Kosher salt
1 1/2 cups ditalini
1 shallot, minced
2 teaspoons fresh thyme
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup low-sodium chicken broth
1 cup milk
Freshly ground pepper
2 cups shredded rotisserie chicken
1 10-ounce package frozen chopped spinach, thawed and squeezed dry
1 cup shredded gruyère cheese
Toasted breadcrumbs, for topping

Steps:

  • Bring a pot of salted water to a boil. Add the pasta and cook as the label directs, then drain.
  • Meanwhile, melt the butter in a large saucepan over medium heat. Add the shallot and thyme and cook until softened. Whisk in the flour and cook, whisking, for 2 minutes, then whisk in the broth and milk. Season with 1/2 teaspoon salt and a few grinds of pepper. Cook, whisking, until thickened, about 5 minutes.
  • Stir in the chicken, spinach and pasta and cook to heat through. Stir in the gruyère and season with salt and pepper. Divide among 4 bowls and top with toasted breadcrumbs.

200 grams broken up pieces of various pasta shapes
60 grams extra-virgin olive oil
1 stalk celery, coarsely chopped
1 onion, coarsely chopped
2 potatoes, boiled, peeled and coarsely chopped
120 grams provolone del Monaco, aged 6 months
1 sprig rosemary

Steps:

  • In a pot of salted boiling water, cook the pasta for 5 minutes.
  • In a medium saucepan, heat the oil, then add the celery and onions and saute until the onions are translucent. Add the potatoes and enough water to just cover, about 1 cup. Add the pasta and cook until the mixture is thick, about 15 minutes. Taste and adjust the seasoning.
  • Cut four thin slices from the provolone and grate the rest. Add the grated provolone to the potatoes and pasta and mix well. Plate the pasta and potatoes in two bowls and garnish with each with two provolone slices and a small piece of rosemary.

5 potatoes, peeled
2 teaspoons salt
1 teaspoon pepper
8 slices ham
7 slices mozzarella cheese
5 slices bacon, cooked and crumbled
¼ cup fresh parsley, chopped
2 cups shredded mozzarella cheese
1 cup heavy cream
2 eggs

Steps:

  • Slice the peeled potatoes into ¼ inch (½ cm) slices.
  • Season the potatoes with salt and pepper, tossing them to make sure they're coated evenly.
  • Press a layer of potatoes evenly into the bottom of a greased, square baking pan.
  • Place half of the ham slices evenly on top of the potatoes, followed by half of the sliced cheese.
  • Follow with another layer of potatoes, then the remaining ham and sliced cheese.
  • Preheat oven to 350°F (180°C).
  • Sprinkle the bacon and parsley evenly on top of the sliced cheese, and place one final layer of potatoes on top.
  • Sprinkle the shredded cheese on top of the potatoes, then press it into an even layer.
  • In a small bowl, mix the heavy cream and eggs. Pour on top of the shredded cheese.
  • Bake for about 40 minutes, until the cheese is a deep golden brown.
  • Cool slightly, slice, then serve!

The 200-year-old L'Europeo, one of the best restaurants in Naples, serves the most delicious rendition of a favorite Neapolitan dish-pasta, patate, e provola. You can probably translate this yourself: pasta, potatoes, and provola cheese-the kind of cheese we usually call "provolone." All varieties of provola (there are many) are pulled-curd cheeses, like mozzarella, but after they are formed into pear shapes they are hung to dry, and sometimes smoked. Neapolitans have strong opinions on what makes a good dish of pasta, patate, e provola. As prepared by my Neapolitan friend Bruno di Rosa's mother, Rita, it is considered a soup and eaten with a spoon. At L'Europeo it was definitely a pasta, dense and cheesy and full of flavor-with all the comforts of baked macaroni and cheese.

Number Of Ingredients 10

6 tablespoons extra-virgin olive oil
1 cup chopped bacon, in 1/4-inch pieces
1 onion, chopped (about 1 cup)
4 cups russet potatoes, peeled and cut in 1/2-inch cubes
1/2 teaspoon sea salt or kosher salt, plus more for the pasta pot
1 pound ditalini
1 cup seeded and diced fresh tomato
8 ounces smoked provola or mozzarella, in 1/2-inch cubes
1/2 cup freshly grated Parmigiano-Reggiano
A heavy-bottomed skillet or sauté pan, 12-inch diameter or larger

Steps:

  • Put 4 tablespoons of the olive oil and the chopped bacon in the big skillet and set over medium-high heat. Stir and cook for 3 or 4 minutes, to render bacon fat. Stir in the chopped onion, and cook until it is sizzling and wilting, about 3 minutes. Spill in the cubed potatoes, toss well in the fat, then spread them in the pan. Season with the salt, and cook, tossing and turning the potatoes frequently, for another 3 or 4 minutes, until the cubes are lightly crisped all over.
  • Pour in 4 cups water, stir everything around, and scrape up any crust on the skillet bottom. Bring the water to a gently bubbling boil and cook, stirring frequently, for about 20 minutes, until the potatoes are cooked. The soup (or sauce, depending on your point of view) should reduce so it barely covers the potato cubes.
  • Meanwhile, bring 6 quarts of salted water to the boil in a pasta pot. After the potatoes have cooked for about 10 minutes, drop the ditalini into the pot and cook al dente. Drain the ditalini, and stir into the thickened potato soup/sauce. Stir in the remaining 2 tablespoons olive oil, and simmer the pasta e patate together for another 3 minutes or so, to an even denser consistency.
  • Stir in the diced tomatoes, cook for a minute, and adjust salt to taste. Turn off the heat, scatter the cubed provola all over, and stir into the pasta e patate continuously as it melts into threads. Finally, stir in the grated cheese. Serve immediately, in warm bowls.

1/4 teaspoons crushed red pepper flakes
1/2 cup olive oil, divided
Kosher salt
2 tablespoons tomato paste
2 15-ounce cans chickpeas, rinsed
1 pound ditalini or elbow macaroni
1 tablespoon chopped fresh rosemary

Steps:

  • Pulse onion, carrot, celery, whole garlic cloves, parsley, and red pepper flakes in a food processor until finely chopped; transfer to a small bowl and set aside. Wipe out food processor bowl and set aside.
  • Heat 1/4 cup oil in a large heavy pot over medium heat; add reserved vegetable mixture, season with salt, and cook, stirring often, until golden, 8-10 minutes. Stir tomato paste and 1 cup water in a small bowl to combine; add to pot. Cook, scraping up any browned bits from bottom of pot. Bring to a boil, reduce heat, and simmer until liquid has almost evaporated, 5-8 minutes.
  • Add chickpeas and 2 cups water to pot and simmer for 15 minutes to let flavors meld. Transfer 1 cup chickpea mixture to food processor; purée until smooth, then stir back into sauce to thicken.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente. Drain pasta, reserving 1 1/2 cups pasta cooking liquid. Add pasta and 1/2 cup pasta cooking liquid to sauce and stir to coat. Increase heat to medium and continue stirring, adding more pasta cooking liquid as needed, until sauce coats pasta.
  • Heat remaining 1/4 cup oil in a small saucepan over medium-low heat; add chopped garlic and rosemary and cook until sizzling stops, about 1 minute. Divide pasta among bowls and drizzle with garlic-rosemary oil.
