This has been part of my OAMC rotation for a long time. Very easy to assemble. Easily doubled or tripled.

Number Of Ingredients 6

4 lbs chicken pieces (I like boneless skinless chicken breasts)
1 cup of your favorite barbecue sauce
1 teaspoon garlic powder
1 teaspoon onion powder
12 ounces Coke
salt and pepper

Steps:

  • Mix barbecue sauce, garlic powder, onion powder, coke, salt and pepper in large freezer bag.
  • Add chicken.
  • Freeze.
  • When ready to serve thaw in fridge.
  • Cook in oven or grill.
  • In oven, place in pan sprayed with Pam.
  • Cook at 350 for about 30 minutes.
  • Baste with marinade during cooking.

3/4 cup ketchup
3/4 cup blackberry jam (other jams work too!)
1/8 cup white vinegar
1 teaspoon Worcestershire sauce
2 teaspoons chili powder
1/8 teaspoon salt
1 1/2 lbs chicken pieces or 1 1/2 lbs chicken breasts

Steps:

  • For immediate cooking: Preheat oven to 350º.
  • Place all ingredients into a prepared baking dish, turn chicken to coat. Bake until chicken juices run clear - about 45-60 minutes for chicken pieces, or 20-30 minutes for chicken breasts.
  • For freezing: Place all ingredients into a 1 Gallon freezer bag. Lay flat in freezer.
  • To cook from the freezer: Thaw in the refrigerator.
  • Preheat the oven to 350º.
  • Empty the contents of the bag into a large baking dish and bake until the juices run clear *See above cooking times.

1 lb boneless skinless chicken thighs
1 small green pepper, diced (about 1 c.)
1 small yellow onion, diced (about 1 c.)
1 cup barbecue sauce
1/4 lb sharp cheddar cheese, shredded
1 (8 1/2 ounce) box Jiffy corn muffin mix
1 egg
1/3 cup milk

Steps:

  • Combine all ingredients (except cheese & corn muffin mix into gallon freezer bag.).
  • Thaw. Add chicken thighs, green pepper, onion & BBQ sauce to crockpot.
  • Cover & cook on low for 4-6 hours until chicken is thoroughly cooked and onions & peppers are soft.
  • Shred chicken m& return to crockpot. Cover with cheese.
  • In a bowl, prep corn muffin mix according to directions. Pour corn muffin mix into crockpot.
  • Add lid & cook on "high" setting for one hour or until cornbread is cooked completely.

BARBECUE CHICKEN PIZZA (JACKPOTT OAMC)

These pizzas are perfect for OAMC and you can make 2, 4 or 6 at a time kit style. I have included directions for freezing this right away but typically I make 5 to freeze and fix one right away for dinner.

3 boneless skinless chicken breasts
1 1/3 cups barbecue sauce
1 pizza crust
6 ounces provolone cheese, grated
6 ounces gouda cheese, grated
1/2 medium red onion, sliced
1/4 cup fresh cilantro, chopped

Steps:

  • Cooking Day.
  • Marinate chicken in 2/3 cup barbecue sauce for 4 hours or up to overnight. Place chicken and marinade in small baking dish. Bake at 350 degrees for 30 minutes or until chicken is cooked and remove. Let cool and chop or shred.
  • Place remaining 2/3 cup barbecue sauce in a zip loc bag. Place cheeses in a ziploc bag. Place red onion in a ziploc bag. Place chopped fresh cilantro in a ziploc bag. Place chicken in a ziploc bag. Place all of these toppings in a large gallon size freezer bag and label with item name and date.
  • Serving Day.
  • Thaw barbecue sauce by running bag under warm water. No need to thaw other toppings. Spread barbecue sauce over crust, sprinkle with cheese and arrange chicken, and onion as desired on top. Bake as directed on crust package. Sprinkle with cilantro for garnish and serve.

6 lbs boneless skinless, chicken breast halves
2 teaspoons vegetable oil
1 cup chopped onion
2 1/4 cups ketchup
1/2 cup water
1/4 cup Bourbon
2 tablespoons lime juice
1 tablespoon smoked paprika
1 tablespoon brown sugar
4 teaspoons jerk seasoning

Steps:

  • Heat oil in a saucepan over medium heat. Add onion and cook until soft.
  • Add remaining ingredients except chicken. Reduce heat and simmer for 30 minutes stirring frequently. Cool sauce.
  • While sauce cools. Divide chicken evenly between 3 one gallon freezer bags.
  • Divide sauce evenly over chicken. Seal and freeze.
  • To cook thaw one entree in refrigerator. Prepare grill and cook chicken turning every 5 minutes until cooked through.
  • Baste chicken with sauce frequently. Do not baste during the last 5 minutes of grilling.
