PISTACHIO QUICK BREAD



Pistachio Quick Bread image

I love making many of these special loaves to give away for the holidays. They also freeze well so it is easy to pull out for unexpected guests. -Judy Fischer, Green Bay, Wisconsin

Provided by Taste of Home

Time 55m

Yield 2 loaves (12 slices each).

Number Of Ingredients 8

1 package white cake mix (regular size)
1 package (3.4 ounces) instant pistachio pudding mix
4 large eggs, room temperature
1 cup sour cream
1/4 cup water
1/4 cup canola oil
1/3 cup sugar
3/4 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine cake and dry pudding mixes. Add the eggs, sour cream, water and oil; beat until blended (batter will be thick). , Combine sugar and cinnamon. Spoon half of the batter into 2 greased 8x4-in. loaf pans; sprinkle each with 2 tablespoons cinnamon sugar. Spread with remaining batter; sprinkle with remaining cinnamon sugar. , Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

This is a very quick, easy bread, and is also very moist.

1 (18.25 ounce) package yellow cake mix
4 eggs
¼ cup vegetable oil
2 tablespoons water
1 (3 ounce) package instant pistachio pudding mix
1 cup sour cream
½ cup maraschino cherries
½ teaspoon green food coloring
½ teaspoon ground cinnamon
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 x 5 inch loaf pans.
  • Mix together cake mix, eggs, oil, water, pudding mix, sour cream, cherries, and food coloring. Pour into prepared pans. In a small bowl, stir together cinnamon and sugar. Sprinkle tops of loaves with mixture.
  • Bake for 45 minutes. Cool.

1/2 cup plain yogurt
1/2 cup whole wheat flour
1/2 cup almond flour
1 teaspoon baking powder
1 teaspoon ground nutmeg
1 teaspoon black pepper
1 teaspoon ground thyme
6 ounces smoked bacon, diced very small
3 ounces salted roasted pistachios

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the eggs and yogurt in a mixing bowl. Add in the two flours and the baking powder.
  • Add the spices, bacon and nuts. Mix well and pour into a buttered or sprayed loaf pan.
  • Bake for 45 minutes. Allow the loaf to cool and serve cut into cubes.

  • Place a rack in middle of oven; preheat to 325°. Grease a 9x5" loaf pan with vegetable oil, then line with parchment paper, leaving overhang on long sides. Oil parchment paper (for insurance and an easy release).
  • Pulse pistachios in a food processor until finely ground (it’s okay if some of the pieces are a bit larger). Set aside a heaping tablespoonful.
  • Whisk lemon zest, flour, granulated sugar, baking powder, salt, and remaining pistachios in a large bowl. Whisk olive oil, 2 Tbsp. lemon juice, remaining ⅓ cup vegetable oil, and ½ cup water in a small bowl to combine. Pour oil mixture into dry ingredients and fold with a rubber spatula to combine. Be very careful not to overmix: This batter contains a high ratio of liquid, which means it can get gummy if overworked. Transfer to prepared pan and use a spatula to distribute batter; batter should come halfway up the sides.
  • Bake cake until golden brown all over, it springs back when gently pressed, and a tester inserted into the center comes out clean, 50–60 minutes. It's okay if your cake has dipped a little in the center. Transfer pan to a wire rack and let cake cool completely in pan, at least 2 hours. Using parchment overhang, lift cake out of pan and place on rack. Peel away parchment.
