HEALTHY GRANOLA
We decided to give granola a makeover, and not just by cutting calories and sweeteners. Yes, we trimmed the sugar-but we also added healthy fats, like olive oil, and increased the fiber by including with almonds, sesame seeds and puffed millet. One 1/2-cup serving delivers 4 grams of fiber and only 8 grams of sugar! Add some milk (for calcium and protein) and your favorite dried or fresh fruit and you've got a complete breakfast or snack.

Steps:
- Adjust an oven rack to the middle position and preheat the oven to 325 degrees F.
- Toss together the oats, millet, almonds, coconut flakes, pumpkin seeds, sunflower seeds and sesame seeds in a large bowl.
- Whisk together the olive oil, brown sugar, maple syrup, vanilla and 3/4 teaspoon salt together in a small bowl.
- Pour the olive oil mixture into the oat mixture and toss until evenly coated. Spread out on a rimmed baking sheet and bake until golden and toasted, tossing the mixture around about halfway through, 30 to 40 minutes. Let cool completely on the baking sheet, then store at room temperature in an airtight container for up to 1 week.

ADDICTIVE AND HEALTHY GRANOLA
This recipe is addictive and very easy. It tastes like the top crunchy part of cobbler desserts. It would be good as a cereal with milk or to put in yogurt or topped on fruit that has been fried in a little butter and brown sugar. A dollop of homemade whipped cream wouldn't hurt the latter!

- Preheat oven to 325 degrees F (165 degrees C). Spray 2 baking sheets with cooking spray or line with non-stick aluminum foil.
- Whisk maple syrup, vanilla extract, cinnamon, rose water, and salt together in a bowl.
- Mix oats, rice cereal, coconut, cashews, raisins, dried blueberries, pecans, almonds, dried cranberries, and brown sugar together in a separate bowl. Pour maple syrup mixture over oat mixture and stir until evenly coated. Spread oat mixture onto the prepared baking sheets.
- Bake in the preheated oven for 20 minutes; stir and continue baking until slightly crisp and lightly browned, 15 to 25 more minutes. Cool on baking sheets before serving, about 1 hour. Store in air-tight containers.

DETOX GRANOLA
This version, slightly adapted from the 'Detox Recipe' book is a healthy, delicious option to consider for breakfast. Even my kids would forego a Macdonalds to have this sprinkled on some Greek yoghurt with a drizzle of honey.... To get the 'full' detox effect however eat with skimmed/rice milk or natural yoghurt and fresh fruit.

Steps:
- Heat the oven to 170 degrees C/Gas mark 5.
- In a large bowl mix oats, sunflower seeds, almonds and hazlenuts.
- In a separate bowl combine the honey, oil, water, vanilla extract and cinnamon. I find putting this in the microwave for a minute heats it sufficiently to mix the ingredients.
- Add liquid to the dry ingredients and mix well.
- Spread out on a large baking tray and bake in the oven for 30/40 minutes. You will need to stir/turn it occasionally until evenly browned. I wait until it is done then turn off the oven and leave the door open. This way it seems to fully dry out and stays crisp for longer.
- When cool add the apricots, cut into thin slivers. Mix and store in an airtight tub.
- A nice alternative is to use pecan nuts instead of hazlenuts. Do crush/chop the nuts yourself though as, if you buy the uniformly shop bought chopped ones, the texture is all wrong.
