my absolute 'go-to' recipe for chocolate cake. the brown sugar gives it depth. this recipe is for cake layers only. use your favorite frosting. from the hershey's test kitchens.

Ingredients: baking chocolate,water,butter,brown sugar,eggs,vanilla,cake flour,baking soda,salt


  1. break chocolate into pieces
  2. place in small saucepan with 1 / 3 cup water
  3. stir constantly over low heat until chocolate has melted
  4. cool
  5. cream butter and sugar in large mixing bowl until very light and fluffy
  6. add eggs and vanilla
  7. beat well
  8. blend in chocolate
  9. combine flour , baking soda and salt
  10. add alternately with 1 cup water on low speed
  11. beat just until well-blended
  12. pour batter into well-greased and floured cake pans
  13. no need to grease or butter pan
  14. bake at 350 degrees
  15. cake is done if toothpick inserted in center comes out clean
  16. cool 10 minutes
  17. remove from pans by inverting onto wire rack
  18. if using waxed paper liner , remove and discard
  19. cool cake layers completely before frosting
  20. baking times:
  21. two 8-inch layer pans -- 35-40 minutes
  22. two 9-inch layer pans -- 30-35 minutes
  23. two 8- or 9-inch square pans -- 30-35 minutes
