WONTON SOUP DINNER

Number Of Ingredients 10

2 tablespoons vegetable oil
2 cloves garlic, finely grated with a rasp
1 tablespoon fresh ginger, grated with a rasp
3 scallions, thinly sliced, greens and whites separated
4 ounces shiitake mushrooms, sliced
5 cups chicken bone broth or low-sodium chicken broth
4 heads baby bok choy, quartered lengthwise
2 tablespoons soy sauce
One 12-ounce package frozen wontons (about 20)
Kosher salt

Steps:

  • In a medium pot or Dutch oven, heat the vegetable oil over medium heat. Add the garlic, ginger and white parts of the scallions and cook, stirring frequently, until fragrant, 1 to 2 minutes. Add the shiitakes and cook until they begin to soften, another minute.
  • Add the bone broth and bring to a boil. Add the bok choy and simmer, stirring occasionally, until the bok choy is tender, 4 to 5 minutes. Add the soy sauce and stir. Add the wontons and cook until they are cooked through, 2 to 3 minutes. Taste and season if necessary.
  • Ladle into bowls, then top with the scallion greens. Serve immediately.

TURKEY BREAST PICCATA

2 large eggs
2 cups panko breadcrumbs
2 tablespoons grated Parmesan
1 pound skinless turkey breast meat, sliced into five to six 1/4-inch-thick pieces and pounded a little thinner
Kosher salt
2 to 3 tablespoons unsalted butter
2 to 3 tablespoons extra-virgin olive oil
2 tablespoons capers plus 2 tablespoons caper brine
Zest and juice of 1 large lemon
1/2 cup tightly packed fresh flat leaf parsley leaves

Steps:

  • Fit a sheet tray with paper towels and a rack and set aside.
  • Crack the eggs into a bowl. Add a splash of cold water and whisk to blend. In another bowl, combine the breadcrumbs and cheese. Sprinkle the turkey slices on both sides with salt and dip each thoroughly in the eggs, then thoroughly in the breadcrumbs. Place the turkey cutlets in a single layer on a baking sheet.
  • In a large skillet, heat the butter and olive oil over medium heat until the butter begins to froth. Add the turkey in a single layer and cook on the first side until golden brown, 3 to 4 minutes. Gently turn on its second side and cook until cooked through, an additional 2 to 3 minutes. Remove with tongs to the rack to drain slightly. Repeat with the remaining turkey.
  • In the skillet where the turkey was cooked, add the capers, caper brine, lemon zest and juice. Simmer the sauce for 1 minute, stirring to catch all the bits of cooked meat and breadcrumbs. Remove to a bowl and add the parsley leaves, then spoon the sauce over the turkey.

MOM'S DINNER ROLLS

Freshly baked dinner rolls are always tasty and this recipe makes an excellent dough. These are tender, fluffy yeast rolls. Or, you can smear the dough with softened butter, cinnamon, and sugar to make yummy cinnamon rolls. It's a classic recipe you'll use over and over. Easy to make, skip buying the frozen rolls and try these yeast dinner rolls the next time you want fresh bread.

1 1/2 cup(s) milk, 2%
1 stick(s) butter
1/2 cup(s) water (very warm)
1 1/2 tablespoon(s) active dry yeast
1/2 cup(s) sugar
2 - eggs
2 teaspoon(s) salt
5 1/2 -6 cup(s) bread flour
2 tablespoon(s) melted butter (for brushing on baked rolls)

Steps:

  • In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
  • In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
  • When the yeast is bubbly, add 1 cup flour and beat well.
  • Then add eggs, salt, and another cup flour. Beat well.
  • Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
  • Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
  • Work until the dough is only slightly sticky.
  • Set in a warmed oven covered by a tea towel, to rise.
  • When the dough is doubled in size, remove from oven.
  • Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
  • When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
  • When out of the oven, brush with melted butter.

We've tried a lot of dinner rolls and these are fantastic yeast rolls. They are fluffy, tender, and you won't be able to stop eating them. The balance of the buttery flavor and a slight sweetness is perfect. This recipe makes 12 rolls. You could make the rolls smaller and get more out of them, but we loved the size of these dinner rolls.

Number Of Ingredients 7

1 1/2 cup(s) water, between 110-115 degrees F
1/3 cup(s) butter, room temperature
4 1/2 cup(s) all-purpose flour, plus more for dusting
1/2 cup(s) brown sugar
1 1/2 teaspoon(s) salt
2 teaspoon(s) yeast
melted butter, optional for brushing on top after baking

Steps:

  • If using a bread machine: Place all ingredients in the pot in the order given. Set to Dough setting.
  • If making by hand: Make sure butter is soft. Dissolve yeast in warm water and combine the dry ingredients in a mixing bowl.
  • Make a well in the center of the dry ingredients. Place the room temperature butter in the center of it and pour the warm water and yeast mixture. Allow it to set for a few minutes for the butter to slightly melt.
  • Mix until all of the ingredients are incorporated and dough forms.
  • Flour the counter so that you can knead dough without it sticking. Knead for 10-15 mins making sure to mix the ingredients well.
  • Place dough in a greased bowl and cover with a towel. Make sure it is in a draft-free place. Let rise to double the size.
  • Once the dough has doubled in size, punch down and make 12 round golfball size buns and place in a greased 13x9. Cover and let rise again. Bake at 350 for 25 mins.
  • I brush mine with butter as soon as they come out of the oven.
