Tender and delicious fruit dessert made with 7 easy ingredients!

4 large baking apples
1/3 cup brown sugar (or coconut sugar)
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/4 cup dates (chopped)
1 tbsp unsalted butter (divided into 4 cubes)
pinch salt
1 cup boiling water

Steps:

  • Preheat oven to 375°F.
  • Using a sharp knife, core the apples to within 1/2 inch of the bottom while cutting a hole in the top of the apples for the filling. Place in baking pan.
  • In a small bowl, mix the brown sugar and spices.
  • Using a spoon, divide the spice mix equally between the cored out apples. Top spice mixture with the dates, dividing among the apples equally. Push firmly down to press the dates into the spice mixture. Top each with a cube of butter.
  • Pour boiling water around the apples in the bottom of the baking pan. Bake for 40 - 45 minutes until apples feel soft when gently squeezed but not mushy. Remove from oven.
  • Serve with a scoop of ice cream, spooning core liquid over ice cream while hot.

4-1/2 teaspoons brown sugar, divided
1 tablespoon chopped dates
1-1/2 teaspoons chopped walnuts
1/8 teaspoon ground cinnamon
1 large tart apple
1/4 cup water
Whipped cream

Steps:

  • In a small bowl, combine 1-1/2 teaspoons brown sugar, dates, walnuts and cinnamon. Peel top half of apple and remove core; place in a small baking dish. Fill with the date mixture. Combine water and remaining brown sugar; pour over apple., Cover and bake at 400° for 35-40 minutes or until apple is tender, basting occasionally. Serve warm with whipped cream.

1 apple
1 teaspoon ground cinnamon
1 pinch ground nutmeg
1 tablespoon white sugar
2 tablespoons cream cheese
1 tablespoon dried cranberries

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut the stem out of the apple and hollow out the center until it is about 1 1/2 inches wide without going through the bottom. In a small cup, stir together the cinnamon, nutmeg and sugar. Set aside half of this mixture, and mix the rest with the cream cheese and dried cranberries.
  • Sprinkle some of the reserved cinnamon sugar into the apple's cavity. Fill with the cream cheese mixture, and sprinkle the remaining cinnamon sugar on the top. Place the apple in a small baking dish.
  • Bake for 35 to 40 minutes, until the apple is tender enough to easily pierce with a fork.

Baked Apples Filled with Dates and Pecans image

When I told my friend about this baked apple dish, he said it reminded him of an old folk recipe. When he was little and had an upset tummy, his Russian grandmother would cut up an apple and leave it out on the counter for a few minutes, until it began to brown. His grandmother would then say, "Come eat, tatellah" (an affectionate way of saying, "little man" in Yiddish). Lo and behold, a few minutes later his stomach felt better. He always figured it was love at work (and, of course, it was), but years later he found out there was also some science involved: As they brown-or cook, in this case-apples release pectin, which naturally soothes the belly. Baking makes the pectin and the rest of the apple easier to digest. In this recipe, the apples are complemented by a whole host of tasty morsels and spices-toasted pecans, dates, orange zest, and cinnamon-and as they bake, they smell heavenly.

1/4 cup finely chopped toasted pecans (see page 97)
1/4 cup pitted and finely diced Medjool dates
Zest and juice of 1 orange
1/4 teaspoon ground cinnamon
1/4 teaspoon sea salt
4 baking apples, such as Pink Lady, Pippin, or Mcintosh
1 tablespoon organic butter (optional)
Unfiltered apple juice, for baking

Steps:

  • Preheat the oven to 350°F.
  • Combine the pecans, dates, orange zest and juice, cinnamon, and salt in a small bowl and stir to combine.
  • Core the apples, leaving half an inch at the bottom, and peel the top edges. Stuff the apples with the pecan filling, then dot the butter on top or melt the butter and brush it on the apple tops.
  • Put the apples in a baking pan, pour in about 1 inch of apple juice, and cover tightly with foil. Bake for 40 to 60 minutes, until the apples are tender but not mushy. Test for doneness by poking a fork into the apples; they should be tender and yield easily to pressure.
  • Serve warm, drizzled with the warm apple juice from the baking pan.
  • If you don't have dates or pecans, be creative! You can substitute currants or raisins and walnuts or almonds, and if nuts are a problem, you can simply omit them. You can use clarified butter if you like, or for a dairy-free version use coconut oil.
  • Use a melon baller to scoop out the apple core; it's important to keep the base intact.
  • Store in an airtight container in the refrigerator for 3 days.

Combining the best of two recipes gave us this delicious fall dessert. I served the stuffed apples in a waffle bowl. Serve warm with ice cream or half-and-half if desired, spooning the sauce from the baking dish over the ice cream.

⅓ cup dried cranberries
⅓ cup toasted sliced almonds
¼ cup unsalted butter, melted
2 tablespoons brown sugar
1 ½ tablespoons honey
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
4 large baking apples, cored
¼ cup water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix cranberries, almonds, butter, brown sugar, honey, cinnamon, and nutmeg together in a bowl. Fill each apple cavity evenly with the mixture and place in a baking dish. Add water to the leftover filling and pour around apples.

This easy and delicious stuffed apple recipe is a fun twist to the fall fruit that everyone loves during the colder months.

5 Jonagold apples
1/4 cup Pecans
2 Tbsp. Vanilla
1 egg
1/4 cup Brown Sugar
1 Tbsp Cinnamon
Powdered Sugar as desired

Steps:

  • Cut off the top of four apples and remove the hearts.
  • Chop the pecans and the extra apple into small pieces. In a small bowl, mix the apple and the pecans with cinnamon and sugar. Add the vanilla and the egg and whisk them for a few seconds.
  • Fill the four apples with the pecan mix.
  • Bake the apples in a preheated oven (350°F) for 30 minutes.
  • Sprinkle some powdered sugar to decorate.

1/4 cup apple juice
1/2 cup (packed) golden brown sugar
2 large egg yolks

2 teaspoons minced peeled fresh ginger
2 teaspoons all purpose flour
1 teaspoon grated lemon peel
1/2 cup almonds, toasted, finely chopped
6 pitted dates, chopped
4 large Golden Delicious apples (about 2 pounds)
Additional melted butter
Whipped cream

Steps:

  • Preheat oven to 350°F. Mix 1/4 cup butter, rum and juice in 8 x 8 x 2-inch glass baking dish. Mix sugar, egg yolks, 1 tablespoon cream, ginger, flour, lemon peel and 1 1/2 tablespoons butter in small bowl until smooth. Mix in almonds and dates.
  • Using melon baller, scoop out stem end and entire core of apples, being careful to leave bottom intact. Using vegetable peeler, remove 1-inch-wide strip of peel from around top of cavity. Pack cavities to top with almond mixture. Arrange apples in prepared dish. Brush exposed apple surfaces with additional melted butter.
  • Bake until tester inserted into apple meets little resistance, brushing occasionally with juices and covering loosely with foil if filling is browning too quickly, about 45 minutes. Serve warm with whipped cream.
