Mushrooms,Butter,Bay leaf,Onion chopped,Garlic chopped,Vegetable stock,White pepper powder,Cream,Milk chilled,Cinnamon powder,

Steps:

  • Clean, wash and thickly slice mushrooms. Melt butter in a heavy bottom pan, add bay leaf, onion and garlic and sauté for two to three minutes or till onion becomes translucent. Add mushrooms and sauté for a minute.
  • Add one cup of vegetable stock and cook for five more minutes. Remove from heat and cool. Remove bay leaf. Make puree of the cooked mushrooms. Add the remaining vegetable stock to it.
  • Return to heat and bring it to a boil, add salt and white pepper powder and simmer the soup for two to three minutes. Add the cream and remove from heat.
  • Place soup in individual cups. In a chilled bowl take the chilled milk and beat it with a fork. This will develop froth in it which can be collected with a ladle and placed on the hot mushroom soup giving it a cappuccino affect.
  • Sprinkle cinnamon powder and serve.

  • Milk with high fat content will give best results with the froth making.

2 tablespoons unsalted butter
1 yellow onion, finely diced
1 garlic clove, minced
1 bay leaf
3 cups mixed wild mushrooms, finely diced
2 tablespoons all-purpose flour
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 cups vegetable broth
1 cup heavy cream
Creme fraiche, for garnish
Flat-leaf parsley, minced, for garnish

Steps:

  • In a Dutch oven over medium heat, melt butter. Add onion, garlic, and bay leaf. Cook until onion is translucent, about 10 minutes., Add mushrooms and cook until tender and any moisture has evaporated., Stir in flour, salt, and pepper and cook 2 to 3 minutes. Add, vegetable broth and bring to a low boil. Reduce heat to a simmer,, cover and cook 20 minutes. Stir in cream and cook an additional 10, minutes, stirring often., Serve in an espresso cup garnished with creme fraiche and parsley.

15 large fresh button mushrooms, clean, wash and thickly slice mushrooms
1 small onion, peeled, washed and finely chopped
4 -6 fresh garlic cloves, peeled, washed and finely chopped
1 tablespoon butter
1 bay leaf
4 cups vegetable stock
salt
1/4 teaspoon white pepper powder
3/4 cup fresh cream
2 cups whole milk (chilled)
1 teaspoon ground cinnamon

Steps:

  • Melt butter in a heavy bottomed pan.
  • Add bay leaf, onion and garlic.
  • Saute for 2-3 minutes or till the onion becomes translucent.
  • Add mushrooms.
  • Saute for a minute.
  • Add 1 cup of vegetable stock.
  • Cook for 5 more minutes.
  • Remove from heat and cool.
  • Remove bay leaf.
  • Make a puree of the cooked mushrooms.
  • Add the remaining vegetable stock to it.
  • Bring to a boil.
  • Add salt and white pepper powder.
  • Simmer the soup for 2-3 minutes.
  • Add fresh cream and remove from heat.
  • Place soup in individual cups.
  • Keep a deep bowl in the refrigerator to chill it.
  • In this chilled bowl pour in the chilled milk and beat it with a fork.
  • This will develop froth in it which can be collected with a ladle and placed on the hot mushroom soup giving it a cappuccino effect.
  • Sprinkle powdered cinnamon and serve immediately.

1 tablespoon unsalted butter
2 cloves garlic, minced
3 whole shallots, minced
3 ounces dried morels, rehydrated to 7 ounces, sliced, save 2 dried morels, grind in coffee grinder for morel dust, to garnish
3 ounces dry sack sherry
2 quarts mushroom stock (rehydrated liquid), see Cook's Notes
2 1/2 cups heavy whipping cream
4 sprigs picked thyme, minced
3 teaspoons buerre manie, equal amounts butter and flour, rolled into 3 balls
Salt and freshly ground black pepper

Steps:

  • For the Soup: Melt the butter in a large stockpot. Add the garlic and shallots and cook until translucent. Add sliced morels and stir for 1 minute. Deglaze with sherry. Reduce until almost totally dry. Add the 2 quarts stock (rehydrated liquid) and bring to simmer, then reduce by 1/3. Slowly whisk in 2 cups of the heavy cream. Bring to boil. Add half of the minced thyme and simmer for 15 minutes. Whisk in 3, (1 teaspoon) balls of buerre manie to thicken. Simmer for 15 more minutes. Season with salt and freshly ground black pepper.
  • Thyme Cloud: Whip the remaining thyme with the 1/2 cup remaining whip cream until soft peak. Spoon on top of soup. Garnish with morel dust.

3 green onions
1 (10 ounce) can mushroom pieces, drained
2 tablespoons butter
2 tablespoons cornstarch
½ cup half-and-half
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
10 slices sandwich bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking sheet with cooking spray.
  • Chop green onions and mushrooms very finely, to a nearly paste-like consistency.
  • Melt butter in a small saucepan over medium heat; stir in green onions and mushrooms and cook and stir until fragrant, about 2 minutes. Whisk cornstarch into half-and-half; pour into mushroom mixture and cook, stirring often, until thickened, about 3 minutes. Season mushroom mixture with salt, pepper, and garlic powder.
  • Roll bread slices with a rolling pin until very flat and thin. Spread mushroom mixture evenly onto flattened bread; tightly roll up bread slices. Slice each bread tube into 1-inch thick rounds; place rounds onto a baking sheet.
  • Bake in the preheated oven until bread is browned, about 10 minutes.

2 tablespoons olive oil
· 1/2 stick COLD butter
· 1 shallot bulb
· 2 pounds mushrooms (any will work)
· 1/2 cup dry sherry
· 16 ounces chicken stock
· 1 tsp chopped fresh thyme
· 1 1/2 cups half and half
· 1/2 teaspoon white pepper
· 1 teaspoons kosher salt
· 1/2 tablespoon sherry vinegar
· 3/4 cup whole milk
· 1 tablespoon black truffle oil

Steps:

  • Instructions · Wash and chop mushroom · Dice shallots · Add olive oil to a large stock pot over medium heat · Place shallots in the pot and sauté for three minutes · Add chopped mushrooms · This is an integral part of the recipe - sauté the mushrooms until they have reduced to 2/3 their original size. Like the onions in french onion soup, cooking down the mushrooms gives the dish its complex rich flavor. It's worth the extra time it takes. BUT make sure that the mushrooms don't burn - add olive oil as needed. · Once mushrooms have reduced, add sherry and let it simmer for 10 minutes · Add chicken stock and tarragon, bring to a full boil · Turn off heat · Cut stick of butter into 8 pieces · In batches, puree the bisque in a food processor (or use an emersion blender) · While you are pureeing, add chunks of the cold butter · Once you have pureed all of the bisque, strain it through a sieve into a large bowl · Rinse out pot that you used to make the bisque base · Transfer pureed bisque back into the pot and add half and half over medium heat · Stir in salt and pepper · Once bisque is warm enough to serve, add sherry vinegar and stir to combine · Keep bisque over low heat while you prepare the froth · Mix truffle oil and milk in a coffee mug and microwave for 40 seconds · Using an Aerolatte, (or your milk foamer on your espresso machine) mix until frothed · Serve bisque in cappuccino cups and top with truffle foam
