- In a 2-1/2-qt. casserole, combine fruit and raisins. Melt butter in a small saucepan; stir in brown sugar and curry powder. Cook and stir over low heat until sugar is dissolved. Pour over fruit mixture; mix gently. Cover and bake at 400° for 30 minutes or until heated through.

MOM'S CURRIED FRUIT
This is my favorite traditional side dish for our holiday meals... it may sound a bit on the weird side... but go for it!

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Drain the fruit and arrange it in an oven-proof casserole dish. Dot the fruit with butter or margarine. Mix the sugars and the curry powder together, sprinkle over the top of the fruit.
- Bake at 400 degrees F (205 degrees C) until slightly brown, about 15 to 20 minutes.

OVEN-ROASTED FRUIT
Steps:
- Preheat the oven to 450 degrees F.
- Place the peaches and plums snugly in a single layer, cut side up, in 2 glass or porcelain oven-proof baking dishes. Sprinkle with the sugar, and then top with the raspberries. Bake for 20 to 25 minutes, until tender.
- Heat the broiler and place the fruit about 5 inches below the heat and broil for 5 to 8 minutes, until the berries release some of their juices.
- Remove from the broiler and sprinkle with orange juice. Serve warm, at room temperature, or chilled.
WARM CURRIED FRUIT
Steps:
- Drain pineapple, reserving juice. In a greased 2-qt. baking dish, combine the pineapple, cherries, pears and peaches. In a small bowl, combine the brown sugar, butter, curry, cinnamon, nutmeg and reserved juice; pour over fruit. , Cover and bake at 350° for 35-45 minutes or until heated through.

BROILED CURRIED-FLOWER

- Position an oven rack approximately 4 inches from the broiler and preheat to the high broil setting.
- Rinse and trim any green leaves from the head of the cauliflower, leaving as much of the center stalk as possible. Lay the head, stem up, on a cutting board and cut in half from top to bottom. Lay each half on its side and cut in half again. Slice each quarter pie style into wedges, so that a piece of core holds each wedge together and the outer edge thickness is not more than 3/4-inch thick. Lay the cauliflower onto a cooling rack set inside a half sheet pan and cover with aluminum foil, leaving one end open.
- Crush together the cumin, coriander, mustard, orange peel, turmeric, and fenugreek in a small ramekin using the end of a rolling pin. Place the oil in a large metal measuring cup or 1-quart saucepan and set over high heat until it shimmers. Immediately remove from the heat, add to the spice mixture, and steep for 5 minutes.
- Place the sheet pan into the oven and carefully pour in the water, seal the foil opening, and broil for 6 minutes. Remove the foil and brush the cauliflower with half of the seasoned oil. Sprinkle with 3/4 teaspoon salt. Return to the oven and broil until browned, another 5 to 10 minutes. Turn the cauliflower over and brush with the remaining oil and sprinkle with the remaining 3/4 teaspoon salt. Return to the oven and broil until browned, another 5 to 10 minutes. Serve immediately.
CURRIED FRUIT

- Stir first 3 ingredients together and set aside. Drain fruit and place in 2 quart casserole. Top with butter/sugar mixture. Bake uncovered for 1 hour at 325 F. Serve warm with ham, poultry or lamb. Best if made ahead of time and allowed to stand. Reheat in microwave.

- Drain fruit. Arrange in a 3-quart ovenproof dish. Melt butter and add brown sugar and curry powder. Stir to blend. Pour over fruit and stir to cover fruit evenly. May be made ahead to this point and refrigerated overnight. In fact, it benefits from being made in advance and letting the flavors marry. Bake one hour at 325°. Note: This recipe is very flexible. Use fruits you like best: if you like pineapple, for example, use two cans instead of one. Canned cherries (not pie filling) are very pleasant, or you can use maraschino cherries if you like them, though they "bleed" their color onto the other fruit if it is allowed to sit overnight. You can use fresh fruit in this recipe, but it is not necessary, and in fact quite a bit more work, and the fresh advantage is lost in the baking process.
