GARLIC-ONION DINNER MUFFINS
This muffin makes a perfect bread accompaniment for steaks and roast. The recipe comes from " A taste of Cuba" and was sent to me.

Steps:
- Heat oven to 400°F.
- In a large bowl, mix flour, baking powder, salt and sugar.
- In a small bowl, mix together egg, milk, garlic and onion.
- Make a well in the center of dry ingredients and pour in the egg mixture and melted butter.
- Mix together using as few strokes as possible.
- DO NOT OVER BEAT--the batter should have small lumps in it.
- Pour into 12 paper-lined muffins tins, filling about 2/3 full.
- Bake 20 minutes or until muffins begin to turn golden on top.
- Test for doneness with a toothpick which should come out clean.
- Remove from tins and cool slightly before serving.
DINNER MUFFINS
This is a delicious muffin recipe. My children LOVE the jam on top as an extra treat. My husband enjoys these muffins as well although he prefers to omit the jam for a nice slice of butter. They are also lovely to have for breakfast.

- Mix dry ingredients in bowl.
- Mix milk, egg and oil.
- Add all at once to dry ingredients. Stir quickly just until dry ingredients are moistened.
- Fill greased muffin tins 1/3 full. Place a drop of jam on top of each muffin.
- Bake at 400 for 12-15 minutes.

- Heat oven to 400°F (375°F for dark or nonstick pan). Line large cookie sheet with cooking parchment paper; set aside.
- In medium bowl, stir muffin tops mix, water, oil and egg just until blended (batter will be thick). Stir in apple.
- Drop batter by rounded tablespoonfuls about 2 inches apart onto lined cookie sheet. Bake 10 to 13 minutes or until edges are golden brown. Immediately remove from cookie sheet to cooling rack. Cool completely before drizzling.
- Squeeze pouch of glaze (from box) about 15 seconds (do not microwave). Cut off tip of 1 corner of pouch. Drizzle glaze over muffin tops. Sprinkle with cinnamon. Store in airtight container at room temperature.

Steps:
- Smash bananas into zucchini to equal 2 1/2 cups, (there should be a few lumps of banana).
- Add Sugar and eggs.
- Mix in melted butter.
- In separate bowl combine dry ingredients.
- Add dry to wet and mix until incorporated.
- Fill buttered and floured muffin cups 3/4 full.
- Bake in 350 oven 20-30 minutes or until toothpick comes clean.
- Let rest for 2 minutes.
- Remove from pan to cooling racks.
