FRIED FLOUNDER WITH TARTAR SAUCE
This is my family's method of making fried flounder. It is tried and true, and I have made only one change to it since the 1970s: I add a little mustard to the egg wash mix, which I learned in Louisiana. It adds a ton of flavor. You'll also see the homemade fries on the plate. If you want to make them, I followed this recipe from The Splendid Table.

- For the tartar sauce, mix everything in a bowl and set it in the fridge. Salt the fish lightly on both sides and set aside.
- Set up a breading station. You will want plates or shallow bowls or somesuch. The first has the flour in it -- and if you want more seasoning than I am suggesting in this recipe, this is where you add it -- then another basin with the eggs, milk and mustard all beaten together, then the final basin with the breadcrumbs.
- Dredge the flounder in the flour first, pressing it into the fish and making sure you get it totally covered. Now sweep the fillet through the egg wash, again making sure you get it totally coated. Finally, set it in the breadcrumbs and press them in to make a good coating. Set each fillet on a plate or tray in the fridge and let it rest 1 hour, and up to all day.
- When you are ready to fry, pour in enough oil to get to a depth of about 1 inch in a large frying pan. If you happen to me making the fries to go with this, make them first and hold them in the oven. Heat the oil over high heat. Set a rack over a baking sheet and put that in the oven. Set the oven to "warm."
- When the oil hits 350F, fry your fish, right from the fridge. This works because they are very thin, and you want a pretty golden crust without overcooking the fish. Room temperature flounder fried this way will overcook. It take about 3 to 5 minutes per side to get golden brown. Move each finished fillet to the rack in the oven. When they're all done, serve it up with the tartar sauce.

PAN-FRIED FLOUNDER

- Wash fillets in cold water and pat dry. Sprinkle with salt and pepper. Dredge fillets in flour. Place oil and 2 tablespoons butter in flat, heavy-bottomed skillet and heat on medium-high until butter melts. Keeping heat at medium-high, cook fish on 1 side about 3 minutes (more or less, depending on size of fillets), until deep brown and crispy. Turn fish and cook on second side, about 3 minutes. Turn fish only once.
- Remove fish to serving platter. Turn off heat. Into hot skillet, whisk in remaining 1 tablespoon butter. Add lemon juice. Pour in capers, liquid and all. Whisk. Pour thin sauce over fish fillets. serve at once.
DEEP FRIED FLOUNDER
Whether you're thinking southern fish fry or English fish n' chips, this fried flounder is the perfect choice. Cayenne, thyme and garlic give a flavorful kick to the golden breading. Get some tartar sauce and you're set!

- Heat the oil to 375 degrees F in a deep, heavy skillet or deep fryer. Meanwhile, mix together the cayenne, garlic powder, onion powder, thyme, salt, black pepper, and flour in a shallow dish. Place the milk in another shallow dish. Dip the flounder fillets first in the milk, letting any excess drip off. Then dredge in the seasoned flour mixture, coating the fillets completely. Add the fish to the hot oil, in batches if needed) and cook until they start to float and are lightly browned. Remove the fish with a slotted spoon to paper toweling to drain. Serve hot with tartar sauce or other dipping sauces.

CRISPY DEEP-FRIED FLOUNDER
Steps:
- Gather the ingredients. Heat the oven to 200 F, to keep fried fish warm while frying subsequent batches.
- Place the flounder fillets in a shallow baking dish; pour in enough milk or buttermilk to cover the fillets. Set aside.
- In a mixing bowl, combine the pancake mix or baking mix and cornmeal; stir to blend.
- In a deep heavy skillet or sauté pan, heat about 1 1/2 to 2 inches of oil to 365 F (185 C). If you don't have a deep-fry thermometer, toss a 1-inch cube of bread into the hot oil. It should turn golden brown in 1 minute.
- Drain the fish using a colander.
- Dredge each piece in the baking mix and cornmeal mixture, coating the fillets thoroughly on both sides. Shake off any excess.
- Add the fish fillets to hot oil and fry.
- Turn once after about 2 minutes, until golden brown and crisp on both sides (about 4 minutes total). Fry a few at a time to keep the oil temperature from dropping. If the temperature drops significantly and does not recover quickly, the coating will absorb more oil.
- Drain the flounder fillets on paper towels and sprinkle lightly with salt, to taste.
- Transfer the fried fish to a rack in a baking pan and keep warm in the preheated oven for up to 20 minutes, if desired.
- Serve fried flounder hot, garnished with lemon wedges and parsley sprigs, if desired.

EASY FRIED FLOUNDER RECIPE
Crispy golden brown fried flounder is a restaurant-quality dish that the whole family will love. Lightly breaded with seasoned panko bread crumbs and quick fried, the sweet, flaky filet of flounder will almost melt in your mouth.

- Dip the flounder fillets in the egg wash (beaten eggs with water or milk) and allow them to drain the excess egg wash off for a few seconds.
- Dredge the flounder in the seasoned bread crumbs, completely coating the fillets.
- Heat a deep frying pan with enough oil to cover the flounder while its cooking. About an inch depth of oil should be enough. Too little oil and the fish will stick ot the pan. It should be able to float as it cooks.Gently press the flounder down to get the top of the fish cooked properly. If you are able to turn the flounder without breaking it, go for it. But remember the flounder is a very delicate fish.
- When the flounder is floating (about 6-8 minutes depending on the thickness of the fillets) it should be fully cooked.
- Allow the flounder to drain on paper towels briefly, then serve and enjoy!

FRIED FLOUNDER IN BEER BATTER

- Cut the fillets into three-by-four-inch pieces. Sprinkle with lemon juice and season with salt and pepper. Set aside.
- Combine the egg yolks, beer, flour and baking powder. Mix thoroughly.
- Whip the egg whites until stiff.
- Gently fold the egg whites into the batter until well mixed in.
- Heat the oil to 375 degrees (or to almost smoking point). Put the fish into the batter and shake off excess. Fry a few pieces at a time, turning with a slotted spoon when they rise to the surface. Drain on paper towels and keep warm until ready to serve.
ENGLISH-STYLE BREADED FLOUNDER FILLETS

- Scatter the flour over the bottom of a large pan.
- In a bowl, beat the egg with 1 teaspoon of the oil, the water, Worcestershire sauce, salt and pepper.
- In a shallow pan blend the bread crumbs and thyme well.
- Dredge the fish pieces thoroughly in the flour. Shake off the excess. Dip them into the egg mixture and let the excess drain off. Then coat them with the bread-crumb mixture on all sides. Make sure they are evenly coated.
- In a nonstick skillet, heat 1 tablespoon of oil over medium heat. Add a few pieces of the fish at a time in a single layer without crowding. Cook over high heat for about 30 seconds or until they are golden brown on one side. Turn the pieces carefully and cook the second side over medium- high heat for about 1 minute or until golden brown. Carefully transfer the fillets to a warm platter and keep warm. Cook the remaining fish pieces in the same manner, adding the remaining oil.
- When all of the fillets are cooked, wipe out the pan with a paper towel and add the butter. Cook over medium high heat until it begins to brown. Add the lemon juice and blend well. Pour the mixture over the fish and serve immediately.
