Eggs lend to the richness of this traditional challah bread recipe. The attractive golden color and delicious flavor make it hard to resist. -Taste of Home Test Kitchen

Yield 2 loaves (16 pieces each).

Number Of Ingredients 11

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1/2 cup canola oil
1/3 cup sugar
1 tablespoon salt
4 large eggs, room temperature
6 to 6-1/2 cups all-purpose flour
TOPPING:
1 large egg
1 teaspoon cold water
1 tablespoon sesame or poppy seeds, optional

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the oil, sugar, salt, eggs and 4 cups flour. Beat until smooth. Stir in enough remaining flour to form a firm dough. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Divide each portion into thirds. Shape each piece into a 15-in. rope. , Place 3 ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Repeat with remaining dough. Cover and let rise until doubled, about 1 hour., Preheat oven to 350°. Beat egg and cold water; brush over braids. Sprinkle with sesame or poppy seeds if desired. Bake until golden brown, 30-40 minutes. Remove to wire racks to cool.

I made up my own Challah that is amazing! I have tried countless combinations to finally get it right. It uses quick rise yeast to save you a bunch of time. Enjoy!

4 (.25 ounce) packages quick-rise yeast
4 cups warm water (110 degrees F/45 degrees C)
2 tablespoons salt
¾ cup white sugar
1 cup pareve margarine, melted
4 eggs
12 cups bread flour, or as needed
1 egg
½ teaspoon vanilla extract
¼ cup sesame seeds, divided

Steps:

  • Sprinkle the yeast over the water in a large bowl, and stir gently to moisten the yeast. Stir in salt, sugar, margarine, and 4 eggs, and beat well. Gradually mix in the flour, 1 cup at a time, up to 12 cups, until the dough becomes slightly tacky but not wet. Turn the dough out onto a floured surface, and knead until smooth and elastic, 8 to 10 minutes.
  • Grease baking sheets, or line them with parchment paper and set aside.
  • Cut the bread dough into 4 equal-sized pieces (or 2 pieces to make 2 large loaves). Cut each piece into thirds for 3-strand braided loaves. Working on a floured surface, roll the small dough pieces into ropes about the thickness of your thumb and about 12 inches long. Ropes should be fatter in the middle and thinner at the ends. Pinch 3 ropes together at the top and braid them. Starting with the strand to the right, move it to the left over the middle strand (that strand becomes the new middle strand.) Take the strand farthest to the left, and move it over the new middle strand. Continue braiding, alternating sides each time, until the loaf is braided, and pinch the ends together and fold them underneath for a neat look. Repeat for the remaining loaves.
  • Place the loaves onto the prepared baking sheets, and let rise until double in size, 1 to 1 1/2 hours.
  • Preheat an oven to 350 degrees F (175 degrees C). Whisk 1 egg with vanilla extract in a small bowl, and brush the loaves with the egg wash. Sprinkle each loaf with about 1 tablespoon of sesame seeds.
  • Bake in the preheated oven until the tops are shiny and golden brown, about 30 minutes. Let cool before slicing.

When I first made this, I made it as a pull-apart challah, rather than the traditional braided. It is absolutely delicious and makes a very dense, flavorful dough. Prepairing in a bread maker may make a fluffier challah. Using a combination of whole wheat and white flour is said to make the best challahs!

1/2 cup oil
1/2 cup honey
1 tablespoon salt
3 eggs
2 cups warm water
3/4 ounce fleishman's active dry yeast (3 packages)
8 -9 cups flour

Steps:

  • Follow instructions on yeast package to activate yeast in warm water for 10 minutes.
  • Mix the ingredients - putting the oil into the bowl first and then measure and add the honey - using the same measuring cup that you measured the oil inches This little trick allows the honey to run smoothly out of the measuring cup.
  • Add the remaining ingredients in the order given.
  • If using an electric mixer, let it knead for 3 minutes and then do a little hand-kneading as you transfer the dough into an oiled bowl. If it is kneaded by hand, it is necessary to knead the dough for 10 minutes.
  • Let the dough rise in a large bowl that has been coated with oil. When transferring the dough into the oiled bowl, be sure to turn it on all sides so that it gets a thin coating of oil. Place the bowl in a warm place until the dough is double in size -- then punch down and knead a bit more.
  • Place the dough back in the bowl and let it rise a second time. This should take about one hour. Punch down and cut into sizes desired.
  • After shaping the challahs, brush them generously with egg yolk and sprinkle with either poppy seeds or sesame seeds if you prefer.
  • Bake in 350-degree oven for approximately 25-30 minutes, or until the challah sounds hollow when tapped on the bottom.

Made with quick-rise yeast, this is a sweeter, richer challah that lends itself especially well to Rosh Hashanah or other holiday uses. It is quicker and easier than a standard double-rise recipe, so it's great for those afternoons when you're in a challah of a hurry. Challah was meant to be torn and not sliced. B'tayevon!

1 ½ cups warm water (110 degrees F/45 degrees C)
1 cup margarine, melted
¾ cup white sugar
3 egg, beaten
4 ½ teaspoons active dry yeast
1 teaspoon salt
7 ½ cups bread flour
1 egg, beaten
2 tablespoons poppy seeds
2 tablespoons sesame seeds

Steps:

  • In a medium bowl, blend together warm water, melted margarine, sugar, and 3 beaten eggs
  • In a large bowl, mix together yeast, salt, and 7 cups of the flour. Gradually stir in liquid ingredients, and mix until dough holds together.
  • Knead dough on a floured surface with remaining flour until smooth.
  • Split the dough into 2 large pieces. Split the 2 large pieces into 3 pieces each. Roll each third into a rope 3/4 inch thick and braid 3 strands together. Repeat. Place shaped dough onto greased cookie sheets. Brush dough with remaining beaten egg. Add poppy or sesame seeds, if desired. Let rise in a warm place until doubled in size.
  • Bake in a preheated 325 degree F(165 degrees C) oven for 20 to 30 minutes.

This is from Kosher by Design by Susie Fishbein. It uses 5 lbs of flour, enough to warrant the making of the special blessing over bread dough. It is very sweet and wonderful. I used natural sugar for it; even more wonderful.

1/2 cup warm water
4 (1/4 ounce) packages active dry yeast (or 3 tbl)
1 tablespoon sugar
7 large eggs
2 cups sugar
1 1/2 cups oil
7 teaspoons salt
4 cups boiling water
5 lbs flour
1 large egg, beaten lightly
sesame seeds or poppy seed

Steps:

  • Proof the yeast: Place the 1/2 cup warm water, yeast, 1 tbl sugar in a large glass measuring cup or bowl. Set aside until yeast gets bubbly.
  • In a separate bowl, combine the 2 cups sugar, boiling water, salt, and oil.
  • Crack eggs into large bowl (or your mixer bowl). Add proofed yeast, mix again. Add the sugar/water mixture. Mix thoroughly.
  • Add the flour in batches, incorporating well each time.
  • Knead dough for 10-15 minutes, adding flour as needed until you get that earlobe texture.
  • Place dough in a large bowl (greased), cover with a damp towel and let rise in a warm place for about 2 hours, punching down in the interim.
  • Turn out dough onto floured surface. Separate the piece of dough with the blessing if you make it.
  • Divide dough into 6-7 pieces, and shape into challah according to your favorite style. (You can braid three strands, four strands, six strands -- whatever!).
  • (At this point you can freeze some of the shaped challot to bake later on.).
  • Let rise another 30 minutes or so.
  • Brush each loaf with beaten egg. Sprinkle with seeds.
  • Bake at 350F for about 30 minutes or until it sounds hollow when tapped on the bottom.
