2 chicken breasts
2 slices ham (large slice)
1/4 teaspoon pepper
1/4 teaspoon five-spice powder
1 garlic clove, crushed
2 spring roll wrappers
flour, for dusting
1 egg
2 tablespoons milk
oil, for deep frying

Steps:

  • Place one chicken breast between plastic wrap or freezer bags and bash it until it is nice and thin -- repeat with the other breast.
  • Mix the pepper, five spice and crushed garlic.
  • Sprinkle the mixture over both breasts.
  • Roll up one slice of ham and place it on the chicken breast.
  • Roll the chicken up firmly and fold the ends under.
  • Whisk the egg and milk together.
  • Coat the chicken with flour (easiest in a freezer bag) shake off the excess.
  • Dip in the egg mixture -- shake of the excess.This step will stop the chicken from separating from the spring roll wrapper.
  • Place the chicken "roll" diagonally across the spring roll wrapper. Brush some of the egg mixture on the ends of the wrapper.
  • Roll the chicken, tucking the ends in as you roll.
  • Deep fry in oil until golden brown and cooked through. Don't have the oil too hot -- otherwise the spring roll wrappers will brown before the chicken is cooked.
  • Drain on paper towels and then cut on the diagonal.
  • Serve on a bed of lettuce with dipping sauces.
  • Serve with your favourite sauce.

1 scallion steak
3 eggs
3 slices white bread
2 teaspoons flour
1/2 teaspoon salt
oil for deep frying

Steps:

  • 1. Mince ham and scallion. Beat eggs. Trim off bread crusts break bread into soft crumbs. Mix ingredients together, blending in flour and salt.2. Form mixture into walnut-size balls. Meanwhile, heat oil.3. Add meat balls to oil a few at a time and deep-fry until golden. Drain on paper toweling. Serve hot.VARIATION: After step 2, roll ham-and-egg balls in rice flour noodles broken in 1/2-inch lengths. (When deep-fried, the noodles will curl up.)

2 cups chopped country ham
1/2 head diced cabbage
1 onion, diced
1 carrot, diced
2 cups grated swiss cheese
1 1/2 minced garlic cloves
3 tablespoons fresh tarragon
1/2 cup diced pepperoncini pepper
12 egg roll wraps
4 cups peanut oil
1 cup Dijon mustard
1 cup red pepper jelly

Steps:

  • mix everything but wrappers, oil mustard, and jelly.
  • spoon into the wrappers.
  • moisten the edges of each wrapper with water.
  • carefully tuck edges of wrapper under.
  • roll wrapper tightly and press edges.
  • drop eggrolls into hot oil fry about five minutes.
  • serve with mustard and jelly as dippers.
