1 (6 ounce) package long grain and wild rice mix
2 ¼ cups water
1 tablespoon butter
2 teaspoons butter
½ cup diced celery
½ cup diced onion
½ cup diced green bell pepper
1 tablespoon Worcestershire sauce
2 teaspoons chili powder
1 tablespoon seafood seasoning (such as Old Bay®)
1 (15 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste with roasted garlic
2 teaspoons cornstarch
3 dashes chile-garlic sauce (such as Sriracha®), or to taste
¼ cup quick-mixing flour (such as Wondra®)
2 teaspoons cayenne pepper
salt and ground black pepper to taste
1 egg
1 cup panko bread crumbs
½ cup vegetable oil for frying, or as needed
2 (4 ounce) fillets fresh catfish - cut in half crosswise, then cut lengthwise into 1-inch wide strips

Steps:

  • Mix long grain and wild rice mix, contents of seasoning packet, water, and 1 tablespoon butter in a saucepan and place over medium heat.
  • Bring rice to a boil, reduce heat to low, and cover the pan; simmer until rice is tender and liquid has been absorbed, about 25 minutes. Set rice aside and keep warm.
  • Melt 2 teaspoons butter in a saucepan over medium-low heat. Cook and stir celery, onion, and green bell pepper until tender, about 10 minutes.
  • Mix in Worcestershire sauce, chili powder, seafood seasoning, crushed tomatoes, tomato paste with garlic, and cornstarch; stir until smoothly combined.
  • Season with chili-garlic sauce; let the sauce simmer, stirring occasionally, while you prepare the fish.
  • Whisk together flour, cayenne pepper, salt, and black pepper in a shallow bowl.
  • Beat egg in a separate bowl.
  • Place panko crumbs into another shallow bowl.
  • Heat vegetable oil in a large skillet over medium heat.
  • Dredge fish pieces in seasoned flour, and tap off excess flour.
  • Dip floured fish into beaten egg, then dredge fish in panko crumbs. Tap off excess crumbs.
  • Repeat the process, dipping each fish piece again into seasoned flour, egg, and bread crumbs.
  • Pan-fry coated fish in hot oil until golden brown, about 2 minutes per side.
  • Drain fish on a plate lined with paper towels.
  • To serve, transfer long grain and wild rice to a platter; top with fish pieces, and spoon Creole sauce over the fish and around the edge of the rice.

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.

1 pound catfish (or substitute fish, cut into bite sized pieces)
½ cup all purpose flour
½ cup cornstarch
1 tablespoon garlic powder
1 teaspoon baking powder
1 teaspoon paprika
½ teaspoon ground black pepper
½ teaspoon oregano
2 tablespoon Cajun Seasoning (see substitute below if you don't have any on-hand)
1 egg
¾ cup beer (room-temperature)
vegetable oil for frying

Steps:

  • In a medium bowl, mix together your flour, cornstarch, baking powder, and all your spices. Add your beer and egg, and mix well, until everything is incorporated. Refrigerate for at least 30 min to help everything set.
  • When ready to cook, pour vegetable oil in a fryer or deep skillet to a depth of at least 3 inches, and heat to 375°. Stir batter, and fold in catfish.
  • When oil is hot, lift catfish nuggets with tongs, draining excess batter, and place in the oil, being careful not to over-crowd the fryer.
  • Fry until browned, about 2-3 minutes.
  • Remove to paper towels to drain excess oil, and repeat with remaining fish.
  • Serve warm with chips. To keep warm while you fry the rest of the fish, place on a baking sheet and keep in a low, warmed oven (150°-200°)

1 quart peanut oil
1 cup stone-ground fine cornmeal
1 cup all purpose flour
1 teaspoon seafood seasoning (recommended: Old Bay)
1/2 teaspoon kosher salt
1/4 teaspoon hot smoked paprika
1/4 teaspoon freshly ground black pepper
6 (7 to 9-ounce) US farm-raised catfish fillets, rinsed and thoroughly patted dry
3/4 cup low-fat buttermilk

Steps:

  • Heat the peanut oil in a 5-quart Dutch oven over high heat until it reaches 350 degrees F on a deep-fry thermometer. Adjust the heat to maintain the temperature.
  • Whisk the cornmeal and flour together in a shallow dish. Combine the seafood seasoning, kosher salt, paprika, and pepper in a small bowl. Season the catfish fillets evenly on both sides with the spice mixture. Pour the buttermilk into another shallow dish. Dip each fillet into the buttermilk, flip once to coat both sides, hold over the pan and allow the excess to drip off. Coat both sides of the fillets in the cornmeal mixture. Set the coated fillets on a cooling rack and let rest for 5 minutes.
  • Gently add the fillets, 2 at a time, to the hot oil and fry until golden brown, about 5 to 6 minutes. Remove the fried fillets to a cooling rack set over a newspaper-lined half sheet pan. Repeat method with remaining fillets. Arrange the catfish on a serving platter and serve immediately.

1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1 tablespoon kosher salt
1/2 teaspoon cayenne pepper
1 (12-ounce) bottle amber beer
4 (6-ounce) catfish fillets
1 tablespoon salt
1 tablespoon cracked black pepper
2 tablespoons granulated garlic
1 lemon, juiced

Steps:

  • Preheat a deep-fryer to 350 degrees F.
  • In a large bowl, add the flour, cornmeal, baking powder, salt and cayenne and whisk to combine. Whisk in the beer, being sure to remove any lumps.
  • Cut the catfish fillets in half lengthwise to make 2 strips. If desired, cut into bite-sized pieces. In a small bowl add the salt, pepper and granulated garlic. Season the fillets with some of the salt mixture. Reserve the remaining salt mixture for another use.
  • Dip each strip in the beer batter and add to the fryer, a few at a time, moving them around so they don't stick. Fry until brown and crispy, about 3 to 4 minutes. Remove from the fryer to a serving platter. Repeat with the remaining fillets and season the fish with lemon juice.

1 lb catfish nuggets
1 1/2 cups Bisquick
1 1/2 cups corn flakes, crushed
1 1/2 teaspoons parsley flakes
1 1/2 teaspoons all purpose Greek seasoning
1 1/2 teaspoons Old Bay Seasoning
1 1/2 teaspoons dill weed
1 teaspoon salt
1 teaspoon black pepper
1 cup buttermilk
1 egg

Steps:

  • Preheat oven or deep fryer to 350'.
  • If using in the oven, spray baking sheet with Pam and add 1Tbs. Oil. Spread evenly.
  • In a bowl combine buttermilk and egg. Mix well and set aside.
  • In another bowl add bisquick, set aside.
  • In another bowl add crushed cornflakes,all purpose greek seasoning,Old Bay Seasoning,dillweed, salt & pepper. Blend to mix.
  • Place catfish nuggets in the buttermilk mixture and let set 5 minutes.
  • Dip in bisquick than into the corn flake mixture and place on greased baking sheet or in a deep fryer.
  • If baking, bake for 30 minutes or until fish flakes.
  • If deep frying, fry 5 to 8 minutes or until crispy brown and fish flakes.
  • Serve with tarter sauce.

Spaghetti in a hearty tomato sauce accompanies this tender, flaky fish, coated in crisp cornmeal in this Southern dish. It's often paired with potato salad, and linked to the Deep South and the Midwest. But the recipe developer Millie Peartree grew up eating it in New York, where her mother, Millie Bell, who is from Savannah, Ga., would serve it as part of Friday night fish fries. This recipe calls for catfish, but whiting or flounder would also work well. Just make sure to look for a cornmeal that's not extra fine for the crispiest fish.

Steps:

  • Marinate the catfish: In a medium bowl, mix together buttermilk, mustard, salt and pepper. Add the catfish strips, turning to coat each side, and place in the refrigerator to marinate as you prepare the sauce.
  • Prepare the pasta sauce: In a large pot set over medium-high, heat olive oil until it shimmers. Add ground meat, onion, green pepper, seasoned salt and black pepper. Cook until the meat is browned and cooked through and the vegetables have softened, about 5 to 7 minutes. Add garlic and cook until fragrant, 30 seconds.
  • Add tomato sauce, crushed tomatoes, stock, sugar, tomato paste, Worcestershire sauce, Italian seasoning, parsley, basil and red-pepper flakes. Continue to simmer until sauce has thickened, about 20 to 30 minutes.
  • While the sauce is cooking, bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente.
  • As pasta cooks, prepare the fish for frying: As sauce cooks, heat the vegetable oil over medium-high in a large (12-inch) cast-iron skillet until it reaches 365 degrees on an instant-read thermometer.
