GRILLED AUBERGINE WITH CREAMY DRESSING
A delicious grilled aubergine dish, finished with a creamy dressing, ready in 5 minutes

Steps:
- Heat a griddle pan or grill. Brush each aubergine slice with olive oil. Cook in batches for 2-3 mins, turning once, until softened and lightly charred. Arrange on a serving platter and season with pepper.
- To make the dressing; whisk the remaining ingredients until well combined and season to taste. Drizzle over the grilled aubergines, then serve at once.

GRILLED VEGETABLE ANTIPASTO WITH HERBED CHEVRE AND CROSTINI

Steps:
- Grilled Vegetable Antipasto:
- 1. Brush the grill grates lightly with the safflower oil. Prepare a hot fire on a gas or charcoal grill.
- 2. Whisk together the olive oil, vinegar, and basil in a small bowl until well blended. Brush the zucchini, yellow squash, onion, red bell peppers, and scallions with the olive oil mixture. Place the vegetables on the hot grill and cook 3 to 4 minutes per side until crisp-tender. Season with salt and pepper.
- 3. Soak the sun-dried tomatoes in 1 cup hot water, covered, about 5 minutes or until softened. Drain and set aside. (Note: Eliminate this step if you are using sun-dried tomatoes packed in oil.)
- 4. Arrange the grilled vegetables, sun-dried tomatoes, and sliced tomatoes on individual plates or a serving platter. Add a slice of chevre on the side of the vegetables. Drizzle the vegetables with the vinaigrette, and drizzle a little more vinaigrette around the place. Garnish with the parsley and basil. Season with additional salt and pepper, if desired, and serve with crostini.
- Crostini:
- Makes 25 to 30 crostini
- 1. Preheat the oven to 400 degrees
- 2. Slice the bread on a slight angle into 1/4-inch-thick slices and place on a baking pan in a single layer.
- 3. Mix together the olive oil, butter, parsley, dill and pepper in a small bowl.
- 4. Brush one side of each piece of bread with the butter mixture and sprinkle with the salt. Toast in the oven 10 to 15 minutes, until golden brown and crunchy.
- 5.Let cool completely, then store in an air-tight container up to 1 week.
- Herbed Balsamic Vinaigrette:
- 1. Combine the vinegar, lemon juice, herbs, and pepper in a small bowl and stir to mix.
- 2. Slowly add the olive oil and the canola oil and whisk until all the oil is incorporated. Refrigerate in an air-tight container until ready to use or up to 1 week.
- Herbed Chevre:
- 1. Mix the parsley and pepper together on a plate. Roll the chevre log in the mixture, pressing lightly so the seasonings adhere. Wrap in plastic wrap and chill 1 to 2 hours.
- 2. Remove the log from the refrigerator and unwrap. Cut into 1-inch slices with string, dental floss, or wire. Keep refrigerated until ready to serve

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Brush eggplant lightly with olive oil on both sides. Stir together remaining olive oil, garlic, and salt in a small bowl.
- Arrange eggplant slices on the preheated grill and cook, turning occasionally, until tender and browned, 3 to 4 minutes per side.
- Arrange grilled eggplant on a platter. Brush with the olive oil and garlic mixture until eggplant has absorbed the oil. Sprinkle with the chopped basil and parsley and serve.

- Quarter the sweet peppers lengthwise. Remove and discard the stems, seeds and membranes.
- Brush eggplant slices with oil, grill eggplant slices and sweet pepper quarters on the rack of an uncovered grill directly over medium hot coals for 4 minutes, or broil.
- Turn and grill 3 to 5 minutes more or till eggplant slices are tender and sweet peppers are slightly charred.
- Remove veggies from grill,set aside.
- Spread one side of each French bread slice with goat cheese and mustard.
- Layer three eggplant slices and two sweet pepper quarters on each of four bread slices.
- Top with remaining bread slices.
- Serve warm.

GRILLED AUBERGINE WITH CHEVRE
This is an adaptation from a menu selection we enjoyed at the National Arts Centre in Ottawa,Canada. Basically it is grilled eggplant with goat cheese. But it is the balsamic wash with herbs which provide flavour, with the grilling providing texture. This may be made in either luncheon or dinner size, and is usually served with a small side-salad of mixed greens in a raspberry vinaigrette. Wine match; chardonnay or reisling, very cold. Easy to prepare.

Steps:
- Lightly salt each side of eggplant slices. Put to rest in a colander for about 15 minutes, then scrape the sweat from the eggplant.
- Combine olive oil, balsamic vinegar, basil and rosemary. Use a silicone or pastry brush to apply to one side of eggplant slices.
- Put the eggplant slices under a broiler, about 4 inches from the element, until lightly brown. Turn the slices over, apply the balsamic wash to the second side, and put under the broiler. When the tops turn light brown, remove from broiler and quickly add rounds of goat cheese, top with bread crumbs and return to broiler until the cheese puffs up and the breadcrumbs are toasted brown.
- Remove to serving plates; add a spring of fresh rosemary if desired. Add salad, and serve, leaving the rind.

- To make the masala sauce, mix together the cumin, coriander, turmeric, salt, red chilli powder, tahini, cashews, honey, coriander leaves, sesame seeds, lime, rapeseed oil and water in a small mixing bowl. The masala mix should be a paste the consistency of honey that you can layer onto the aubergine.
- Slice each aubergine lengthways into 4 slices, each about 1cm (⅓ inch) thick. Place 15ml (1 tbsp) of coconut oil in a large frying pan over a lower heat. Once the oil was melted, place half the slices of aubergine in the pan and sprinkle a little salt over the top.
