This Spanish chicken dish was a hit with me and my husband who love spicy food. This recipe tastes similar to buffalo wings, but without all the calories. The leftover chicken can be used chopped over salad greens too.

½ cup hot pepper sauce
1 cup reduced fat sour cream
½ cup ketchup
¼ cup honey
¼ teaspoon paprika
¼ teaspoon cumin
8 skinless, boneless chicken breast halves
¼ cup vegetable oil
2 cloves garlic, minced

Steps:

  • In a medium bowl, mix together the hot pepper sauce, sour cream, ketchup and honey until smooth. Season with paprika and cumin. Set aside half of the sauce for serving later, then place chicken breasts in the remaining sauce to marinate. Cover and refrigerate for at least 2 hours.
  • Heat vegetable oil in a large skillet over medium heat. Add garlic and cook until fragrant. Place chicken breasts coated with marinade into the skillet, and cook until nicely browned on each side, and meat is cooked through, about 20 minutes.
  • Meanwhile, heat reserved marinade in a small saucepan or in the microwave. Serve chicken breasts over white rice, or over salad greens with sauce spooned over the top.

DH loves this since it has intense flavor but not too hot for children. I adapted this recipe from the At Home with Family & friends cookbook from Cornerstone Television. Woody's restaurant in Pittsburgh, PA managed by the Antonelli brothers, make this recipe. Great served with crusty bread, rice, and a salad.

4 tablespoons olive oil
1 1/2 lbs chicken breasts, cut into 1 inch pieces
3 red bell peppers, sliced
8 -10 fresh mushrooms, sliced
4 cloves garlic, minced
2 cups beef stock
1 cup apple juice
1/2 cup crushed tomatoes or 1/2 cup tomato sauce
2 -3 banana peppers, cut into rings
3 tablespoons fresh parsley or 3 teaspoons dried parsley
salt and black pepper

Steps:

  • In large skillet, heat oil.
  • Add chicken and red pepper and saute for 5 minutes until chicken is tender.
  • Add mushrooms and saute for 3 additional minutes.
  • Add garlic, beef stock and cook for 3-5 minutes.
  • Add apple juice, tomatoes, banana peppers, and parsley.
  • Salt/pepper to taste.
  • Simmer low and uncovered until juices reduce and thicken.
  • You may also thicken the liquid with cornstarch or arrowroot powder.

3 tablespoons bacon grease or canola oil
2 tablespoons unsalted butter
3 Anaheim chiles, roasted, peeled, chopped
3 poblano chiles, roasted, peeled, chopped
2 red bell peppers, diced
2 jalapenos chiles, minced
2 yellow onions, diced
1 head garlic, minced
1 pound boneless chuck, trimmed and cut into 1/4-inch cubes
2 pounds ground beef, coarse grind
1 pound bulk Italian sausage
3 tablespoons chili powder
2 teaspoons cayenne pepper
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 teaspoons hot paprika
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
2 cups tomato sauce
1 cup tomato paste
12 ounces lager beer
1 cup chicken stock
Two 15.5-ounce cans kidney beans, with juice
Two 15.5-ounce cans pinto beans, with juice
Double-Fried French Fries, for serving, recipe follows
Saltine crackers, for garnish
1 bunch green onions, thinly sliced
1 cup shredded Cheddar
Four 4- to 5-inch-long russet potatoes
8 cups canola oil
1 tablespoon fine grain sea salt
1 teaspoon freshly ground black pepper

Steps:

  • Add the bacon grease and butter to a large stockpot over high heat. Add the Anaheim chiles, poblano chiles, red bell peppers, jalapeno chiles and onions, and cook until caramelized, about 5 minutes. Add the garlic and saute 1 minute longer. Add the chuck and brown, about 4 minutes. Add the ground beef and sausage and brown, stirring gently, trying not to break up the ground beef too much. Cook until the meat is nicely browned and cooked through, 7 to 10 minutes. Add the chili powder, cayenne, coriander, cumin, granulated garlic, granulated onion, paprika, salt and black pepper, and cook until fragrant, about 1 minute.
  • Add the tomato sauce and paste, and stir to caramelize, about 2 minutes. Stir in the beer and stock. Add the kidney and pinto beans; lower the heat and simmer, about 2 hours.
  • Serve the chili in bowls over Double-Fried French Fries and garnish with crackers, green onions and Cheddar.
  • Peel the potatoes on the sides, leaving the ends with the skin on. Cut the potatoes into 1/3-inch slices and then slice into 1/3-inch sticks.
  • Fill a large bowl with water and soak the potatoes, submerged, at least 30 minutes and up to 24 hours. This will help remove the excess starch from the potatoes and keep them from oxidizing.
  • Fit a heavy stockpot with a deep-fry thermometer and heat the oil to 325degress F.
  • Remove the potatoes from the water and pat dry to remove excess water. Carefully place two handfuls of potatoes into the hot oil. There should be at least 1 inch of oil above the potatoes. Parcook until the potatoes are light brown, 5 to 7 minutes. Remove the potatoes, gently shaking off the excess oil and let them drain on a rack. Repeat the process until all of the potatoes are parcooked.
  • Raise the heat of the oil to 350 degrees F. Cook the potatoes again, two handfuls at a time, until golden brown, about 2 minutes. Remove the potatoes from the oil, shake off the excess oil, place in a bowl and sprinkle lightly with salt and pepper. Repeat the process until all of the potatoes are cooked.

2 tablespoons lemon juice

Steps:

  • Bring a large pot of lightly salted water to a rolling boil. Cook the linguine at a boil, stirring occasionally, until the pasta is cooked through yet firm to the bite, about 11 minutes; drain.
  • Melt butter in a large skillet over medium heat. Cook and stir onion and jalapeno pepper in melted butter until tender, about 3 minutes. Add shrimp, tomatoes, and garlic; cook and stir until shrimp are opaque, about 2 minutes more. Pour white wine and lemon juice over shrimp mixture; continue cooking until the sauce thickens, 3 to 5 minutes. Serve over cooked linguine.

When you're feeling like something robust and spicy, a recipe with diablo in the title is a signal you need look no further. Tasty Latin American flavors and familiar ingredients such as pasta, black beans and sirloin steak marry well for an adventure at the dinner table.

2 slices bacon, cut into 1/2-inch pieces
1 medium onion, chopped (1/2 cup)
1 small green bell pepper, chopped (1/2 cup)
1 chipotle chili in adobo sauce, from 7-oz can, seeded and chopped
1 teaspoon adobo sauce from can of chipotle chilies
3/4 cup chili sauce
3/4 cup Progresso™ beef flavored broth (from 32-oz carton)
1 can (15 oz) Progresso™ black beans, drained, rinsed
6 cups uncooked mafalda (mini-lasagna noodle) pasta (12 oz)
1 beef boneless top sirloin steak, about 1 inch thick (1 1/2 lb)
1/2 teaspoon garlic pepper
1/2 teaspoon salt
1/4 teaspoon chili powder
1 avocado, peeled, pitted and sliced
2 tablespoons fresh cilantro leaves, if desired

Steps:

  • Cook bacon in 10-inch nonstick skillet over medium heat, stirring occasionally, until crisp. Stir in onion and bell pepper. Cook 2 to 3 minutes, stirring occasionally, until crisp-tender. Stir in chipotle chili and adobo sauce. Cook and stir 1 minute. Stir in chili sauce and broth. Heat to boiling; reduce heat. Simmer 5 minutes, stirring occasionally. Stir in beans; heat through.
  • Cook and drain pasta as directed on package.
  • While pasta is cooking, heat coals or gas grill for direct heat. Sprinkle beef with garlic pepper, salt and chili powder. Grill beef 4 to 6 inches from medium heat 8 to 12 minutes for medium doneness, turning once.
  • To serve, toss pasta with about 1 cup sauce. Cut beef across grain into thin slices; arrange over pasta mixture. Drizzle and serve with remaining sauce. Garnish with avocado and cilantro.

10 dried guajillo chilies, stemmed, seeded and deveined
3 garlic cloves
Olive oil
2 tablespoons fresh lemon juice
1 1/2 teaspoons Sriracha hot sauce
1/2 teaspoon chili flakes
Salt
Sugar
1 slice stale white bread, grated on box grater
1 tablespoon butter
1 garlic clove, smashed
Pinch dried thyme
1 chicken about 3 1/2 pounds, quartered
Salt
freshly ground pepper
1 cup plain yogurt
Olive oil
Fresh lemon juice
1 head frisée, chopped
1/2 head Treviso radicchio, sliced

Steps:

  • Make the guajillo vinaigrette: soak guajillo chiles in warm water to cover overnight. The next day, scrape chili from skin and chop ½ cup flesh, discarding skin. In small saucepan over very low heat, cook garlic in 1 tablespoon olive oil until soft. Remove garlic and mash to a paste; combine with chopped guajillo, ½ cup olive oil, lemon juice, Sriracha, chili flakes and salt and sugar to taste.
  • Make the bread crumbs: In small heavy skillet over low heat, cook bread crumbs in butter with garlic and thyme, stirring occasionally, until golden; discard garlic.
  • Prepare outdoor grill. Season chicken with salt and pepper and grill over medium coals (turning frequently) until cooked through, 30 to 45 minutes. Transfer chicken to platter and let rest 10 minutes. Cut breasts in half and split drumsticks from thighs; dress with guajillo vinaigrette.
  • Mix yogurt with olive oil, lemon juice, salt and pepper to taste; dollop on 4 plates. Arrange 2 pieces chicken on each plate. Toss frisée and radicchio with olive oil, lemon juice, salt and pepper to taste; mound next to chicken and sprinkle with bread crumbs.

12 cups corn oil, for deep frying
3/4 cup egg whites
4 quarters skinless chicken, boned and cut into 1/2-inch pieces
Garlic salt
Freshly ground black pepper
3 cups cornstarch
4 tablespoons minced garlic
1 teaspoon minced yellow onion
3/4 tablespoon minced green onion
Pinch dried crushed red pepper
Freshly ground black pepper
1/2 minced serrano pepper
1/2 minced jalapeno pepper
Pinch garlic salt
Pinch garlic powder
1/2 cup hot chili oil, divided
2 tablespoons sesame oil, divided
2 cups freshly chopped green onions

Steps:

  • In a Dutch oven or deep-fryer heat oil to 375 degrees F.
  • In a medium bowl, beat the egg whites with a handheld mixer until frothy. Place the chicken pieces into the egg whites, mixing until each piece is covered. Sprinkle with a pinch each of garlic salt and freshly ground black pepper and stir to distribute.
  • Dredge the chicken pieces in cornstarch, draining most of the egg white from chicken by picking up a handful and allowing the egg white to drain while moving to the cornstarch. Cover the pieces completely by turning in corn starch.
  • Pick up the chicken in handfuls and transfer from hand to hand to shake off most of the starch. If using a deep-fryer place the pieces into a fry basket. Lower into hot fry oil and shake basket after 10 to 15 seconds to make sure the pieces separate as they cook. Fry until the pieces float on top of the oil and are light brown, approximately 4 to 5 minutes. The chicken should appear somewhat dry, not oily, when the basket is lifted. If frying in a Dutch oven place pieces of chicken in hot oil and fry until light brown, about 5 to 7 minutes.
  • For the garlic mixture:
  • In a small bowl, add all the garlic mixture ingredients and toss to thoroughly combine.
  • Place 1 tablespoon of hot chili oil and 1 teaspoon of sesame oil into a hot wok or saute pan over medium to high heat. Immediately put 4 tablespoons of the garlic mixture and 1/3 cup chopped green onions into the oil, stirring with a spoon to lightly cook the garlic mixture, being careful not to brown. Add approximately 2 cups of the fried chicken and toss to cover with the sauce. Finish them with a pinch of garlic salt. Toss once more and serve. Repeat with the remaining chicken.

1 can Tomato puree (28 oz.)

1/2 ½ Stick Butter
2 teaspoons Salt

4 teaspoons Cumin
2 Cloves Garlic, minced
2 tablespoons Brown sugar

Steps:

  • Brown chicken breasts in hot oil, in large pot with 1 clove garlic, 1 teaspoon chili powder and 1 teaspoon cumin. Set aside. Cube when cool. In the same pot, saute, green peppers, onions remaining garlic, mushrooms and carrots in 1/2 stick of butter with 2 teaspoons of chili powder and 2 teaspoons cumin. AGAVE CHICKEN DIABLO

1/4 cup butter or margarine
1/2 cup agave
1/4 cup prepared mustard
1 teaspoon curry powder
1 teaspoon seasoned salt
3 pounds broiler-fryer chicken, cut into pieces

Steps:

  • In shallow baking pan, melt butter. Stir in agave, mustard, curry powder and salt. Add chicken and turn to coat all sides. Bake, skin side down, at 375°F for 30 minutes. Turn chicken pieces and baste. Continue cooking 15 to 20 minutes until chicken is tender and richly glazed. MICROWAVE VERSION: Melt butter in shallow glass or microwave roasting pan on high about 1 minute. Stir in agave, mustard, curry powder and salt. Add chicken pieces, placing skin side down. Place meatier pieces toward outside of pan. Cover with waxed paper. Cook on high 8 minutes. Turn skin side up and baste with sauce. Cover and cook on high 8 minutes longer. Uncover and cook on high 2 minutes. Let stand 5 minutes before serving.

2 lbs extra lean ground beef
1 cup onion, chopped
1 cup frozen corn kernels
1/2 cup smoked sausage, cubed
1/2 cup bacon, thick-sliced, cooked and crumbled
1 teaspoon garlic powder
2 tablespoons chili powder
1 (15 1/2 ounce) can bean medley, with juice
1 (15 1/2 ounce) can kidney beans, with juice
1 (15 1/2 ounce) can baked beans, with juice
3 cups stewed tomatoes, cut up
1 beef bouillon cube (or packet)
1/2 cup jalapeno pepper, chopped
2 tablespoons Worcestershire sauce
1/2 cup red bell pepper, chopped
1 tablespoon habanero sauce (Sudden Death or other)
1 tablespoon butter
1 teaspoon thyme

Steps:

  • In a large high sided electric skillet (or large stew pot) combine beef and sausage and brown over med-high heat (sausage should be just crispy on the outside and beef should be nicely browned, not grey).
  • Add onion when almost finished and cook until onions are tender.
  • Combine all dry ingredients and spices in a small bowl and set aside.
  • Add tomatoes and beans to skillet mixing well and bring to a slow boil.
  • Add spice mix and stir well, continuing to boil.
  • Add bacon, corn, peppers and remaining ingredients to chili and mix well.
  • Reduce heat to low simmer and cover.
  • Cook for 2 hrs, stirring occasionally.
  • Finished chili should be thick.

RUTH REICHL'S CHICKEN DIAVOLO

Ruth Reichl developed this crispy, spicy chicken after eating pollo alla diavola at Lupa restaurant in New York. The actual cooking time is short, but the recipe does require making the chile oil in advance and marinating the chicken. She suggests buying hot chile oil if you are in a hurry. Be careful; the chicken can produce a lot of smoke in cooking.

2 large jalapeño chiles
2 serrano chiles
3/4 cup olive oil, plus more for sautéing
2 tablespoons hot paprika (or equal parts cayenne and sweet paprika)
Ground black pepper
2 1/2 lemons
Salt
1 small chicken, quartered and backbone removed

Steps:

  • Make the chile oil: Chop jalapeño and serrano chiles and put them in a small saucepan with 3/4 cup olive oil. Add hot paprika and grind in a fair amount of black pepper. Steep over medium heat for about 15 minutes. Let sit overnight, or all day.
  • Strain chile oil into a large bowl. Slice 2 lemons and add them to the bowl. Season with salt. Coat chicken with the oil, put in a zip-top bag and let it sit in the refrigerator for at least 4 hours or up to a day.
  • Heat oven to 500. Heat a cast-iron skillet until it's quite hot (about 5 minutes). Meanwhile, remove the chicken from the chile oil and pat it dry. Sprinkle it with salt and shower it with pepper; you need a lot. Slick the bottom of the pan with olive oil and put the chicken, skin-side down, in the hot skillet. Cook until the skin is crisp and golden, 8 to 10 minutes. Turn the chicken skin-side up.
  • Put the skillet in the oven and roast about 20 minutes, or until a thermometer registers 170 degrees in the thickest part of the thigh. Sprinkle with juice from half a lemon, shower with more pepper and allow to rest 10 minutes before serving.
