This tastes about as close to the real thing as you can get :) To crush up the peppermints I usually put them in a ziploc bag and hit it with a hammer a few times... lol... it takes no time at all.

2 cups silk original soy coffee creamer, cooled for at least 8 hours
1 cup original soymilk, cooled for at least 8 hours
1/2 cup sugar
1 teaspoon mint extract
1/2 cup mini chocolate chip (optional but highly recommended!!)
1 cup broken candy canes or 1 cup peppermint candy

Steps:

  • Mix all ingredients together and beat till well combined. Put in ice cream machine for 30 minutes.
  • Pro tip: Put a Tbsp of peppermint schnapps or vodka into the mix to keep it from freezing as solid in the freezer as the soy ice cream usually does.

3 Bananas (peeled and frozen)
2 Peppermint candy canes or 8 peppermint candies (pounded to small pieces)
1 tsp Vanilla extract
2 drops of red food coloring (optional)

Steps:

  • Add peppermints, bananas, vanilla extract, and food coloring to blender.
  • Pulse frozen banana chunks until smooth.
  • Scoop and serve immediately if you enjoy soft serve style.
  • If you prefer hard scoops, place dairy free ice cream into a reusable plastic container and let it harden up for 30 minutes to an hour, before you scoop and serve.
  • Enjoy!

Dairy-free! I came up with this recipe after trying a specialty ice cream in an attempt to cut refined sugars from my diet. The result is amazingly rich and creamy, and not too sweet.

24 fluid ounces canned coconut milk
⅓ cup agave syrup, or to taste
1 teaspoon peppermint extract, or to taste
3 ounces dark chocolate, chopped into small pieces

Steps:

  • Chill all the ingredients prior to preparing to quicken the freezing process.
  • Blend coconut milk in a blender until smooth and evenly mixed; add agave syrup and peppermint extract and blend until smooth.
  • Transfer coconut milk mixture to an ice cream maker and follow manufacturer's instructions for ice cream, adding chocolate pieces when indicated. Freeze for 2 hours before serving.
