Cream Cheese Jiffy Cornbread image

With cornbread mix, cream cheese and creamed corn, this cornbread recipe is a quick and easy family favorite.

25.5 ounces Jiffy Corn Muffin Mix (3 (8.5 ounce boxes) )
8 ounce cream cheese (softened)
14.5 ounce creamed corn
3 large eggs
1/2 cup milk (2%)

Steps:

  • Preheat oven to 400°F. Grease a 9 x 13 shallow baking pan.
  • Place cream cheese in a microwave safe bowl and microwave on High for 15 seconds. Stir. Repeat until cream cheese can be stirred smooth and has the consistency of peanut butter.
  • In a large bowl, mix the cream cheese, corn and eggs. Stir until eggs are well incorporated.
  • Add corn bread mix and milk to cream cheese mixture. Stir until combined. Batter will have small lumps.
  • Transfer batter to prepared baking pan and let rest for 5 minutes.
  • Bake on center rack of preheated oven for 30 - 35 minutes, until center is firm when touched lightly and knife inserted in center comes out clean.

Creamy Cheesy Cornbread is a delicious cross between cornbread and corn casserole that you can eat with your hands! It's the perfect side dish for a barbeque!

4 ounces Challenge Cream Cheese, room temperature
1/2 cup milk
2 eggs
1 teaspoon seasoned salt
1 (15 ounce) can corn, drained
1 (15 ounce) can creamed corn
1 (8.5 ounce) box corn bread mix
2 cups grated cheddar cheese

Steps:

  • Preheat oven to 375°F. Line a 9×13 baking dish with foil and coat with nonstick spray. Set aside.
  • In the bowl of your stand mixer fitted with the paddle attachment mix cream cheese until smooth on medium speed. Add in the milk, eggs, and seasoned salt and continue mixing until combined, scraping the sides of the bowl as necessary.
  • Turn mixer to low and mix in the corn and creamed corn. Add the in the corn bread mix and mix until combined. Stir in 1 cup of the grated cheese.
  • Pour batter into the prepared pan and sprinkle with remaining cheese.
  • Bake for 20-25 minutes, or until center is set.
  • Allow the cornbread to cool completely and cut into pieces.

Steps:

  • Preheat oven to 350 degrees F. Grease and flour 8x8-inch baking dish.
  • Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Mix eggs, milk, and melted butter. Stir egg mixture into flour mixture just until moistened. Stir in corn and cheese. Pour into prepared baking dish.
  • Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes then cut into 2-inch squares. Serve warm with Country Crock® Honey Butter Spread.

After experimenting with many versions of cornbread recipes, I've finally created one that has gone down a treat with friends and family. A moist cornbread made using wholegrain cornmeal, organic soya flour, organic oat flour, and cream cheese. This cornbread recipe is high in protein, fiber, and low in sugar. Enjoy!

8 ounces stone-ground yellow cornmeal
7 ounces organic soy flour
2 ounces organic oat flour
3 1/2 teaspoons salt
2 tablespoons baking powder
1/2 cup Splenda sugar substitute
2 ounces low-fat cream cheese
350 ml milk
5 tablespoons mazola corn oil
2 large brown eggs

Steps:

  • Preheat oven at 410 degrees F.
  • Line 9x12 inch baking tray with grease-proof paper (note: applying a thin layer of corn oil on the paper makes it easier to peel off the bread once baked).
  • Mix together all dry ingredients.
  • In a separate bowl, beat the eggs until fluffy, add milk, oil. Add to dry mixture. The mixed batter should be moist and of medium consistency.
  • Cover dish with a layer of batter. Cut the cream cheese in cubes and sprinkle over first layer of batter. Add remaining batter to cover the cream cheese.
  • Place in baking tray. Bake for 20 minutes until slightly golden brown.
  • Cool, cut the cornbread into square pieces, and serve with tea.
