CHOCOLATE GLAZE FOR DEVIL'S FOOD DOUGHNUTS
Use this chocolate glaze on our Devil's Food Doughnuts.

Steps:
- Place the chocolate in a heatproof bowl or the top of a double boiler; set over a pan of simmering water. Heat, stirring with a rubber spatula, until melted and smooth.
- Place 1/2 cup plus 1 1/2 teaspoons water in a small pan; bring to a boil. Remove from heat.
- Add the cocoa powder to the boiling water, and whisk until smooth. Add the melted chocolate, heavy cream, melted butter, confectioners sugar, brandy, and corn syrup; whisk mixture to combine.
- Return pan to medium-high heat. Cook, whisking constantly, until bubbly and thick, about 2 minutes. Use while still warm.
DEVIL'S FLOAT
This is a quick dessert that any chocolate lover will flip over. It is also low in sugar and low in fat. Any variety of nut can be substituted for the pecans. Great with ice cream.

- Preheat oven to 350 degrees F (175 degrees C).
- Sift flour, 3/4 cup white sugar, 2 tablespoons cocoa powder, baking powder, and salt together in a bowl. Stir milk, butter, and vanilla extract into flour mixture until batter is just combined; fold in pecans. Pour batter into an 8x8-inch baking dish.
- Mix 1/2 cup white sugar, brown sugar, and 2 tablespoons cocoa powder together in a bowl; sprinkle over batter. Pour hot water over batter and sugar layer.
- Bake in the preheated oven until top cake layer is floating on bottom pudding layer, about 40 minutes.

DEVILED EGG PASTA SALAD

- Place cooked pasta in large bowl.
- Add mayonnaise, sour cream, mustard, vinegar, salt and pepper. Mix until well combined.
- Gently stir in hard-cooked eggs.
- Refrigerate 1 to 2 hours or until chilled. Just before serving, top with paprika and pickles.

DEVIL'S FOOD CUPCAKES

Steps:
- Preheat the oven to 375 degrees. Place the baking cups in the muffin pans.
- Place the chocolate in a small heavy saucepan, and melt over low heat, stirring constantly. Remove the pans from the heat and set aside.
- Cream the butter and brown sugar together in the bowl of an electric mixer. With the mixer on low speed, add the eggs one at a time, beating well after each addition. Stir in the melted chocolate.
- Combine the flour, baking soda and salt. Alternating between the two, add the flour mixture and buttermilk to the chocolate mixture in three stages, ending with the flour. Then slowly stir in 1 cup of boiling water and the vanilla.
- Pour the batter 3/4 full into the baking cups. Place in the oven and bake until a toothpick inserted into the center of a cupcake comes out clean, about 15 minutes.
- Remove the pans from the oven, and let the cupcakes cool for 5 minutes, and then remove them from the muffin pans. Let the cupcakes cool completely.
- Place all the ingredients into a small, heavy saucepan over moderate heat. Cook, stirring occasionally, until the chocolate is almost melted.
- Remove from heat. Continue to stir until the chocolate is completely melted. Transfer to a shallow bowl. Let stand, stirring occasionally, until icing reaches room temperature.
- Hold cupcakes upside down and dip the tops into the icing. Twirl slightly and then hold upside down for a few seconds for excess to drip off. After dipping them all, dip each one a second time.

DEVIL'S PASTA
There's many different variations of this, but this is my favourite. It keeps things simple, without a heavy sauce clogging up the pasta. I usually spice it up even more by adding some chopped fresh chili at the end; omit this if you're not up to it! You really have to use dried spaghetti for this recipe, because it needs the time to cook the flavour in, which you wouldn't get with fresh.

Steps:
- Place the sliced garlic and the chilies in a pan of COLD, salted water and slowly bring to the boil, covered. Let it boil for five minutes to infuse the flavours.
- Add the pasta and cook slowly until al dente.
- Drain, and remove the chilies (unless you like the kick of eating them, which can be quite extreme!).
- Toss with the olive oil (extra if needed), tomatoes, Parmesan and fresh chili (optional).
- Season and serve immediately.
