- Preheat oven to 300°F In a large bowl, combine graham-cracker crumbs, coconut, pecans, and sugar. Add melted butter, stirring until well combined. Spread mixture on a rimmed sheet pan and bake for approximately 15 minutes until coconut is golden brown, stirring regularly and watching to prevent burning. Set aside to cool.* In another bowl, beat cream cheese at medium speed with an electric mixer until smooth. Add condensed milk and beat until well combined. Stir in pudding mix and milk and beat until mixture is smooth Reserve 2 tablespoons crumb mixture. In a large glass serving bowl or in individual stemmed glasses, layer 1/3 of the pudding, 1/2 of the bananas, 1/2 of the crumb mixture, another 1/3 of the pudding, 1/2 of the crumb mixture, remaining bananas, and remaining pudding Top with whipped topping and sprinkle reserved crumbs on top. *Crumb mixture can be prepared ahead of time and stored in an airtight container

- Whisk pudding mix with milk until smooth. Stir in chopped bananas; set aside.

- Finely chop half of a graham cracker using food chopper. Set aside. Coarsely crumble remaining crackers into a small mixing bowl. For ganache, place chocolate morsels and 1 1/2 cups of the whipped topping into a small bowl. Microwave on HIGH 45-60 seconds or until melted and smooth, stirring every 15 seconds. Combine pudding mix and milk in large mixing bowl. Whisk until mixture begins to thicken. Fold in remaining whipped topping using a spatula. Juice lemon using and measure out 2 tbsp juice. Peel bananas and cut into 1 1/2-inch pieces. Slice pieces into medium mixing bowl using. Add lemon juice and toss gently. Set aside 12 slices for garnish. To assemble trifle, place half of the crumbled graham crackers over bottom of trifle bowl. Place half of the bananas over the crackers and top with one-third of the ganache. Spread half of the banana filling over ganache, spreading to edges. Repeat layers one at a time. Decorate with remaining ganache. Sprinkle top of trifle with chopped graham cracker. Arrange reserved banana slices around edges of trifle. To get a good visual of the ganache layers, spoon ganache into resealable plastic food storage bag; secure with Twixit! Clip. Trim corner of bag to allow ganache to flow through. Pipe around the inside edges of the bowl, then drizzle remaining ganache over the bananas.

Steps:
- Combine sugar, evaporated milk, cocoa and cornstarch in a medium saucepan and bring to a boil.
- Cook until sugar dissolves and mixture is thick (about 3 minutes), stirring frequently.
- Remove from heat and stir in coffee liqueur.
- Set aside to cool.
- When chocolate mixture is cool, combine with cake cubes in a large bowl.
- Mix 2 crushed candy bars in with cake mixture.
- Beat milk and pudding mix at medium speed of a mixer until well-blended.
- Stir into cake mixture.
- Cover and chill for 15 minutes in refrigerator.
- Spoon half of cake mixture into a trifle dish or large bowl (about 4 quart).
- Arrange half of bananas evenly over cake mixture and top with half of cool whip.
- Repeat layers, ending with cool whip.
- Sprinkle with remaining toffee bar.
- Chill for 1 hour before serving.
CHOCOLATE PUDDING TRIFLE
Here's an easy dessert that was the result of an "accident" at the bakery one day. Some small chocolate cakes refused to come out of the their pans (someone forgot to grease and flour!). Sad at the thought of throwing out all that delicious cake, Jennifer assembled layers of broken cake, pudding, whipped cream, and chocolate cookie crumbs. The results were fabulous, and many customers come back asking if any more "mistakes" have been made so they can have their terrific trifle!

- Prepare the chocolate cake as recommended above.
- To prepare the chocolate pudding filling: In a large bowl, on the medium speed of an electric mixer, beat the instant pudding and the milk for 3 minutes. Place uncovered in the refrigerator and chill until set, about 15 minutes.
- Meanwhile, in a medium-size bowl, whip the heavy cream with the sugar and the vanilla extract until soft peaks form, being careful not to overwhip.
- To assemble the trifle: Place 1/3 of the cake in the bottom of a large glass bowl. Place over this 1/3 of the pudding mixture, spreading evenly with a rubber spatula. Spread 1/3 of the whipped cream over this. Sprinkle with 1/3 of the cookie crumbs. Proceed in this fashion until three layers have been assembled, ending with a dusting of the cookie crumbs. Refrigerate at least 2 hours, or overnight, before cutting and serving.
HOMEMADE CHOCOLATE-BANANA PUDDING
My family, from East Texas, only made banana pudding with chocolate pudding. I did not taste it made with vanilla pudding until after I got married. I converted my wife!

- Combine milk and chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted and mixture is hot, about 5 minutes.
- Mix sugar, flour, and salt together in a bowl. Add some of the hot liquid to the dry ingredients; mix well. Pour dry ingredients into the double boiler and stir well. Cover and cook over a rolling boil, stirring often, until thickened, about 15 minutes.
- Pour some of the hot mixture into the beaten egg yolks, whisking quickly to avoid scrambling the eggs. Pour the mixture back into the double boiler and whisk to combine. Whisk in butter and vanilla.
- Line the bottom of a serving bowl with wafer cookies. Pour in some of the pudding to cover and top with sliced bananas. Repeat layers until all of the pudding is gone, ending with bananas on top.
