BLUE CHEESE WALNUT TOASTS
These little toasts can be served by themselves as appetizers or sometimes I like to serve them as croutons on salad.

Steps:
- Preheat the oven to 400 degrees F (200 degrees C). Brush one side of each slice of bread with melted butter, and place butter side up on a baking sheet. Bake for 7 minutes, or until lightly toasted.
- In a small bowl, stir together the blue cheese, softened butter, salt and pepper. Spread this mixture over the tops of the toasted bread slices, then sprinkle with chopped walnuts.
- Bake for 6 minutes in the preheated oven, or until the topping is melted and bubbly. Arrange on a serving tray and garnish with chopped parlsley.

- In a blender, cover and process cottage cheese until smooth. Add the sugar, milk, oil and vanilla; process until smooth. Combine the flour, baking powder and salt; add to cheese mixture. Process just until dough forms a ball (dough will be sticky). Turn onto a floured surface; knead 4-5 times. Place in a large bowl; cover and refrigerate for 30 minutes., In a large bowl, beat cream cheese and sugar until smooth. Beat in the egg yolk, lemon zest and vanilla. Turn dough onto a 17x13-in. piece of parchment. Roll into a 16x12-in. rectangle. Transfer with paper to a baking sheet., Spread cream cheese mixture lengthwise in a 3-1/2-in.-wide strip down center of dough; sprinkle with blueberries. On each long side, cut 1-in.-wide strips about 3-3/4 in. into center. Fold alternating strips at an angle across berries. Pinch ends to seal and tuck under. Beat egg white and water; brush over dough., Bake at 400° for 20-22 minutes or until golden brown. Remove to a wire rack. Combine glaze ingredients; drizzle over warm pastry. Refrigerate leftovers.

- In a small bowl, beat the cream cheese, sugar and egg yolk until smooth., Unroll one tube of crescent dough; seal seams and perforations. Press onto the bottom and up the sides of an ungreased 13-in. x 9-in. baking pan. Spread cream cheese mixture into crust. Sprinkle with blueberries., Unroll remaining crescent dough; place over filling, sealing seams. Whisk egg white and brush over top. SAVOURY BACON AND BLUE CHEESE DANISH PASTRIES
A bit of a twist on the usual sweet Danish pastries, these are my savoury Danish pastries using Danish Bacon and Danish Blue cheese - a very tasty combination! Use ready made puff pastry for speed and ease. Serve these for brunch or a light lunch with salads and pickles. These are also great to take on a picnic.

- Pre-heat the oven to 400F, Gas Mark 6, 200°C.
- Heat the oil , add the onion and saute until lightly coloured and soft.
- Add the chopped bacon and cook gently, stirring occasionally.
- When the bacon is cooked & crispy, add the paprika, mustard, Worcestershire sauce, black pepper and salts.
- Allow to cool a little then add the sour cream and crumbled blue cheese.
- Season to taste.
- Roll out the pastry thinly and cut into 8 squares.
- Put a spoonful of the mixture onto each square,and bring two corners over the top to meet each other and make a diamond shape - covering most of the filling.
- Put on a greased and lined baking tray, glaze with the beaten egg and bake in the pre-heated oven for about 20- 25 minutes, or until pastry is puffed up and golden brown.

DANISH BLUE CHEESE AND PORT SPREAD

Steps:
- Combine all ingredients except walnuts in food processor. Process, stopping occasionally to scrape down the sides, until the mixture is smooth and well blended.
- Refrigerate, covered, up to 2 weeks.
- Remove from the refrigerator about 1 hour before serving and stir in the walnuts when softened.
- (You may add the nuts right away if you're serving the spread within a few hours).
- Serve with bread, crackers or in pastry tartlets.
DANISH BLUE CHEESE TOASTS
Serve these toasts hot out of the oven. They're a real crowd-pleaser and the recipe is easy to multiply to serve lots of people. If you make three panfuls at a time, position the oven racks so that they are evenly spaced and bake all three at once.

- Position the oven racks so that the top rack is in the center of the oven or, if you are tripling the recipe, position the oven racks so they are evenly spaced, with the second rack in the center of the oven. Preheat the oven to convection roast at 500°F.
- While the oven is preheating, combine the blue cheese, mozzarella, pine nuts, garlic, and pepper in a bowl. Brush each slice of bread with olive oil and place on a rimless cookie sheet. Roast the bread on the center rack for 3 to 5 minutes, until toasted on one side. Remove the bread from the oven and turn over. Spread each slice with the cheese mixture, pressing down slightly with a fork.
- Return the bread to the oven and roast until the cheese mixture has melted. Serve immediately.
