1 (20 ounce) package chocolate sandwich cookies with creme filling
2 cups dry pancake mix
1 cup water
½ cup confectioners' sugar for dusting

Steps:

  • Heat oil in a deep-fryer to 375 degrees F (190 degrees C). Mix pancake mix with water according to package directions.
  • When the oil comes up to temperature, dip 4 or 5 cookies at a time into the batter, and fry in hot oil, turning once, until golden brown. Remove from oil using tongs, and drain on paper towels. Sprinkle fried cookies with confectioners' sugar and serve.

1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter
1 1/2 cups brown sugar
1/2 cup sugar
1/2 cup pasteurized eggs
1 teaspoon vanilla extract
2 cups (12-ounce package) chocolate chips
2 cups all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1 large egg (or 1/4 cup pasteurized eggs)
1/2 cup seltzer water or club soda, plus more if needed
Vegetable oil, for frying

Steps:

  • For the dough: Put the flour, baking soda, and salt into a bowl and stir it with a whisk to combine. Set aside. Using a hand or stand mixer, beat the butter until it is lighter in color. Slowly add in sugars and beat until it is light and fluffy. Add the eggs 1 at a time and beat until they are incorporated. Stir in the vanilla. Add the flour mixture using the low speed, then stir in the chocolate chips. Set aside.
  • To form the cookies: Use 2 teaspoons of the dough and roll it into balls. Put the balls onto a cookie sheet. When they are all made, put them into the freezer for about 30 minutes to firm up.
  • For the batter: In a large bowl, whisk together the flour, sugar, and baking powder. Add the egg and half the seltzer and whisk well to combine. Add more seltzer as needed until the batter is thick and the consistency of heavy cream.
  • To make the cookies: Heat the oil in a deep-fat fryer to 350 degrees F.
  • Dip the chilled dough balls in the batter and carefully place them into the hot oil. Fry a few at a time, turning them over from time to time, until they are golden brown, about 3 minutes total. Drain on paper towels and serve while still warm.

1/2 cup brown sugar (packed)
1 large egg
1 teaspoon vanilla
1 cup all-purpose flour
1 cup chocolate chips
1 1/4 cups all-purpose flour

1/4 cup granulated sugar
2 teaspoons vegetable oil
1 cup milk
3 cups vegetable oil
chocolate sauce (or caramel sauce)

Steps:

  • Line a medium baking sheet with parchment or wax paper, and a plate with paper towels.
  • In a medium bowl, cream butter with sugar, egg and vanilla. Mix in flour and chocolate chips until blended.
  • Scoop into 1 ½ inch (4 cm) balls and place onto prepared baking sheet.
  • Freeze the balls for 15-30 minutes while you make the batter.
  • In a medium bowl, mix together flour, baking powder, salt and sugar.
  • Add milk and oil and whisk until smooth.
  • Add 2 inches of oil to a medium saucepan or deep fryer and heat to 375°F (191°C).
  • Dip four cookie balls into batter and gently drop into hot oil. Fry 1-2 minutes per side until golden and remove to prepared plate. Repeat for remaining balls in batches of 2-3.
  • Drizzle with optional topping and dust with powdered sugar before serving.

This is my take on a classic cookie. My Grandmother makes the best chocolate chip cookies ever-lots of chocolate and an extra pinch of salt. The salty-sweet combination is absolute perfection. I love the gooey decadence of melted chocolate, that's why I loaded this dough with 3 cups chocolate chips. And as a nod to Grandma, I finish the dish with a generous sprinkle of fleur de sel. Trust me, dessert doesn't get any better than this. It is divine!

2 1/3 cups all-purpose flour
1 1/4 teaspoon baking soda
1/4 teaspoon salt
2 sticks butter, at room temperature
1/2 cup granulated sugar
1 cup packed brown sugar

2 teaspoons pure vanilla extract
3 cups semisweet chocolate chips
2 cups all-purpose flour
1 tablespoon granulated sugar

1 1/2 to 1 3/4 cup seltzer water, plus more, if needed
Canola oil, for frying
Fleur de sel, for sprinkling

Steps:

  • For the cookie dough: Add the flour, baking soda and salt to a large bowl. Using a whisk, stir the mixture to incorporate all the ingredients.
  • Cream the butter in a stand mixer until it lightens up. Slowly add in the sugars and continue to cream until the mixture is light and fluffy. Add the eggs 1 at a time, beating well after each egg. Stir in the vanilla. On low speed, add the flour mixture. Once incorporated, fold in the chocolate chips by hand.
  • Take 2 teaspoons dough, or if using a spoon, take a good scoop and roll it into balls. I use my hands, it's faster and a whole lot easier. Put the cookie dough balls onto a baking sheet and pop them into the freezer until firm, about 30 minutes. Chilling the dough will help the batter stick to the cookie balls.
  • For the batter: Combine the flour, sugar and baking powder in a large bowl. Take a whisk and give the mixture a few swirls to incorporate the ingredients and break up any lumps. Whisk in the egg and the seltzer, making sure to combine well. You want the batter to have the consistency of heavy cream, so add more seltzer, if needed, to achieve this.
  • In a large, heavy-bottomed stockpot, heat the oil to 350 degrees F.
  • Working in batches, add 3 chilled dough balls to the batter and turn to coat completely. Using a fork or slotted spoon, remove each cookie dough ball from the batter, letting the excess batter drip back into the bowl, then very carefully slip it into the hot oil and repeat.
  • Fry no more than 3 at a time, since you do not want the temperature of the oil to drop. Using a slotted spoon, turn them over a few times until they are golden brown, about 3 minutes total. Remove the crispy cookie dough balls from the oil to a paper towel-lined plate to drain. Sprinkle with a generous pinch of fleur de sel and serve warm. Enjoy!

¼ cup white sugar
2 ½ tablespoons shortening
2 ½ tablespoons brandy
2 teaspoons anise seed
¼ teaspoon salt
2 cups all-purpose flour
1 cup vegetable oil for frying
⅓ cup confectioners' sugar for decoration

Steps:

  • In a large bowl beat together eggs and sugar until thick and light colored. Then beat in shortening, brandy, anise seeds (optional) and salt. Beat in flour gradually.
  • On a floured surface, knead dough into a smooth ball. Divide ball into two equal pieces, wrap in waxed paper and chill in refrigerator for at least two hours.
  • Roll one piece of dough into a rectangle approximately 12 x 15 inches. (The other piece of dough should be left in refrigerator until ready to be rolled.) Using pastry wheel, cut dough into strips 6 x 1 inch.
  • Make a vertical slit in top 1/3 of the strip and draw the bottom end of it through OR tie a knot in the center. Repeat with remaining dough and set aside.
  • Heat oil in a deep frying pan to 360 degrees F (185 degrees C). Deep fry strips until golden brown. Drain on paper towels, cool, and sprinkle heavily with confectioners' sugar.

I liked it so much, I wanted to post it on here and share it with everybody! If you don't want raw eggs in your cookie dough you can use egg beaters as an alternative. Chebureki are the southern Ukrainian branch of the global family of empanadas, potstickers, pasties and salteñas - dough pockets filled with meat and deep-fried until golden and juicy. A blistered, chewy crust is the sign of a really good cheburek according to Olga Koutseridi, who grew up in Mariupol, Ukraine, and adapted this recipe for her home kitchen in Austin, Texas. The dough for this recipe is relatively stiff, which means it will take a bit of time to mix it by hand. You could also use a stand mixer, but your mixer may struggle. After the first few, these pies become much easier to assemble, and you can roll and fill the next one while one is frying. It is best to fry one or two at a time, which helps control the oil temperature and ensures the freshest chebureki. They should be eaten within just a few minutes of their emergence from the fryer.

1 medium onion, any kind (except sweet), coarsely chopped
4 ounces ground beef
4 ounces ground pork
2 teaspoons coarsely ground black pepper
1 1/2 teaspoons salt
8 ounces plain kefir, plus more as needed
4 cups/510 grams all-purpose flour, plus more for dusting (if needed)
1 teaspoon fine salt
1 cup/240 milliliters plus 1 tablespoon cold water
Peanut oil or refined sunflower oil, for frying (about 8 cups)

Steps:

  • Make the meat filling: Place the chopped onion in a food processor and process until it is very fine and has started to release moisture. Transfer the onion to a large bowl. Add the beef, pork, black pepper and salt, and mix very well. Gradually add kefir to the mixture and mix it into the meat using a spoon. The consistency should be pourable and almost soupy, not stiff. If necessary, add more kefir, 1 tablespoon at a time, to achieve the desired consistency. Cover mixture and place it in the refrigerator to chill for 1 hour.
  • Make the dough: Place 3 cups of the flour in a large bowl. Add the fine salt and mix with a fork. Add the water and mix until combined. Sprinkle a work surface with some of the remaining flour and knead in the rest of the flour little by little (you may not need all of it), until the dough is pliable and not sticky, about 15 minutes. (The dough should spring back when you make a slight indent with your finger.) Shape the dough into a ball, place in a bowl, cover tightly with plastic wrap and let rest for at least 1 hour.
  • Set up your frying station: Pour 2 inches of oil into a wok or a Dutch oven. Line a sheet pan with a wire rack and some paper towels to absorb any excess oil from the finished chebureki. Heat the oil over medium-high until the temperature reaches between 350 and 375 degrees.
  • Divide the rested dough into 12 pieces and roll them into balls. (The dough should be pliable and shouldn't need much flour.) Flatten the pieces into disks and cover with plastic wrap so they don't dry out. Working with one piece at a time, lightly dust the counter with flour and roll out the dough into a very thin round about 8 inches in diameter. (You should be able to read text through the dough.)
  • Place 3 level tablespoons of filling on one side of the round and spread it into a thin half-moon, leaving a 1-inch border around the filling. Make sure not to add too much filling! Overfilling increases the risk of leakage during frying.
  • Fill a small bowl with water, and using your finger, dampen the edges of the whole round to help seal the cheburek. Fold the dough over the side with the filling, trying to make sure there are no air bubbles between the filling and the dough to help decrease the chance of bursting. Press the edges to seal tightly, then seal them completely with a fork. Use a pasta wheel or paring knife to trim off any uneven edges, if you like.
  • Once the oil is at 350 degrees, carefully lower the shaped cheburek into the oil and fry until the dough is golden brown and bubbly, about 2 minutes per side. Using tongs or a large slotted spatula, transfer the fried cheburek to the rack. Repeat shaping, filling and frying with the remaining dough and filling.
  • Let the cheburek cool slightly, then dig in! These are best eaten hot. Enjoy with a glass of ryazhanka or kefir.
