Steps:
- Preheat the oven to 350˚. Whisk the eggs, 1/4 cup yogurt, the dill, turmeric, 1/2 teaspoon salt and a few grinds of pepper in a large bowl. Heat 3 tablespoons olive oil in an 8-inch ovenproof nonstick skillet over medium heat. Add the scallions and cook, stirring, until softened, about 30 seconds. Pour in the egg mixture. As the edges start to set, scrape them with a rubber spatula and push the cooked egg toward the middle of the pan. Continue doing this until the eggs are about half cooked, 2 to 3 minutes, then stop stirring and let the edges set, about 30 seconds. Sprinkle the feta on top.
- Transfer the skillet to the oven and bake until the frittata is set and just a little soft in the middle when pressed, 13 to 15 minutes. Let cool in the skillet for a few minutes, then slide out onto a cutting board.
- Meanwhile, slice the cucumbers and toss with 1/4 teaspoon salt in a medium bowl. Let sit 5 minutes, then drain off any liquid. Stir in the remaining 1/4 cup yogurt and the lemon juice. Season with salt and pepper.
- Warm the pitas in the oven, about 3 minutes; tear into quarters. Cut the frittata into wedges and divide among plates along with the cucumber salad and pita. Top the cucumber salad with the remaining 1 tablespoon olive oil and the pomegranate seeds.

PICKLED ASPARAGUS WITH DILL
Pickled asparagus is delicious, and this recipe was given to me by my best friend, Carole. We get our asparagus in the spring from the Yakima Valley in central WA. Use the freshest dill you can find and pack the spears in quart jars making sure all spears are covered with pickling juice. These are great with salads, in cocktails, or served as a snack. Check out the price at the grocery store. You'll be glad you made your own.

- Rinse the asparagus and pat dry. Trim off and discard the tough ends (remove the bottom 2 inches or so.) Cut each remaining stalk into three equal pieces.
- Pre-cook the asparagus until it's crisp tender (you will finish it by sautéeing it afterward). You can pre-cook the asparagus by steaming it for about 15 minutes (place a couple inches of water in your bottom pot, bring it to a boil, then place the asparagus in the steamer basket on top and cover it.) OR - You can cover the bottom of a skillet with water, let that come to a boil, and cook the asparagus in it.
- While the asparagus is cooking, beat your eggs with a fork or whisk in a small mixing bowl and add the black pepper, whisking it in. Peel and press your garlic (if you have a garlic press) or mince it with a knife. Grate your cheeses (I cut mine into chunks and whirl them in the blender.) Set out two spare round pans or platters that will be used later for inverting the frittata.
- When the asparagus is crisp-tender, heat 1 tablespoon of olive oil in a 12-inch skillet over medium high heat and add the garlic, stirring it around. After about 30 seconds, add the asparagus and stir it to coat it with olive oil. Let the asparagus finish cooking until you can easily insert a fork in it, stirring occasionally to make sure the garlic doesn't burn, and lowering the heat if necessary.

- In a medium size frying pan (the best non stick you have) add 2 tablespoons olive oil, the chopped asparagus, onion, pancetta (if using), salt, parsley and water, mix, cover and cook on low to medium heat until asparagus is tender and water has evaporated, (using a fork coarsely mash the asparagus mixture).
- In a small bowl add the eggs and beat well with a fork (this should be done just before adding to the asparagus mixture). Add egg mixture to the hot asparagus mixture, and with a wooden spoon mix to combine. Let cook for approximately 10 minutes (moving the frying pan back and forth to make sure the egg doesn't stick, or cheat like I did and with a plastic spatula carefully lift frittata on all sides and underneath to unstick). Using a large dish place it over the frying pan and flip the frittata onto the plate
- Drizzle a little olive oil onto the frying pan and slide the frittata back into the frying pan, cook for approximately another 10 minutes. Serve immediately. Enjoy!
