I'm not sure where this recipe came from but it's one that my mom made all the time when I was growing up. It's now a regular at my house and it gets excellent reviews from everyone I've served it to...and the best part is the kids love it too!

1 egg
1 small onion, chopped
½ cup dill pickle juice
¾ teaspoon salt
¼ teaspoon ground black pepper
1 slice bread, torn into small pieces
1 pound lean ground beef
¼ cup chopped dill pickles
¼ cup ketchup
2 tablespoons water
1 tablespoon brown sugar
½ teaspoon Worcestershire sauce

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 8x8 inch baking dish.
  • Beat the egg in a mixing bowl. Whisk in the onion, pickle juice, salt, and pepper. Stir in the bread until soggy, then mix in the ground beef until evenly combined. Form into a loaf and place into the prepared pan. Stir together the chopped pickles, ketchup, water, sugar, and Worcestershire sauce; pour over the meatloaf.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

DILL MUSTARD PICKLES

I took a fabulous recipe (credit to Lali) and turned it into an extra sour pickle with a lot of kick. I made this in a clean (never-used) five gallon paint bucket with cheesecloth tied around top. It's how I make all my pickles, so my recipes are for very large quantities.

2 cups salt
2 gallons white vinegar
2 cups horseradish (I prefer Extra Hot)
1 1/2 cups minced garlic

4 gallons cucumbers (pickling)

Steps:

  • Scrub cucumbers and place in the above mixture.
  • If you wish to can these, place them in quart jars with brine in water bath for 10 minutes.
  • Let them set 10 days before eating.

25 fresh dill sprigs, or 8 Tablespoons dried dill seed
4 garlic cloves, peeled and sliced
2 quarts water
1 cup cider vinegar
1/2 cup sugar
1/3 cup salt
1 teaspoon mixed pickling spices

Steps:

  • Cut the ends off each cucumber and discard. Then cut each cucumber lengthwise into 4 spears. *see note for making whole pickles.
  • In a large bowl, combine cucumbers, dill and garlic; set aside.
  • In a large pan add the remaining ingredients. Bring to a boil stirring frequently and just until sugar is dissolved. Pour over cucumber mixture and allow it to cool completely.
  • Transfer pickles and brine to a covered dish/mason jars. Refrigerate for at least 24 hours before eating.

2½ lbs cucumbers ((weighed prior to peeling and seeding),peeled, center row of seeds removed, and finely diced)
1 large yellow onion (,finely diced)
1 small red bell pepper (,finely diced)
1 small green bell pepper (,finely diced)
3 cloves garlic (,finely minced)
¼ cup kosher or pickling salt ((neither of these have additives which is important to avoid when canning))
3 cups white vinegar
1/2 cup sugar ((optional or use less according to taste))
2 teaspoons dill seeds
1 tablespoon yellow mustard seeds
2 teaspoons celery seeds
1/2 teaspoon turmeric
2 bay leaves

Steps:

  • Place the diced cucumbers, onion, bell pepper, and garlic in a large mixing bowl. Combine with the salt and pour water over the mixture until covered. Let sit for at least 6 hours or overnight.
  • Drain the cucumber mixture in a colander, rinse thoroughly with water, and drain again.
  • In a large stock pot, add the sugar, vinegar, and spices and bring to a boil. Reduce the heat to medium-low and simmer for 5 minutes. Add the drained cucumber mixture and return to a boil. Reduce the heat to medium-low and simmer, uncovered, for 10 minutes. Discard the bay leaves.
  • Ladle the hot relish into hot sterile jars, leaving ¼ inch of headspace. Wipe the rims of the jars clean and seal tightly with the lids.
  • Process the jars in a boiling water bath for 10 minutes.
  • Sealed jars will store in a cool, dark place for a year. If the seal is broken, the relish will keep in the fridge for at least a month. Makes 4 pints (you can use pint-sized or half pint jars). Best eaten at least a week later after the flavors have had time to meld and the vinegar mellows out a bit.

12 to 14 Persian cucumbers or 8 to 10 pickling cucumbers
4 garlic cloves (halved)
2 teaspoons mustard seeds
2 teaspoons peppercorns
a few good-sized dill sprigs, per jar
2 cups water
2 cups distilled white vinegar
¼ cup cane sugar
2 tablespoons sea salt

Steps:

  • To make dill pickle spears, slice the cucumbers lengthwise into quarters. To make dill pickle chips, thinly slice them horizontally.
  • Divide the cucumbers among 4 (8-ounce) or 2 (16-ounce) jars. Divide the garlic, mustard seeds, peppercorns, and dill sprigs among each jar.
  • Heat the water, vinegar, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute. Let cool slightly and pour over the cucumbers. Set aside to cool to room temperature, then store the pickles in the fridge.
  • Pickle spears will be lightly pickled in 2 days, but their best flavor will start to develop around day 5 or 6. Pickle chips will be lightly pickled in 1 day, and will become more flavorful every day after that. Store in the fridge for several weeks.

8 pounds pickling cucumbers (big or small!)
1/2 cup non-iodized salt (I like this one)
2 teaspoons tumeric
2 medium onions, finely diced
1/3 cup organic sugar
2 tablespoons dill seed
1 tablespoon mustard seed
4 bay leaves
4 cups white vinegar

Steps:

  • Wash the cucumbers and peel if desired (I peeled about half of each one- I didn't mind leaving some of the peel on for color/texture, I just didn't want the peels to be overwhelming.)
  • Finely chop the cucumbers- I used the blade of my food processor, but I was careful to not overprocess and end up with cucumber puree.
  • Put the chopped cucumbers in a large bowl and mix in the salt and turmeric. Pour water over the cucumbers until they are completely covered and let them soak for 2-3 hours.
  • After the soaking period is complete, drain the cucumbers and rinse them under cool water. I used a fine-mesh sieve for this.
  • Placed the drain cucumbers in a stockpot and add in the chopped onions, sugar, dill, mustard seed, bay leaves, and white vinegar.
  • Bring this mixture to a boil, then reduce the heat and simmer for 10 minutes.
  • At this point, I like to taste the relish to check the flavor balance and adjust accordingly. Add more sugar if you feel the vinegar is too strong.
  • Remove the bay leaves.
  • Ladle the relish into hot pint jars with 1/4″ headspace. Affix lids and rims, then process pints in a hot water bath canner for 15 minutes. (Altitude Note: Add an additional one minute of processing time for every 1000 feet you're above sea level.)
