BEEF AND PORK MEATBALLS WITH CREAM SAUCE
It's pretty standard to use a half-beef, half-pork mixture for meatballs. Flavor yours with thyme and toss in an egg, flour, and potato. Serve them with a creamy sauce mixed with some soy sauce for an increased delicious experience.

Steps:
- For the pork-beef mixture: Melt the butter in a skillet over low heat and add the onion. Cook and stir until it starts changing color to golden.
- Transfer to a bowl and add the cooked potato. Mix the flour and water to a small bowl until even and add them to the bigger bowl. Keep adding the ground beef, minced pork, and thyme powder. Season with salt and mix until even using a spatula. Add the egg and mix more.
- Preparing the meatballs: Start forming balls from this mixture. We've got 21 of them. Your numbers may vary slightly depending on how big you make them.
- Melt the butter in a bigger skillet over medium heat, then add the meatballs. Fry them for 5-6 minutes on all sides, or until they are golden brown.
- Transfer to the oven and bake for 15 minutes at 380⁰F/190⁰C.
- For the sauce: Heat a cooking pot over low heat. Add the heavy cream, beef stock, and soy sauce. Whisk continuously until it starts bubbling.
- Serve the meatballs covered with cream sauce. Optionally, you can add some lingonberry jam.

- Position racks in upper and lower thirds of oven; preheat to 450°F. Line 2 large rimmed baking sheets with foil and coat with cooking spray.
- Combine eggs, onion, panko, parsley, Parmesan, garlic, Italian seasoning, salt and pepper in a large bowl. Add beef and pork. Mix gently with your hands until just combined (do not overmix). Using a generous 2 tablespoons each, shape into 48 meatballs. Place 1 inch apart on the prepared baking sheets.
- Bake the meatballs until an instant-read thermometer inserted in the center registers 165°F, about 15 minutes.

- Add the ground beef and pork mince to a large bowl.
- Add the red onion, egg, breadcrumbs, and parsley. Season with oregano, salt, mint, and pepper.
- Mix with a tablespoon until you obtain a smooth mixture.
- Drizzle the olive oil in your hands and rub them.
- Use your hands and gently shape the mixture into 0.5 inches (1.2 cm) thick balls. Coat the meatballs with flour.
- Heat the vegetable oil in a skillet over medium-high heat.

THE JUICIEST MEAT BALLS EVER

- Soak the bread crumbs in the milk while you prepare the other ingredients.
- Put the beef and pork into a large bowl. Add the onion, butter, eggs, and parsley and season well with salt and pepper. Put the soaked bread crumbs into the bowl and mix it all together well with your (clean) hands. Form the mixture into meatballs about the size of ping pong balls.
- Heat about 1/4-inch of oil in a skillet over medium heat. Fry the meatballs until they are browned on all sides and cooked through, about 15 minutes.
CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
