2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 stick cup light margarine, softened
1 cup Splenda sugar substitute (or other measure-for-measure sugar substitute)
1/4 cup honey
2 large eggs
1 teaspoon vanilla
1/2 cup skim milk
1 cup fresh blueberries or 1 cup frozen blueberries

Steps:

  • Preheat oven to 350° F.
  • Line 10 muffin cups with paper liners.
  • Sift together flour, baking powder, salt, set aside.
  • Beat together margarine, Splenda, and honey with an electric mixer until light and fluffy.
  • Add eggs one at a time beating well after each addition.
  • Stir in vanilla.
  • Alternately stir in flour mixture and milk, beginning and ending with flour mixture.
  • Fold in berries.
  • Spoon batter into paper lined muffin cups, and bake until golden brown and a toothpick inserted comes out clean, about 25-30 minutes.
  • Cool in pan 10 minutes on a wire rack.
  • Remove from pan.
  • Cool completely on wire rack.

Low fat and low sugar yumminess! Found in Diabetic Cooking magazine, we enjoy these not-too-sweet cake-like muffins with fresh blueberries. With just a hint of orange flavor, I think I'll add one teaspoon of orange zest next time. If you prefer a sweeter muffin, I'd suggest increasing the sugar to 1/2 cup. This recipe can make 6 jumbo muffins or 3 jumbo/ 6 regular or just 12 regular!

1 3/4 cups all-purpose flour
1/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
3/4 cup nonfat milk (skim)
1/4 cup butter, melted and slightly cooled
1 egg, lightly beaten
3 tablespoons orange juice concentrate, thawed
1 teaspoon vanilla
3/4 cup blueberries (fresh or frozen)

Steps:

  • Preheat oven to 400*F. Grease (or line with cupcake liners) muffin pans. Set aside.
  • Combine flour, sugar, baking powder, baking soda, salt and cinnamon in large bowl.
  • Beat milk, butter, egg, orange juice concentrate and vanilla in medium bowl until well blended.
  • Add milk mixture to flour mixture; mix lightly just until moistened. Stir in blueberries just until berries are evenly distributed.
  • Fill prepared muffin cups 3/4 full. Bake 20-25 minutes or until toothpick inserted into centers comes out clean. Cool 5 minutes; remove from pan to wire rack. Serve warm or at room temperature.

1 tablespoon canola oil

¼ teaspoon salt
2 large eggs, beaten
2 (3.9 ounce) containers Mott's® Healthy Harvest Blueberry Delight Applesauce
½ cup brown sugar
¼ cup canola oil
1 teaspoon vanilla extract
1 cup blueberries

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil or coat 12 muffin cups with nonstick cooking spray and set aside. To make the topping, combine the flour, wheat germ, and brown sugar in a bowl. Add the oil and stir until the dry ingredients are well coated with the oil. Set aside.
  • Meanwhile, whisk together the flour, wheat germ, baking powder, baking soda, cinnamon and salt in a large bowl. Combine the eggs, applesauce, brown sugar, oil, and vanilla in a separate bowl and whisk until well blended.
  • Pour the liquid ingredients over the dry ingredients and stir until just moistened. Gently stir in the blueberries. Spoon the batter into the prepared muffin cups. Arrange the topping evenly over the muffins, using the back of a spoon to gently press the topping into the batter.
  • Bake 20 to 22 minutes, or until the topping is golden and a toothpick inserted in the center comes out clean.

sugar substitute for 2 tablespoons sugar
1/2 tsp salt
1 c skim milk

1/4 c vegtable oil
1 c fresh blueberries
cooking spray
1 tsp ground cinnamon

Steps:

  • 1. Combine flour, oats, baking powder, sugar substitute, and salt in a medium bowl, make a well in center of mixture.
  • 2. Combibe milk,egg, and oil; add to dry ingrediants, stirring just until moistened. gently fold in blueberries.
  • 3. spoon batter in muffin pans coated with cookin spray, filling 2/3 full. sprinkle cinnamon over muffins, and bake at 450f for 20 to 25 minutes or until lightly browned ummmmmm

1 teaspoon baking powder
1 cup vanilla fat-free yogurt
1 cup skim milk
2 egg whites, lightly beaten
2 tablespoons canola oil
2 tablespoons honey
2 teaspoons vanilla extract
1 cup fresh blueberries
1 cup pecan halves

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Mix oat flour, whole wheat flour, oat bran, hot cereal, cinnamon, allspice, and baking powder together in a bowl. Combine yogurt, milk, egg whites, canola oil, honey, and vanilla extract together in a separate bowl. Add yogurt mixture to flour mixture; stir to combine. Fold blueberries and pecans into batter.
