COCONUT DATE BALLS
Coconut date balls are little balls of nutrition made with dates and nuts and then coated in shredded coconut - an easy-to-make sweet & healthy vegan snack!

Steps:
- Pit the medjool dates and soak them in warm water for 10 minutes until they soften
- Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
- Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
- Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

- Use a moist variety of dates such as the Tunisian Deglet Nour or the Californian varieties. You will need about 1 1/3 pounds once they have been pitted. Blend them in the food processor, adding a little water, if necessary, by the tablespoon, to achieve a soft paste.

- Assemble the walnut-stuffed dates snugly in a single layer in the bottom of a lightly greased small container like this one.
- In a small non-stick pan, melt the butter and honey on medium-low heat. Add the coconut extract, then stir in the flour. Keep stirring until the flour turns golden brown, about 5 minutes.
- Pour the honey and flour mixture evenly on top of the dates filling in any gaps. Let the mixture set, then top with the chopped pistachios pressing lightly with your hand.
