PERFECT BRUNCH PIE

3/4 cup chopped kalamata olives
1/4 cup chopped garlic-stuffed green olives
1/2 cup chopped plum tomatoes
2 tablespoons chopped scallion
2 tablespoons chopped red onion
1/2 cup chopped white mushrooms
3 cloves garlic, minced
1/2 cup chopped marinated artichoke hearts
1/2 cup shredded sharp cheddar cheese
1/2 cup crumbled feta cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh thyme
4 large eggs
1/2 cup reduced-fat milk
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
10 sheets frozen phyllo dough, thawed

Steps:

  • Preheat the oven to 350 degrees F. Mix the kalamata and green olives, the tomatoes, scallion, onion, mushrooms, garlic and artichoke hearts in a large bowl. Stir in both cheeses, the basil, oregano and thyme; set aside, 20 minutes. Meanwhile, beat the eggs, milk, and salt and pepper to taste in another bowl.
  • Brush a 10-inch glass or ceramic pie dish with some of the butter. Stack 6 sheets of phyllo dough (keep the rest covered with a damp towel) and cut the stack into a 12-inch round with a paring knife. Place 1 phyllo round in the prepared pie dish and brush with butter; continue to layer the remaining 5 phyllo rounds in the dish, brushing each piece with butter before adding the next.
  • Spread the olive mixture evenly in the phyllo-lined dish, then pour in the egg mixture. Cut the remaining 4 phyllo sheets into 10-inch rounds. Layer on top of the pie, brushing each piece with butter before adding the next.
  • Bake until the top is golden and a knife inserted in the middle comes out clean, about 1 hour. Let rest 10 minutes before slicing.

Pastry for single-crust pie (9 inches)
1/2 pound bulk pork sausage
3/4 cup shredded part-skim mozzarella cheese
4 eggs, lightly beaten
1 cup half-and-half cream
1 can (4 ounces) mushroom stems and pieces, drained
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
2 tablespoons chopped onion

Steps:

  • Line a 9-in. deep-dish pie plate with pastry. Trim to 1/2 in. beyond edge of plate; flute edges. Line pastry shell with a double thickness of heavy-duty foil. Bake at 400° for 5 minutes. Remove foil; bake 5 minutes longer., In a small skillet, cook sausage over medium heat until no longer pink; drain. Spoon sausage into crust; sprinkle with cheese. In a small bowl, whisk the eggs, cream, mushrooms, peppers and onion; pour over cheese. , Bake at 375° for 40-45 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

1/2 cup tomato sauce
1/2 cup soft bread crumbs
1/4 cup chopped onion
1/4 cup chopped green pepper
1-1/2 teaspoons salt
1/4 teaspoon pepper
1/8 teaspoon dried oregano
1 pound lean ground beef (90% lean)
FILLING:
1-1/2 cups tomato sauce
1-1/3 cups instant rice
1 cup shredded cheddar cheese, divided
1 cup water
1/2 teaspoon salt

Steps:

  • In a large bowl, combine the first seven ingredients. Crumble beef over mixture and mix well. Press onto the bottom and up the sides of a greased 10-in. pie plate., In a bowl, combine the tomato sauce, rice, 1/2 cup cheese, water and salt. Spoon into meat shell. Cover and bake at 350° for 25 minutes. Uncover; sprinkle with remaining cheese. Bake 15-20 minutes longer or until cheese is melted. Let stand for 15 minutes before cutting.

1 (1 ounce) package dry onion soup mix
1 (8 ounce) can tomato sauce
½ onion, chopped
1 cup dried bread crumbs, seasoned
½ teaspoon dried oregano
½ cup shredded Cheddar cheese
1 ⅓ cups instant rice
1 cup water
1 ½ cups tomato sauce
½ teaspoon dried oregano
¼ teaspoon dried basil
¼ teaspoon dried rosemary
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine ground beef, onion soup mix, 8 ounces tomato sauce, chopped onion, bread crumbs, 1/2 teaspoon oregano, and 1/2 cup shredded cheese. Mix thoroughly and press into a 9 inch pie plate.
  • In a medium bowl, combine instant rice, water, 1 1/2 cups tomato sauce, 1/2 teaspoon oregano, basil, and rosemary. Mix well and pour over meat layer. Cover with aluminum foil.
  • Bake in preheated oven for 30 minutes. Remove foil and sprinkle top with remaining 1/2 cup Cheddar cheese. Return pie to oven for an additional 10 minutes. Let stand 5 minutes before cutting.

1 frozen pie crust
8 ounces pork sausage, browned and Drained
1 cup frozen southern style hash brown potatoes, thawed
1/4 cup sliced green onion
1/4 cup red pepper, chopped
1/4 cup sharp cheddar cheese, Shredded
4 large eggs
1/4 cup milk
1/4 teaspoon seasoning salt
1/4 teaspoon fresh coarse ground black pepper

Steps:

  • Preheat oven to 375°F.
  • Place crust on baking sheet.
  • Sprinkle sausage around bottom of crust.
  • Top with potatoes, onions, bell peppers and cheese.
  • Beat eggs, milk, salt and pepper until blended; pour over sausage-potato mixture in crust.
  • Bake 30 minutes or until egg mixture is cooked and crust is lightly browned.
  • Sprinkle with additional cheese and peppers, if desired.
  • Makes 6 servings.

Found this in a Pillsbury Pot Pie recipe book. OMG this is good! Great for breakfast or brunch. I am listing the entire recipe for 8 people, but since it was just two of us I cut the recipe in half. Great way to get rid of leftover ham!

3 tablespoons vegetable oil
1 (20 ounce) bag refrigerated shredded hash browns
1 cup shredded cheddar cheese or 1 cup swiss cheese
8 eggs
1 tablespoon fresh chives
1/2 teaspoon salt or 1/2 teaspoon salt substitute
1/4 teaspoon ground pepper
1 1/2 cups cubed cooked ham
3 ounces cream cheese, cut into small cubes
1 (8 count) Pillsbury Refrigerated Crescent Dinner Rolls

Steps:

  • Heat oven to 375. Spray an 11x7 inch glass baking dish (2 Quart) with cooking spray. Cook hashbrowns according to the directions on the package. Remove hashbrowns and arrange in the bottom and around sides of casserole dish. Sprinkle cheese over potatoes.
  • In a bowl beat eggs. Stir in chives salt pepper and ham. Cook and stir over medium heat until partially cooked. Stir in cream cheese, cook and stir until eggs are cooked but moist. Spred over cheese and potatoes.
  • Seperate crescent rolls into triangles and roll half way. Arrange over eggs with tips in the center.
  • Bake 20-25 minutes or until crust is golden brown.

1 1/2 cups Swiss cheese, grated
1/4 cup red or green pepper, chopped
2 teaspoons onions, chopped
4 eggs, lightly beaten
1 cup light cream

Steps:

  • Spray 9 x 13 inch pan with Pam. Layer in order. Set at least 8 hours or overnight. Can be frozen. Better if you let it set and freeze unbaked. Bake at 350 degrees for 45 minutes to 1 hour. Makes great holiday breakfast!

1/4 teaspoon ground pepper. Preheat oven to 375 F. Place crust on baking sheet. Sprinkle sausage around bottom of crust. Top with potatoes, onions, bell peppers and cheese. Beat eggs, milk, salt and pepper until blended; pour over sausage-potato mixture in crust. Bake 30 minutes or until egg mixture is cooked and crust is lightly browned.
