BAKED CUCUMBER CHIPS
Easy to make vegetable chips are a healthier keto snack. Baking the cucumbers keeps them low in calories which makes them almost guilt-free.

Steps:
- Slice cucumber very thin. Use a mandoline slicer for best results.
- Remove excess moisture from slices using a paper towel.
- Put cucumber slices in a large bowl and toss with oil, vinegar, and salt.
- For dehydrator: Place slices on trays and dry at 125-135°F for 10-12 hours or until crispy.For oven: Place slices on parchment lined baking tray. Dry at 175°F for 3-4 hours or until crispy.
- Allow slices to cool before serving.

How to make low carb cucumber chips in dehydrator or in the oven

Steps:
- Slice cucumbers very thin, trying to get consistent thickness so they will dry evenly. Use a mandolin slicer if available for best results. If you don't have a mandolin, use a very sharp knife.
- Pat cucumber slices dry with a paper towel to remove as much moisture as possible. Place cucumbers in fairly large bowl and add the rest of the ingredients. Toss together gently but thoroughly to combine.
- For dehydrator: Place cucumber slices on trays and dry at 135°F for 12 hours or until they reach your desired crispiness (start checking them at 10 hours).For oven: Place slices on parchment lined baking tray. Dry at 175°F for 3-4 hours, checking every hour to ensure they don't brown around the edges or burn. Turn them over half way through. Allow slices to cool before serving.

- HOW-TO For all of the flavor combinations, I dried enough cucumbers for one or two servings (1/2 a pound of cucumber); feel free to adjust the recipes to make more. The process is the same: 1. Slice the cucumbers thin with either a sharp knife or a food mandolin. I sliced mine with a sharp knife to about 1/8 of an inch thick. 2. Toss your sliced cucumbers in your spice mix. 3. Place your sliced, spiced cucumbers in a single layer in your food dehydrator or (like I did) on a rack placed over a cookie sheet. Cucumbers seem to stick more than other foods I've dried, so make sure you oil the rack lightly. 4. Dry for several hours in the oven at 170F (or the lowest setting of your oven), or however long your food dehydrator takes to dry foods. 5. Eat as chips, or save to sprinkle over savory stews, salads, or toss into soups.

- Prepare your cucumbers and salt. It is best to pick cucumbers of the same size for the dehydration to be equal.
- Using a meat slicer, mandolin, knife, or vegetable peeler, slice your cucumbers into approximately half a centimeter or quarter of an inch thickness.
- Layer all of the slices one by one on dehydrator racks, ensuring the slices are not overlapping.
- Slightly salt the layered slices and let them rest for 10 to 15 minutes. This will help your cucumbers get additional moisture out as well.
- Using a kitchen towel, lightly tapping your slices, soaks up all of the moisture your cucumber slices have produced. Keep drying them until your towels do not soak up the moisture anymore.
- Place your dehydrator trays onto the dehydrator machine, cover with the lid, and set on the lowest temperature, in my case 70 celsius or 160 Fahrenheit, for approximately 5 to 7 hours, depending on the thickness of your slices.
