beans and fresh salsa. Stir constantly until thoroughly heated.

1 pound process cheese (Velveeta), cubed
2 cans (8 ounces each) tomato sauce
1 can (4 ounces) chopped green chilies
1 tablespoon Worcestershire sauce
1 to 2 teaspoons chili powder, optional
1/4 to 1/2 teaspoon garlic powder
Tortilla or corn chips

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. 1 red bell pepper, chopped
2 green bell peppers, chopped

2 (8 ounce) packages cream cheese, softened
½ teaspoon chili sauce
1 (14.5 ounce) package corn tortilla chips

Steps:

  • In a large saucepan, melt butter and saute onions and bell peppers. Saute until the onions are transparent. Add salt and pepper. Gently mix in cream cheese and chili sauce. Cook on a low heat for 15 minutes. Serve warm with chips for dipping.

  • Slice your eggplant into thin rounds just under 1/2 inch (not quite 1/4 inch). Then sprinkle both sides of the flesh with a little sea salt and arrange in a colander to help draw out some of the moisture and bitterness. Let set for 10-15 minutes. Then rinse with cool water and thoroughly pat dry between two clean towels.
  • Preheat oven to high broil and place an oven rack near the top of the oven. Arrange the dried eggplant rounds on a baking sheet lightly spritzed with non-stick spray and drizzle both sides of the eggplant with a little olive oil. Sprinkle with a very small amount of salt.
  • Broil on high for 4-5 minutes on each side, watching carefully as to not let them burn. Flip at the halfway point to ensure even cooking. Once the eggplant appears tender and both sides have golden brown color, remove from the oven and wrap loosely in foil to steam.
  • After a few minutes, unwrap and peel the eggplant skin away. It should come right off. If you pack your roasted eggplant into a 1-cup measuring cup, it will be almost 1 cup (amount as original recipe is written // adjust if altering batch size).
