Roast Beef and Cheese Roll Ups image

Deli sliced roast beef with ricotta and mozzarella cheese filling. Yum yum! Make sure the roast beef is not sliced too thin so that the slices won't fall apart.

1 pint ricotta cheese
1 egg
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons Italian-style seasoning
1 pound shredded mozzarella cheese, divided
1 (16 ounce) jar spaghetti sauce
1 pound deli sliced roast beef

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine the ricotta cheese, egg, garlic powder, onion powder, Italian-style seasoning and half the mozzarella cheese and mix well. Place a spoonful of mixture onto a slice of roast beef and roll. Repeat with remaining beef.
  • Spread 1/2 cup of the spaghetti sauce on the bottom of a 9x13 inch casserole dish. Place the beef rolls in the baking dish seam side down. Pour the remaining sauce over the beef rolls.
  • Bake covered at 375 degrees F (190 degrees C) for 40 minutes, add the remaining mozzarella cheese over the top and bake for an additional 3 minutes, uncovered, until cheese is melted.

1-1/2 pounds boneless beef round steak
1/4 cup chopped onion
1/4 cup butter, melted
2 cups fresh bread cubes
1/2 cup chopped celery
1 tablespoon dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon pepper
1 cup all-purpose flour
2 tablespoons canola oil
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/3 cups water
3/4 teaspoon browning sauce, optional

Steps:

  • Flatten steak to 1/3-in. thickness. Cut into six pieces. In a small bowl, combine the next eight ingredients. Place 1/3 cup on each piece of steak; roll up and fasten with a toothpick. Roll in flour. , In a large skillet, brown roll-ups in oil. In a small bowl, combine the soup, water and browning sauce if desired; pour over roll-ups. Cover and simmer for 2 hours or until meat is tender, turning occasionally.

Beef Roll Ups . Delicious tender pieces of beef wrapped around cheese and vegetables and coated in a lovely Balsamic Glaze. A really quick and easy recipe too

8 thin sliced sirloin steaks
2 - 3 tbsp Worcestershire sauce
1 TBS garlic powder
1 TBS onion powder
1 tbsp olive oil
1 orange red and 1 yellow peppers
1 cup of Gruyere cheese
1 sliced medium onion
2 tsp butter
2 tbsp finely chopped shallots
1/4 cup balsamic vinegar
2 tbsp brown sugar
1/4 cup beef broth

Steps:

  • Lay out the sirloin steaks, if they are a little thick, use a meat mallet and bash them a little.
  • Add the seasonings, olive oil and Worcestershire sauce to the meat, (mix into the meat well on both sides) then set aside and prepare the filling.
  • Cut the peppers and onion to matchstick size and set aside.
  • In a pan, melt the butter then add the shallots and cook until translucent.
  • Add the remaining ingredients and stir, bringing it to a boil. Once boiling, reduce the heat a little and allow the sauce to reduce in volume to half the original amount. As this reduction takes place, you will notice the sauce becomes thicker and a little sticky. Once reduced, transfer to a bowl and set aside.
  • Using the same pan from the sauce, lightly saute the peppers with a drop of olive oil for 1 minute and remove from heat.
  • Lay the rolls flat, then in the centre of each, place the peppers and onion, and divide the cheese between the 8 rolls. Season with salt and pepper if you wish.
  • Roll them tightly then using a toothpick, secure the end so the rolls don't come apart.
  • Heat a large fry pan (you don't need any oil as there is oil on the meat already), and when hot enough, place the beef rolls in the pan, seam side down. As soon as they are sealed (30 - 60 seconds), turn the rolls so they cook on all sides. Medium to rare is the most popular, however, you can cook for a s long or short a time as you like.
  • When done, remove from the heat, place on a plate and allow to rest for a minute or two, and remove the toothpicks.
  • Drizzle the balsamic glaze over the tops as in my photos and serve! Enjoy!

1 boneless beef chuck roast (3 to 4 pounds)
1 jar (16 ounces) whole dill pickles, undrained
1/2 cup chili sauce
2 garlic cloves, minced
12 hamburger buns, split
Giardiniera, optional

Steps:

  • Cut roast in half and place in a 5-qt. slow cooker. Add pickles with juice, chili sauce and garlic. Cover and cook on low for 8-9 hours or until beef is tender. , Discard pickles. Remove roast. When cool enough to handle, shred the meat. Return to the slow cooker and heat through. Using a slotted spoon, fill each bun with about 1/2 cup meat mixture. If desired, top meat with giardiniera.

Steps:

  • In a small bowl, combine the cream cheese, cilantro, peppers and garlic. Spread about 2 tablespoons on each slice of beef. 1 tablespoon finely chopped onion
1 teaspoon Worcestershire sauce
1/8 teaspoon salt

Dash hot pepper sauce
2 packages (2-1/2 ounces each) deli corned beef
Assorted crackers

Steps:

  • In a large bowl, beat cream cheese until smooth. Add the onion, Worcestershire sauce, salt, pepper and hot pepper sauce; mix well., Place two slices of corned beef on waxed paper. Our family used to eat round steak pounded until it was very thin and tender, then chicken fried. Turkey or chicken, ham, bacon and relish are in this recipe, also mustard, mayo and brown sugar. Very simple to prepare, just follow the steps.

2 -3 lbs round steaks, fat removed from edges, cut in 6 -8 pieces
2 eggs, beaten
2 tablespoons water
4 teaspoons mccormick all seasoning
1 1/2 cups flour or 1 1/2 cups rice flour
4 tablespoons bacon drippings or 4 tablespoons margarine
8 slices cooked bacon, cut slice in 3 pieces
16 slices deli turkey, cut thin or 16 slices roasted deli chicken
16 slices deli ham, cut thin
8 slices thin provolone cheese or 8 slices thin swiss cheese
6 tablespoons Dijon mustard
4 tablespoons brown sugar or 4 tablespoons Splenda brown sugar blend
8 tablespoons mayonnaise
2 tablespoons sweet pickle relish
toothpick
1 (10 3/4 ounce) can campbell beef consomme soup
1 1/2 cups water
1/2 teaspoon salt
toothpick

Steps:

  • Pound each steak portion with meat mallet or a plate.
  • Note: I use a meat tenderizer utensil with knifes in it.
  • Put flour and seasoning in a pie pan, mix.
  • Beat eggs with water and pour into another pie pan.
  • Dip each piece in beaten eggs, shake the drips back in the pan.
  • Put each pounded piece in seasoned flour, pound in on both sides. Place on a plate.
  • Do all pieces once, then if you want to dip a second time, do so. Do not stack the dipped pieces or the coating may come off.
  • Dip floured steak pieces in egg mixture then, again in flour mixture.
  • In medium mixing bowl, add mustard, sugar,mayonnaise, pickle relish.
  • Mix and spread two tsps dressing on each steak. Use all the dressing between the steaks.
  • Stack on top of each flour, egg dipped steak, the following: turkey or chicken, cheese, bacon and ham.
  • Roll up and secure with toothpicks at an angle.
  • Heat bacon drippings olive oil or margarine in large frying pan.
  • Fry quickly on each side so it is browned.
  • Place upright in a casserole dish.
  • In frying pan, pour leftover flour and seasoning, beaten eggs, soup salt and water into the grease or oil. Whisk vigorously. Heat and pour over rolled up browned steaks.
  • Preheat 375°F.
  • Cover and bake 40 to 45 minutes. Serve with noodles or rice or potatoes.
  • Note: You can add other vegetables to the gravy if you wish.
