SIMPLE TACO SOUP

We first sampled this chili-like taco soup recipe at a church dinner. What a warming dish for a cold day. And because it uses packaged seasonings with several cans of vegetables, it's a snap to prepare. -Glenda Taylor, Sand Springs, Oklahoma

2 pounds ground beef
1 envelope taco seasoning
1-1/2 cups water
1 can (16 ounces) mild chili beans, undrained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomato with green chiles
1 can (4 ounces) chopped green chiles, optional
1 envelope ranch salad dressing mix

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Add taco seasoning and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.

Our family favorite taco soup! It can be made on the stove top or in the crock pot. This taco soup recipe is as easy as it gets and feeds a bunch of people!

2 lb lean ground beef
2 cups diced onions
2 15.5 oz. cans pinto beans
1 can (15 1/2 oz.) pink kidney beans
1 can (15 1/4 oz.) whole kernel corn (, drained)
1 can (14 1/2 oz.) can Mexican-style stewed tomatoes
1 can (14 1/2 oz.) diced tomatoes
1 can (10 oz.) can tomatoes with chiles
2 (4 1/2 oz.) cans diced green chiles
1 package (1 1/4 oz.) taco seasoning mix
1 oz. package ranch salad dressing mix
Corn chips (like Fritos)
Sour cream
Shredded cheese
Diced avocado
Chopped green onions

Steps:

  • Brown the ground beef and onions in a large skillet over medium heat; drain the excess fat. Transfer to a 6 qt. slow cooker.
  • Add the rest of the soup ingredients (not the toppings) and cook in the slow cooker on low for 6 to 8 hours.
  • Brown the ground beef and onions in a large Dutch oven or stockpot; drain the excess fat.
  • Add the rest of the soup ingredients (not the toppings) and simmer over low heat for about 1 hour.
  • To serve, place a few corn chips in each bowl and ladle soup over them. Allow everyone to choose their optional toppings.

2 pounds ground beef
1 cup diced onion
2 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon chili powder
1 (8 ounce) package cream cheese, softened and cut into pieces
4 cups beef broth
2 (14.5 ounce) cans diced tomatoes, undrained
1 (7 ounce) can chopped mild green chiles
½ cup heavy cream
1 teaspoon salt, or to taste

Steps:

  • Heat a large soup pot over medium-high heat. Cook and stir ground beef, onion, and garlic in the hot pot until beef is browned and crumbly and onion is translucent, 5 to 7 minutes. Drain and discard grease if necessary.
  • Stir in cumin and chili powder and cook for 2 to 3 minutes. Drop cream cheese pieces into the pot; mix well and cook until melted and no white chunks remain. Stir in beef broth, undrained diced tomatoes, green chiles, cream, and salt. Reduce heat to medium and cook until heated through, about 30 minutes, or longer if desired; do not allow to boil or curdling/separation may occur.
