SUPER QUICK AND EASY HOT WINGS
When I make hot wings, it is always for mass quantities of boys at my house (the amount of food teenage boys eat can boggle the mind), so I had to come up with a way to make lots of good hot wings - fast.

Steps:
- Line a plate with paper towels and have ready. Cut off the very end tips of the chicken wings and discard. Cut the wings in half where the joint bones meet. Make sure the wings are dry. In a bowl, combine the flour, salt and some pepper; add the wing pieces and toss to coat.
- In a large cast-iron skillet or a small stockpot, heat the oil to 350 degrees F on a deep-fat thermometer. Shake off any excess coating from the wings and drop the pieces into the hot oil. Cook for 6 to 8 minutes. With a slotted spoon, remove the wings from the pan to a bowl. Toss with 1/2 cup of the sauce of your choice until evenly coated. Serve immediately.
- Wearing gloves to protect your hands from the chile's volatile oils, remove most of the charred skin and all the seeds from the habanero. In a small saucepan, combine the chile, molasses, honey, ketjap manis, vinegar, tamarind and garlic, and bring just to a boil over high heat.
- Remove from the heat and let cool slightly. Add the ketchup and Dijon mustard to the syrup and pour into a blender and puree, or use an immersion blender to puree right in the pan. Stored in an airtight container, the syrup will last up to 2 months in the refrigerator. Put 1/2 cup of the sauce in a bowl, add the hot fried wings and toss until evenly coated.
- Combine the cornstarch and 1/4 cup water in a small bowl and stir to make a slurry.
- In a large saute pan over medium heat, add the canola oil. Add the green onions, ginger, garlic and black beans, and saute quickly for a couple of minutes. Add the water and cornstarch mixture, vinegar and honey. Stir until the cornstarch starts to thicken the sauce, a minute or two. Add the sesame oil and red pepper flakes if using. Put the sauce in a bowl, add the hot fried wings and toss until evenly coated. Serve hot, sprinkled with the sesame seeds.
- In a saute pan over medium heat, add the olive oil. Add the garlic, ginger, orange juice and 1/4 cup water and bring to a simmer. Add the preserved lemon or lemon zest, honey, orange blossom water, turmeric, cayenne pepper, cinnamon and coriander. Cook until the sauce is reduced a bit, another 3 to 4 minutes. Season with salt and pepper. Put the sauce in a bowl, add the hot fried wings and toss until evenly coated. Serve hot, sprinkled with the parsley and cilantro, with the olives and almonds alongside.

Steps:
- Combine all master spice mix ingredients and separate into three equal portions.
- In a large bowl combine chicken wings, ⅓ master spice mix, the buttermilk. Cover and chill for as long as possible (4 hours to overnight).
- Rinse the brined wing pieces and pat dry.
- Mix the flour with another ⅓ of the master spice mix.
- Dredge the chicken wing pieces in the flour/spice mixture. Shake off any excess. Set aside.
- Heat your oil to 325˚F (170˚C).
- Fry the wings for 8-10 minutes, until the internal temperature reaches 165˚F (74˚C). The wings will splatter so its a good idea to have a lid nearby!
- Take the wings out and drain on a paper bag or paper towels.
- Place the lard in a saucepan and sprinkle over the last ⅓ of your master spice mix. Once the lard is melted and warm, stir the mixture, and take it off the heat. Immediately baste your fried wings with the lard/spice mix and serve right away!
- Enjoy!

DELICIOUS HOT WINGS
My version of hot wings. Everybody has their opinion of what is the best, but this recipe is up there from all the raves I get.

Time 1h30m
Yield 12-18 wings, 2-4 serving(s)
Number Of Ingredients 11
Steps:
- Combine hot sauce, butter, lemon juice, 1/8-1/4 tsp cayenne, apple cider vinegar in sauce pan and simmer 15 minutes to 30 minutes.
- Cut wings into sections sear off feathers. Combine 3/4 flour, salt, cayenne pepper.
- in a bag or bowl and coat chicken pieces, place on a rack in a aluminum lined cookie sheet for easy clean up. Place in refrigerator for at least 1/2 hour (I found a tip that when you do this chicken fries up crispier due to the drying out of the skin in fridge) or fry right away.
- Sometimes I like to make a second batch of coating with 1 egg and 1/2 cup of water and 3/4 cup of flour for a really crunchy batter type second coating.
- I find a good electric fryer the best way to cook, but a frying pan works well too. 10-12 minutes in a fryer or 5-6 minutes each side in a frying pan. I cook wingettes separately from drumettes usually.
- When finished, I serve with sauce in a small dipping bowl with ranch or blue cheese on side or just pour sauce over all pieces and coat. I hope you enjoy this version of Buffalo Hot Wings.
