4 teaspoons brown sugar
1 tablespoon kosher salt
1 tablespoon chili powder
1 tablespoon rubbed sage
2 teaspoons black pepper
1 1/2 teaspoons garlic salt
1 1/2 teaspoons onion salt
1 1/2 teaspoons ground ginger
1 teaspoon ground celery salt
1 teaspoon ground mustard
1 teaspoon smoked paprika
1 teaspoon white pepper
1 teaspoon crushed rosemary
1 teaspoon ground leaf thyme
1 teaspoon hickory smoke salt
1/4 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 pint barbecue sauce (Dad's Famous Barbecue Sauce)

Steps:

  • PREHEAT oven to 300°F.
  • COMBINE the RUB ingredients in a small bowl.
  • RUB mixture evenly over ribs (save any spare seasoning rub for another use).
  • POUR one inch of apple juice (or water) into a roasting pan; WRAP ribs with foil and place into pan, foil-seam up; PLACE foil-wrapped ribs into roasting pan; BAKE between 2 1/4 - 2 1/2 hours (replenish liquid in pan as needed).
  • MEANWHILE prepare Recipe #436708: WHISK all of the SAUCE ingredients together in a medium saucepan: One 7 oz. jar Dynasty brand plum sauce, 6 tablespoons tomato paste, 1/4 cup Apipharm brand Thyme and Wild Flower honey, 1/4 cup A-1 steak sauce, 1/4 cup white vinegar, 2 tablespoons Frank's buffalo wing sauce, 2 tablespoons fresh lime juice, 1 tablespoon pineapple juice, 1 1/2 teaspoons mesquite liquid smoke flavoring, 1 teaspoon fresh lemon juice, 1 teaspoon fresh orange juice, 1 teaspoon Lea & Perrin's Worcestershire sauce, 1/2 teaspoon garlic salt, 1/2 teaspoon onion salt, 1/2 teaspoon ground allspice, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cumin, 1/4 teaspoon ground ginger, 1/4 teaspoon ground mustard; SIMMER sauce over low heat for 30 minutes, whisking occasionally; REMOVE from heat.
  • REMOVE baked ribs from oven and pour off the fat.
  • BASTE all sides of ribs with the SAUCE (Funnel extra untouched sauce into a plastic squeeze bottle or Ball canning jar then store refrigerated and capped).
  • BARBECUE/GRILLING METHOD: PREHEAT grill to medium heat; SET grate four inches above coals/heat source; BRUSH grill grate with vegetable oil; PLACE ribs on grill; BASTE ribs with sauce occasionally; TURN ribs as needed; REMOVE ribs from grill when the sauce caramelizes and edges are lightly charred, without overcooking (about 15 minutes, or just slightly longer).
  • BAKING METHOD: Preheat oven temp to 450°F Bake ribs unwrapped, top side down, for 8-10 minutes. SLIDE oven rack out carefully using oven mitts; TURN ribs over carefully with tongs; BASTE the top again with sauce; BAKE for a remainder of 8-10 minutes or until the sauce caramelizes and edges are lightly charred, without overcooking; ALLOW ribs to cool 10 minutes before serving.

1/4 cup olive oil
3 pounds chicken pieces, skin on (thighs, drumsticks, breasts)
3 pounds pork ribs on the slab
Salt and pepper to taste
1/4 cup garlic powder
Sweet & Tangy Barbecue Sauce

Steps:

  • Lightly brush your grill with olive oil and preheat it to approximately 350°F.
  • In the meantime, rinse the meat, pat it dry, and season with salt, pepper, and garlic powder. Arrange the chicken and ribs on the grill. Resist turning the meat for at least 5 minutes. This will help it sear nicely. After 5 minutes or so, turn the meat over, sear the other side for 5 more minutes. Turn again, and this time, brush the meat with the barbecue sauce. Then turn again every 5 minutes, repeating the process of brushing the meat with sauce until the chicken and ribs are cooked through and the barbecue sauce begins to caramelize and form a crust on the meat (35 to 40 minutes).
  • Serve with more barbecue sauce on the side.

2 cups packed light brown sugar
1 cup kosher salt
3/4 cup sugar
1/2 cup garlic seasoning
1/4 cup chili powder
1/4 cup lemon pepper
1/4 cup onion salt
2 tablespoons fresh coarse ground black pepper
2 tablespoons whole celery seeds
1 teaspoon crushed clove
1 tablespoon cayenne pepper
1/2 cup Mrs. Dash seasoning mix
1/4 cup salt
2 sparerib racks
1/2 cup Italian salad dressing
1/2 teaspoon fresh coarse ground black pepper
1/2 cup packed brown sugar
1 cup minced dried onion
1 (20 ounce) bottle barbecue sauce (recipe specifies Dave's but use your favorite)

Steps:

  • Mix rib rub ingredients (first 14 ingredients) and store in an airtight container.
  • The night before cooking, trim the ribs of all excess fat and place them in a large plastic bag; pour in Italian dressing to coat; seal bag well, refrigerate for 4 hours, turning occasionally; remove and wipe dressing off then sprinkle each rib with pepper then 1/4 cup of the brown sugar and 1/2 cup of the onion flakes.
  • Wrap each rib in plastic and refrigerate overnight.
  • Next day: remove from wrap and wipe sludge off ribs; generously coat front and back of ribs with rib rub and, using your hands, rub seasoning into meat and set aside.
  • Smoking takes 6 hours.
  • Prepare about 15 briquettes until they're red hot; place coals on one end of grill and place 1 pound of green hickory around coals (use water-soaked hickory chunks if you can't find freshly cut hickory).
  • Keep internal temperature of the grill at 200-225°F and add more charcoal and hickory chunks every hour as needed.
  • Place ribs bone side down but not directly over hot coals; after 3 hours, remove ribs from grill and wrap in foil; hold in covered grill at 180-200°F for 1 1/2 to 2 hours or until fork tender.
  • Build a really hot bed of coals over the entire bottom of the grill.
  • This goes fast- place ribs back on grill to add char flavor; when meat becomes bubbly it's done.
  • Slather with barbecue sauce and let the heat caramelize the sauce.
  • According to Dave, this caramelizing with the charring and slow smoking is the secret to tender, smoky ribs the way it's in the deep south.
  • Take your time, visit with friends and drink some beer while slow cooking these ribs.
